本发明公开了一种具有清热去火功效的黑豆糕,由以下重量份的原料组成:黑豆160-170、食用明胶粉10-13、橄榄油3-5、白砂糖4-5、苦瓜15-20、胡萝卜7-10、大豆多肽粉4-6、百合粉5-7、苦丁茶粉3-5、莴苣8-10、丝瓜10-15、黄瓜籽粉5-6、川贝粉2-3、亚麻籽粉1-2、水适量。本发明通过先对黑豆进行炒熟再浸泡磨粉,可以激发黑豆本身的香味,减少营养元素的流失,通过将明胶和黑豆粉混合膨化,食用起来更加爽口,不会有普通粗粮产品粗糙的口感,而且黑豆粉的外侧有明胶的包裹,可以防止黑豆粉中的蛋白质进入胃后因胃酸作用而引起的凝聚作用,有利于食物消化。

本发明属于食品加工领域,具体是一种具有清热去火功效的黑豆糕及其制备方法。
背景技术
黑豆为豆科植物大豆的黑色种子,是我国传统种植的农作物具有悠久的药用和食用历史,自古以来民间就有用黑大豆补血活血和乌发养颜的记载。据报道黑豆有解毒利尿、明目益精、养血疏风之功效,可治疗阴虚烦热、盗汗、眩晕、头痛、风痹等症。此外黑豆提取物还具有很强的抗氧化活性、抑制诱变、抗炎预防癌症等功效。与其他同类食品相比,黑豆在营养成分的数量与质量上均具有明显的优势,黑豆有“东方黑珍珠”和“植物蛋白之王”之美誉,含有高蛋白、低热量、多种人体所需的氨基酸、不饱和脂肪酸、膳食纤维及微量元素,是一种物美价廉的营养食品。
目前市场上的糕点产品主要为绿豆糕、米糕等,还没有出现一种以黑豆为原料的糕点,而且虽然黑豆的营养价值和保健功效比较好,但是由于其不易烹饪,不被人们所接受。因此开发一种营养丰富、具有保健功能、并且食用方便的的健康黑豆糕,具有广阔的市场前景。
发明内容
为解决上述技术问题,本发明的目的是提供一种具有清热去火功效的黑豆糕及其制备方法。
为达到上述目的,本发明采用的技术方案如下:
一种具有清热去火功效的黑豆糕,其特征在于,由以下重量份的原料组成:黑豆160-170、食用明胶粉10-13、橄榄油3-5、白砂糖4-5、苦瓜15-20、胡萝卜7-10、大豆多肽粉4-6、百合粉5-7、苦丁茶粉3-5、莴苣8-10、丝瓜10-15、黄瓜籽粉5-6、川贝粉2-3、亚麻籽粉1-2、水适量。
一种具有清热去火功效的黑豆糕的制备方法,其特征在于,包括以下步骤:
(1)选取颗粒饱满、无霉变、无虫蛀的黑豆,将黑豆放入装有铁砂的锅中炒熟,筛净砂粒后使用清水洗净后放入水中浸泡2-3h后晒干,然后碾壳去皮后磨成细粉,得到黑豆粉;
(2)将黑豆粉与食用明胶粉混合均匀后加入适量的水搅拌成糊状,然后放入膨化罐中,调节膨化压力为0.4-0.6MPa、温度20-25℃,30-40min后开启泄压阀,冷却干燥后通过粉碎机粉碎,过60-80目筛,得到明胶黑豆粉;
(3)将苦瓜、胡萝卜、莴苣、丝瓜洗净去皮后切碎,然后混合在一起磨成匀浆液,放入冷冻干燥机中进行冷冻干燥,粉碎后得到蔬菜冻干粉;
(4)将明胶黑豆粉、蔬菜冻干粉、大豆多肽粉、百合粉、苦丁茶粉、黄瓜籽粉、川贝粉、亚麻籽粉混合均匀,然后加入橄榄油、白砂糖和适量的水,继续搅拌使物料混合充分;
(5)将调好的黑豆糕原料放入模具,按实后压平,然后将模具放在沸水锅中蒸制15-20min,蒸熟后取出,即得所述具有清热去火功效的黑豆糕。
本发明的有益效果:

本发明所述的一种具有清热去火功效的黑豆糕,其特征在于,由以下重量份(kg)的原料组成:黑豆170、食用明胶粉13、橄榄油5、白砂糖5、苦瓜20、胡萝卜10、大豆多肽粉6、百合粉7、苦丁茶粉5、莴苣10、丝瓜15、黄瓜籽粉6、川贝粉3、亚麻籽粉2、水适量。
一种具有清热去火功效的黑豆糕的制备方法,其特征在于,包括以下步骤:

1.一种具有清热去火功效的黑豆糕,其特征在于,由以下重量份的原料组成:黑豆160-170、食用明胶粉10-13、橄榄油3-5、白砂糖4-5、苦瓜15-20、胡萝卜7-10、大豆多肽粉4-6、百合粉5-7、苦丁茶粉3-5、莴苣8-10、丝瓜10-15、黄瓜籽粉5-6、川贝粉2-3、亚麻籽粉1-2、水适量。
2.根据权利要求1所述的一种具有清热去火功效的黑豆糕的制备方法,其特征在于,包括以下步骤:
(1)选取颗粒饱满、无霉变、无虫蛀的黑豆,将黑豆放入装有铁砂的锅中炒熟,筛净砂粒后使用清水洗净后放入水中浸泡2-3h后晒干,然后碾壳去皮后磨成细粉,得到黑豆粉;
