Abstract
本发明公开了一种保健饮料及其制备方法,属于食品加工技术领域。本发明所提供的保健饮料包括桑葚5份-15份,胡萝卜5份-15份,甘草2份,五味子1份-5份,蜂蜜2份-10份,甜叶菊0.5份-1份,百里香0.5份。本发明还提供了一种所述保健饮料的制备方法,该方法是将五味子制成粉末得到五味子粉,将百里香、甜叶菊和甘草分别浸泡煮沸后过滤得到百里香汁、甜叶菊汁和甘草汁,将桑葚加工成桑葚汁,胡萝卜榨汁过滤得到胡萝卜汁,然后将所得五味子粉、百里香汁、甜叶菊汁、甘草汁、桑葚汁和胡萝卜汁加水混匀,用蜂蜜调整糖度和酸度,无菌环境下罐装。本发明保健饮料具有显著的抗肿瘤作用,本发明方法适用于制备保健饮料。

技术领域
本发明涉及一种保健饮料及其制备方法,属于食品加工技术领域。
背景技术
在经济快速发展的今天,已经形成花钱买健康的共识。有机保健市场的快速增长,为保健食品的发展提供了广阔的机会。
欧洲香草营养丰富、口味好,是一种新型保健蔬菜,百里香是一种很好的香草蔬菜。
香草(百里香)不择土壤、生长快、栽培容易、产量较高、病虫害极少,作蔬菜食用可凉拌、清炒、作汤,也可作馅料,口味特佳。具有保健功效卓显。对人体具有保健作用,而且适应性强、生长快、病虫害少、基本不施用农药,是真正的绿色保健蔬菜。
桑椹味甘酸,性微寒,入心、肝、肾经,具有补肝益肾、生津润肠、乌发明目等功效,大便干结等症。桑椹入胃,能补充胃液的缺乏,促进胃液的消化,入肠能促进肠液分泌,增进胃肠蠕动,因而有补益强壮之功。桑椹子降低该酶的活性可能是其滋阴作用机制之一。桑椹子为桑科落叶乔木桑树的成熟果实。于果实红熟时采收,备用。性味:味甘,性寒。
胡萝卜是一种质脆味美、营养丰富的家常蔬菜。中医认为它可以补中气、健胃消食、壮元阳、安五脏,治疗消化不良、久痢、咳嗽、夜盲症等有较好疗效,故被誉为“东方小人参”。用油炒熟后吃,在人体内可转化为维生素A,提高机体免疫力,间接消灭癌细胞。研究证实:每天吃两根胡萝卜,可使血中胆固醇降低10%~20%;每天吃三根胡萝卜,有助于预防心脏疾病和肿瘤。
胡萝卜中的主要营养素是β-胡萝卜素,它存在于胡萝卜的细胞壁中,而细胞壁是由纤维素构成,人体无法直接消化,唯有通过切碎、煮熟及咀嚼等方式,使其细胞壁破碎,β-胡萝卜素才能释放出来,为人体真正消化吸收利用。完好保持β-胡萝卜素等营养成分,与我们的食用与烹调方法有着极大的关系。
据测定,胡萝卜中所含的胡萝卜素比白萝卜及其他各种蔬菜高出30-40余倍。胡萝卜素进入人体后,能在一系列酶的作用下,转化为丰富的维生素A,然后被身体吸收利用,这样就弥补了维生素A的不足。
维生素A具有促进机体正常生长与繁殖、维持上皮组织、防止呼吸道感染与保持视力正常,治疗夜盲症和眼干燥症等功能。由胡萝卜素转化的天然的维生素A,发挥的效果大大胜过人工合成的药物。
胡萝卜能增强人体免疫力,有抗癌作用,并可减轻癌症病人的化疗反应,对多种脏器有保护作用。妇女进食胡萝卜可以降低卵巢癌的发病率。
胡萝卜内含玻珀酸钾,有助于防止血管硬化,降低胆固醇,对防治高血压有一定效果。胡萝卜素可清除致人衰老的自由基,除维生素A外,所含的B族维生素和维生素C等招牌营养素也有润皮肤,抗衰老的作用。胡萝卜的芳香气味是挥发油造成的。能增进消化,并有杀菌作用。
五味子,俗称山花椒、秤砣子、药五味子、面藤、五梅子等。五味皮肉甘酸,核中辛苦,都有咸味,故有五味子之名。中药功效在于滋补强壮、补阴安神之效,药用价值极高。五味子碎成粉过筛备用五味子还有一定的抑制细菌等病原微生物繁殖的功效,五味子水煎剂对结核杆菌、枯草杆菌、大肠杆菌、伤寒杆菌、金黄色葡萄球菌、链球菌、肺炎双球菌、有较强的抑制作用。从而提高机体活动机能,减轻和解除疲劳,提高生活质量和工作效率;可通过加强心脏的收缩力量功能,调节心血管系统,从而改善血液循环,降低血压;五味子有兴奋呼吸作用,改善肺功能,并有明显的止咳祛痰作用。
现有技术中未见综合利用它们为原料制备的保健饮料产品。
发明内容
为解决现有技术的不足,本发明提供了一种保健饮料及其制备方法,具体涉及一种利用有机、绿色蔬果加工生产的饮料,采用的技术方案如下:
本发明的目的在于提供一种保健饮料,该饮料包括以下成分:
桑葚5份-15份,胡萝卜5份-15份,甘草2份,五味子1份-5份,蜂蜜2份-10份,甜叶菊0.5份-1份,百里香0.5份。
本发明还提供一种保健饮料的制备方法,该方法是将五味子精选、烘焙、研磨、过筛制成粉末,得到五味子粉;将百里香、甜叶菊和甘草分别浸泡煮沸后过滤得到百里香汁、甜叶菊汁和甘草汁;将桑葚加工成桑葚汁,胡萝卜榨汁过滤得到胡萝卜汁;然后将所得五味子粉、百里香汁、甜叶菊汁、甘草汁、桑葚汁和胡萝卜汁加水混匀,用蜂蜜调整糖度和酸度,无菌环境下罐装;各成分重量分数分别为:桑葚5份-15份,胡萝卜5份-15份,甘草2份,五味子1份-5份,蜂蜜2份-10份,甜叶菊0.5份-1份,百里香0.5份。
所述方法,步骤如下:
1)将1份-5份精选的五味子经过变温烘焙,粉碎处理成粉末后,过筛备用,获得五味子粉;
2)将0.5份百里香、0.5份-1份甜叶菊和2份甘草分别加水浸泡,第一次加入8倍质量的水浸泡30分钟,煮沸;第二次加入6倍质量的水浸泡30分钟,煮沸后过滤备用,获得百里香汁、甜叶菊汁和甘草汁;
3)将5份-15份精选的桑椹清洗后加工制成果汁原料,过滤后灭酶、均质、杀菌,获得桑葚汁;
4)将5份-15份胡萝卜清洗后去皮,分切后进行热烫处理,然后经过打浆、灭酶处理后,榨汁过滤,获得胡萝卜汁;
5)将步骤1)获得的五味子粉,步骤2)获得的百里香汁、甜叶菊汁和甘草汁,步骤3)获得的桑葚汁和步骤4)获得的胡萝卜汁加水混合均匀,用蜂蜜调整糖度和酸度,无菌环境下罐装,获得保健饮料。优选地,步骤1)所述变温烘焙,是150℃烘干至恒定质量后,升高温度至245℃保持2分钟,然后迅速降温至50-60℃。
优选地,步骤3)所述精选的桑椹,是挑选紫黑色的、成熟的桑葚果,剔除外形变异、有虫斑、色泽异常的果实。
优选地,步骤3)所述灭酶,是用夹层锅或管式消毒器加热至85℃灭酶2分钟;所述均质,压力为10-12Mpa。
优选地,步骤4)所述灭酶处理,是90℃下灭酶5分钟。
优选地,步骤5)所述糖度,为12%;酸度,为0.4%。
所述方法具体步骤为:
1)将1份-5份精选的五味子在150℃烘干至恒定质量后,升高温度至245℃保持2分钟,然后迅速降温至50-60℃,粉碎处理成粉末,过筛备用,获得五味子粉;
2)将0.5份百里香、0.5份-1份甜叶菊和2份甘草分别加水浸泡,第一次加入8倍质量的水浸泡30分钟,煮沸;第二次加入6倍质量的水浸泡30分钟,煮沸后过滤备用,获得百里香汁、甜叶菊汁和甘草汁;
3)挑选5份-15份紫黑色的、成熟的、剔除外形变异、有虫斑、色泽异常的桑椹,清洗后放入胶体磨中进行细化处理,制备成果汁原料,过滤去除果渣后立即用夹层锅或管式消毒器加热至85℃灭酶2分钟,然后冷却到65℃,然后在10-12Mpa的均质压力下均质一次,杀菌后立即快速冷却至常温,获得桑葚汁;
4)将5份-15份胡萝卜清洗后去皮,分切后进行热烫处理,打浆后在90℃下灭酶处理5分钟,第二次榨汁时加入0.6倍质量的水,榨汁过滤,获得胡萝卜汁;
5)将步骤1)获得的五味子粉,步骤2)获得的百里香汁、甜叶菊汁和甘草汁,步骤3)获得的桑葚汁和步骤4)获得的胡萝卜汁加水混合均匀,用蜂蜜调整糖度至12%、酸度至0.4%,无菌环境下罐装,获得保健饮料。
以上所述任一方法,适用于制备保健饮料。
本发明所提供的保健饮料为健康的有机饮料,不需要添加稳定剂,有机饮料的相配,需要遵循增效有益的原则,本发明不仅仅是简单的混合,是大量实验筛选对比的结果。五味子有弱毒性小毒,能兴奋呼吸中枢,使呼吸频率及幅度增加,并有增加胃酸的作用,口服生药10g以上可有打嗝、反酸、胃烧灼感、肠呜、困倦等反应,发明人发现经变温烘焙后,不同人群饮用实验表明效果良好,因此本发明采用变温烘焙五味子的独特加工工艺流程。
本发明有益效果:
1.本发明致力于通过添加甘草、甜叶菊及蜂蜜将有机香草百里香、可食性中药五味子、彩色蔬果桑葚及胡萝卜等按照一定比例合理配比,提供一种提高机体活动机能,减轻和解除疲劳,提高生活质量和工作效率的新鲜保健饮料,具有一定的改善久病体虚,肝肾阴亏,腰膝酸软和增强人体免疫力及抗癌作用的保健作用。
2.本发明保健饮料具有显著的抗肿瘤作用,可以显著延长腹水瘤小鼠的生存期,延长小鼠生存期最长达18天,比传统保健饮料延长小鼠生存期最长达16天,抗肿瘤效果更。
3.本发明所提供的保健饮料为健康的有机饮料,不需要添加稳定剂,有机饮料的相配,需要遵循增效有益的原则,本发明不仅仅是简单的混合,是大量实验筛选对比的结果。本发明采用了变温烘焙五味子的独特加工工艺,并通过实验得到了人体较适宜的五味子添加量。
具体实施方式
下面结合具体实施例对本发明做进一步说明,但本发明不受实施例的限制。
实施例1:
某复合型饮料的主要成份含有经5倍浓缩的山楂叶提取液20~40kg沙棘原汁50~80kg白果汁0~10kg环状糊精0.5~20kg乙基麦芽酚0.005~0.1kgVC0.15~3kg叶酸0~600mgVB11.5~5g,VB21.5~5g,VB60~6g,VB120~6mg,甜叶菊糖苷0~0.6kg,蜂蜜、果葡糖浆、白砂糖等计30~160kg,柠檬酸、苹果酸、酒石酸等0.5~4kg,稳定剂、香精、色素等适量加洁净水至300~1000L。不具备有机性和新鲜度。
实施例2
一种保健饮料,该饮料该饮料包括以下成分:桑葚5份,胡萝卜5份,甘草2份,五味子1份,蜂蜜2份,甜叶菊0.5份,百里香0.5份,其余用水补充。
利用制备方法制备保健饮料,具体步骤为:
1)将精选的五味子在150℃烘干至恒定质量后,升高温度至245℃保持2分钟,然后迅速降温至50-60℃,粉碎处理成粉末,过筛备用,获得五味子粉;
2)将百里香、甜叶菊和甘草分别加水浸泡,第一次加入8倍质量的水浸泡30分钟,煮沸;第二次加入6倍质量的水浸泡30分钟,煮沸后过滤备用,获得百里香汁、甜叶菊汁和甘草汁;
3)挑选紫黑色的、成熟的、剔除外形变异、有虫斑、色泽异常的桑椹(同时将果蒂、果叶拣出来),对自来水用双核臭氧杀菌设备等消毒设备进行消毒,之后将水静置一段时间,待臭氧气味散尽后,清洗桑葚果,要求洗掉桑葚表面的灰尘及杂物;放入胶体磨中进行细化处理,可制得桑葚果汁;采用滤布或过滤机,对桑葚果汁进行过滤,滤除果汁中的果渣;将过滤后的桑葚果汁放在夹层锅或冷热缸中,立即用夹层锅或管式消毒器加热至85℃灭酶2分钟,然后冷却到65℃,然后在10-12Mpa的均质压力下均质一次,杀菌后立即转入冷水中快速冷却至常温,获得桑葚汁;
4)将胡萝卜清洗后去皮,分切后进行热烫处理,打浆后在90℃下灭酶处理5分钟,榨汁过滤,获得胡萝卜汁;第二次榨汁时加入0.6倍质量的水;
5)将步骤1)获得的五味子粉,步骤2)获得的百里香汁、甜叶菊汁和甘草汁,步骤3)获得的桑葚汁和步骤4)获得的胡萝卜汁加水混合均匀,用蜂蜜调整糖度至12%、酸度至0.4%,无菌环境下罐装,获得保健饮料。
实施例3
本实施例与实施例2的区别在于:桑葚15份,胡萝卜15份,甘草2份,五味子5份,蜂蜜10份,甜叶菊1份,百里香0.5份,其余用水补充。
利用实施例2所述制备方法制备保健饮料。
实施例4
本实施例与实施例2的区别在于:桑葚10份,胡萝卜10份,甘草2份,五味子3份,蜂蜜7份,甜叶菊0.5份,百里香0.5份,其余用水补充。
利用实施例2所述制备方法制备保健饮料。
实施例5选取50只小鼠,分成5组,每组10只,分别命名为空白组、实施例1组、实施例2组、实施例3组、实施例4组。利用已诱发肿瘤,使小鼠患腹水瘤,空白组小鼠正常饲料喂养,不喂养保健饮料,各个实施例组用正常喂养,同时喂养相应实施例的保健饮料,观察小鼠生存期以考察抗肿瘤效果。实施例1-4饮料喂养小鼠的抗肿瘤效果如表1所示。

通过对比实施例2-4组与空白组小鼠的抗肿瘤指标,可以看出本发明得到的提取物具有抗肿瘤作用,能够抑制肿瘤生长、显著延长腹水瘤小鼠的生存期。通过对比实施例2-4组与实施例1组小鼠的生存期,可以看出本发明保健饮料较传统保健饮料的抗肿瘤效果更好,能够显著延长腹水瘤小鼠生存期,具有抑制实体瘤生长的效果。
虽然本发明已以较佳的实施例公开如上,但其并非用以限定本发明,任何熟悉此技术的人,在不脱离本发明的精神和范围内,都可以做各种改动和修饰,因此本发明的保护范围应该以权利要求书所界定的为准。
Claims (10)
1.一种保健饮料,其特征在于,包括以下成分:
桑葚5份-15份,胡萝卜5份-15份,甘草2份,五味子1份-5份,蜂蜜2份-10份,甜叶菊0.5份-1份,百里香0.5份。
2.一种如权利要求1所述保健饮料的制备方法,其特征在于,将五味子精选、烘焙、研磨、过筛制成粉末,得到五味子粉;将百里香、甜叶菊和甘草分别浸泡煮沸后过滤得到百里香汁、甜叶菊汁和甘草汁;将桑葚加工成桑葚汁,胡萝卜榨汁过滤得到胡萝卜汁;然后将所得五味子粉、百里香汁、甜叶菊汁、甘草汁、桑葚汁和胡萝卜汁加水混匀,用蜂蜜调整糖度和酸度,无菌环境下罐装;各成分重量分数分别为:桑葚5份-15份,胡萝卜5份-15份,甘草2份,五味子1份-5份,蜂蜜2份-10份,甜叶菊0.5份-1份,百里香0.5份。
3.权利要求2所述方法,其特征在于,步骤如下:
1)将1份-5份精选的五味子经过变温烘焙,粉碎处理成粉末后,过筛备用,获得五味子粉;
2)将0.5份百里香、0.5份-1份甜叶菊和2份甘草分别加水浸泡,第一次加入8倍质量的水浸泡30分钟,煮沸;第二次加入6倍质量的水浸泡30分钟,煮沸后过滤备用,获得百里香汁、甜叶菊汁和甘草汁;
3)将5份-15份精选的桑椹清洗后加工制成果汁原料,过滤后灭酶、均质、杀菌,获得桑葚汁;
4)将5份-15份胡萝卜清洗后去皮,分切后进行热烫处理,然后经过打浆、灭酶处理后,榨汁过滤,获得胡萝卜汁;
5)将步骤1)获得的五味子粉,步骤2)获得的百里香汁、甜叶菊汁和甘草汁,步骤3)获得的桑葚汁和步骤4)获得的胡萝卜汁加水混合均匀,用蜂蜜调整糖度和酸度,无菌环境下罐装,获得保健饮料。
4.权利要求3所述的方法,其特征在于,步骤1)所述变温烘焙,是150℃烘干至恒定质量后,升高温度至245℃保持2分钟,然后迅速降温至50-60℃。
5.权利要求3所述的方法,其特征在于,步骤3)所述精选的桑椹,是挑选紫黑色的、成熟的桑葚果,剔除外形变异、有虫斑、色泽异常的果实。
6.权利要求3所述的方法,其特征在于,步骤3)所述灭酶,是用夹层锅或管式消毒器加热至85℃灭酶2分钟;所述均质,压力为10-12Mpa。

8.权利要求3所述的方法,其特征在于,步骤5)所述糖度,为12%;酸度,为0.4%。
9.权利要求3所述方法,其特征在于,具体步骤为:
