背景技术
近年来,随着工农业生产的迅猛发展、交通运输业日益发达,大气环境受到额外污染物的影响,特别是大气颗粒物的污染使得雾霾天气越来越多。PM2.5雾霾又称为可入肺颗粒物,可以通过支气管和肺泡进入血液,干扰肺部交换,引起呼吸道感染、肺损伤以及癌症等多种疾病,危害人们的健康。持续的雾霾天气损伤肺脏,除了减少出行和户外活动、戴口罩外,各种“清肺”、“润肺”的食物也开始流行起来。然而,研究发现,传统医学里的“清肺”,一般指减缓跟呼吸道有关的症状,比如咳嗽、痰多、咽部不适等等。这种“清肺”、“润肺”在概念上跟解决空气污染造成的“肺损伤”引起的健康危害完全不是一回事。按照目前的研究,空气污染所带来的危害,主要包括肺癌风险、呼吸系统疾病、心脑血管疾病等几方面。另外,用吃某种食物来结合微尘以消除雾霾危害的养生方法也大多不靠谱。
目前国内外市场上,各种保健食品、营养素补充剂琳琅满目,层出不穷。但是功效确切,机理清楚的专门用于预防并减少由雾霾引起的机体损伤的功能食品,尚属于市场空白。所以,一种减少雾霾损伤的辅助养生食品的开发,具有十分重要的意义。
发明内容
针对上述现有技术存在的问题,本发明人付出努力,结合多年从事本领域工作的经验,反复研究和论证试验,终得本发明的产生。
本发明的目的就在于提供一种减少雾霾损伤的辅助养生食品,特别是一种功效确切、机理清楚的,对PM2.5雾霾造成的危害具有显著预防和改善作用的保健辅助食品。
本发明的主要技术方案,是经过细致的调查和全面审慎的研究,经过多次试验确定产品的配方。
本发明的技术解决方案在于:一种减少雾霾损伤的辅助养生食品(各原料的重量百分比)为:复合益生菌粉:1~10%;水苏糖:10~80%;低聚半乳糖:10~80%;银耳多糖:1~15%,各原料组成的重量百分比之和为100%,成品中活菌数含量为1.0×109~1.0×1011cfu/g。
本发明所述的复合益生菌粉是指两歧双歧杆菌、嗜酸乳杆菌、干酪乳杆菌、植物乳杆菌、罗伊氏乳杆菌、鼠李糖乳杆菌、唾液乳杆菌中的至少一种或几种,每种菌粉原料的活菌数含量均≥1.0×1011cfu/g。另外,在本发明方案的基础上还可以加入果蔬粉、膳食纤维、其他甜味剂等辅料。
本发明所述的一种减少雾霾损伤的辅助养生食品的制备方法:按照配方将原料准确称量后,先分别过60~80目筛,然后按照等量递加法加入到混合机内混合均匀,直接进行包装即得。
本发明所述的一种减少雾霾损伤的辅助养生食品的制备方法,还应注意以下事项:
(1)车间要求:GMP 10万级净化;混合工序和分装工序,需与其他工序独立,回风采用直排形式;
(2)在生产加工过程中,环境温度应控制在25℃以下,湿度控制在40%RH以下,控制好生产环境的温湿度有助于益生菌的活性保存;
(3)益生菌原料在加工前需要在生产操作间的室温下回温至与环境温度一致(生产头天从冷冻库拿到冷藏库,当天一早拿到车间,回温3h至铝箔表面没有水珠),防止益生菌粉在辅料中吸水聚集;
(4)整个产品配方体系的水分活度应控制在Aw<0.3以下,低水分活度的配料体系有助于保持益生菌产品的稳定性,辅料可提前85℃烘4h左右至水分控制在2%以下并冷却;
(5)生产过程中,混合均匀度问题是一个关键问题,一定要做好工艺过程的检测和监控,经生产验证,所测定的混合的变异系数(CV)应小于8%;
(6)提前将分装设备调整好,避免生产过程卡机等现象出现;争取在最短的时间内,将所配物料全部分装完毕。

3.如权利要求1所述的一种减少雾霾损伤的辅助养生食品,其特征在于产品配方为:复合益生菌粉:100g(其中含两歧双歧杆菌冻干粉:20g;嗜酸乳杆菌冻干粉:15g;干酪乳杆菌冻干粉:15g;植物乳杆菌冻干粉:10g;罗伊氏乳杆菌冻干粉:15g;鼠李糖乳杆菌冻干粉20g;唾液乳杆菌冻干粉:5g);水苏糖:500g;低聚半乳糖:250g;银耳多糖:150g。
4.如权利要求1所述的一种减少雾霾损伤的辅助养生食品,其特征在于产品配方为:复合益生菌粉:10g(其中含两歧双歧杆菌冻干粉:5g;嗜酸乳杆菌冻干粉:5g);水苏糖:800g;低聚半乳糖:100g;银耳多糖:90g。
5.如权利要求1所述的一种减少雾霾损伤的辅助养生食品,其特征在于产品配方为:复合益生菌粉:90g(其中含两歧双歧杆菌冻干粉:20g;嗜酸乳杆菌冻干粉:25g;干酪乳杆菌冻干粉:25g;植物乳杆菌冻干粉:20g);水苏糖:100g;低聚半乳糖:800g;银耳多糖:10g。
6.如权利要求1所述的一种减少雾霾损伤的辅助养生食品,其特征在于产品配方为:复合益生菌粉:60g(其中含两歧双歧杆菌冻干粉:15g;嗜酸乳杆菌冻干粉:15g;干酪乳杆菌冻干粉:15g;鼠李糖乳杆菌冻干粉15g);水苏糖:400g;低聚半乳糖:500g;银耳多糖:40g。
