但是目前,市场上的坚果仁类的零食,口味较普通,不能满足现在人对口感的追求;而且,传统的坚果仁类的产品仅仅只有坚果仁自身的保健效果,效果单一。

本发明的目的在于,提供一种美容养颜的蜂蜜黄油坚果仁的加工工艺,在坚果仁中添加枸杞子、樱桃干、山药粉和松子等营养成分,不仅改善了裹糖的口感,而且,增加坚果仁的保健效果,具有美容养颜的功效。
本发明提供的一种美容养颜的蜂蜜黄油坚果仁的加工工艺,包括以下步骤:
(1)、挑选品质优良的坚果仁烘烤后取出,摊晾;
(2)、摊凉后的坚果仁裹上糖浆,摊晾;
(3)、步骤(2)得到的裹上糖浆的坚果仁放入烘箱中,烘制后,摊晾,挑除出粘结的坚果仁;
(4)、包装。
所述坚果仁包括但不限于:碧根果仁、核桃仁、夏威夷果果仁、去内皮巴旦木仁、去红衣的花生仁、瓜子仁。
步骤(1)中,所述的烘烤,具体操作为:碧根果仁与核桃仁140-160℃,烘烤25-35min;夏威夷果果仁120-130℃(不得高于130℃,温度过高,夏果仁易变色),烘烤25-35min;巴旦木仁150-160℃(不得低于150℃,以去除巴旦木仁的生味),烘烤25-35min;花生150-180℃,烘烤10-15min;瓜子仁130-140℃,烘烤10-15min。
进一步的,所述坚果仁为碧根果仁或核桃仁时,在步骤(1)烘干前,进行蒸煮去涩,将碧根果仁或核桃仁在沸水中煮制8-12min,水需没过果仁,去除碧根果仁或核桃仁的苦涩味,并熟制,然后,进行摊晾冷却,去除多余水分,使坚果仁表面干燥。

(4)、充氮气包装。

(1)、挑选品质优良的夏威夷果果仁120℃,烘烤30min;后取出,摊晾;
(2)、将摊凉的果仁取出,放入糖衣机中,开动糖衣机,加入糖浆,进行裹制,待裹均匀时,开动电风扇,使裹衣机进行快速降温,待果仁糖衣结晶完全时,关掉糖衣机,关掉电风扇,取出果仁,摊晾。

(3)、步骤(2)得到的裹上糖浆的坚果仁放入烘箱中,45℃,烘制1h。烘制后,摊晾,挑除出粘结的坚果仁;
(4)、充氮气包装。

一种美容养颜的蜂蜜黄油坚果仁的加工工艺,包括以下步骤:
(1)、挑选品质优良的核桃仁,将核桃仁在沸水中煮制8min,水需没过果仁,去除碧根果仁的苦涩味,并熟制,然后,进行摊晾冷却,去除多余水分,使坚果仁表面干燥,然后140℃,烘烤30min;后取出,摊晾;
(2)、将摊凉的果仁取出,放入糖衣机中,开动糖衣机,加入糖浆,进行裹制,待裹均匀时,开动电风扇,使裹衣机进行快速降温,待果仁糖衣结晶完全时,关掉糖衣机,关掉电风扇,取出果仁,摊晾。
所述糖浆的制备方法为:白砂糖35份、蜂蜜5份、黄油3份、磷脂0.5份、水12份、葡萄糖7份、盐0.5份、营养保健粉0.3份混匀后,在夹层锅中进行熬制,全部融解后,温度升至116℃时,停止加热,得糖浆。
所述营养保健粉的制备方法为:称取枸杞子10份、樱桃干10份、山药粉20份、松子15份,经蒸汽蒸煮熟化后粉碎,蒸煮时间15min,温度110℃,再加入牛奶40份,于125℃温度下熬煮浓缩15min,再进行冷冻干燥,将经过冷冻干燥后粉碎,过80目筛,得到营养保健粉。
(3)、步骤(2)得到的裹上糖浆的坚果仁放入烘箱中,50℃,烘制0.5h。烘制后,摊晾,挑除出粘结的坚果仁;
(4)、充氮气包装。

1.一种美容养颜的蜂蜜黄油坚果仁的加工工艺,其特征在于,所述加工工艺包括以下步骤:
(1)、挑选品质优良的坚果仁烘烤后取出,摊晾;
(2)、摊凉后的坚果仁裹上糖浆,摊晾;
(3)、步骤(2)得到的裹上糖浆的坚果仁放入烘箱中,烘制后,摊晾,挑除出粘结的坚果仁;
(4)、包装。
2.根据权利要求1所述的美容养颜的蜂蜜黄油坚果仁,其特征在于,所述坚果仁包括但不限于:碧根果仁、核桃仁、夏威夷果果仁、去内皮巴旦木仁、去红衣的花生、瓜子仁。
3.根据权利要求1或2所述的加工工艺,其特征在于,步骤(1)中,所述的烘烤,具体操作为:碧根果仁与核桃仁140-160℃,烘烤25-35min;夏威夷果果仁120-130℃,烘烤25-35min;巴旦木仁150-160℃,烘烤25-35min;花生150-180℃,烘烤10-15min;瓜子仁130-140℃,烘烤10-15min。
4.根据权利要求3所述的加工工艺,其特征在于,所述坚果仁为碧根果仁或核桃仁时,在步骤(1)烘干前,进行蒸煮去涩,将碧根果仁或核桃仁在沸水中煮制8-12min,水需没过果仁,去除碧根果仁或核桃仁的苦涩味,并熟制,然后,进行摊晾冷却。
5.根据权利要求1或2所述的加工工艺,其特征在于,步骤(2)中所述糖浆的制备方法为:白砂糖25-35份、蜂蜜3-5份、黄油1-3份、磷脂0.2-0.5份、水8-12份、葡萄糖5-7份、盐0.3-0.5份、营养保健粉0.2-0.3份混匀后,在夹层锅中进行熬制,全部融解后,温度升至116℃时,停止加热,得糖浆;所述营养保健粉包括枸杞子、樱桃干、山药粉、松子和牛奶。
6.根据权利要求1或5所述的加工工艺,其特征在于,步骤(2)的具体操作为:将摊凉的果仁取出,放入糖衣机中,开动糖衣机,加入糖浆,进行裹制,待裹均匀时,开动电风扇,使裹衣机进行快速降温,待果仁糖衣结晶完全时,关掉糖衣机,关掉电风扇,取出果仁,摊晾。
7.根据权利要求5所述的加工工艺,其特征在于,所述的营养保健粉包括以下重量份的原料:枸杞子5-10份、樱桃干5-10份、山药粉15-20份、松子10-15份和牛奶30-40份。
8.根据权利要求5或7所述的美容养颜的蜂蜜黄油坚果仁,其特征在于,所述营养保健粉的制备方法为:称取枸杞子5-10份、樱桃干5-10份、山药粉15-20份、松子10-15份,经蒸汽蒸煮熟化后粉碎,再加入牛奶30-40份,于110-120℃温度下熬煮浓缩10-20min,再进行冷冻干燥,将经过冷冻干燥后粉碎,过80-100目筛,得到营养保健粉。
9.根据权利要求5所述的加工工艺,其特征在于,步骤(3)中所述烘制,具体操作为:将果仁放入烘箱中,40-50℃,烘制0.8-1.2h。目的是降低糖衣的水分含量,防止糖衣碎裂或脱落。
