本发明公开了一种海胆保健酒及其生产方法,其技术特征在于原料重量份(配方)含有海胆黄、海马、海龙、山楂、桂圆、枸杞子、茯苓、葡萄籽、低聚果糖、玫瑰花、木瓜、肉桂、西洋参、当归、黄芪、淫羊藿等。本发明融合了多种功能原料,产品含有多种胱氨酸、蛋白质、脂肪酸、甾体等多种无机元素及总黄酮、粗多糖、总皂甙等多种功效成分。具有强身健体、补肾壮阳、滋补肝肾、益精明目等药用功能。另外,还具有预防心血管疾病、降低人体内甘油三酸脂和胆固醇含量和缓解疲劳以及增强免疫力、缓解疲劳、促进新陈代谢、活血化瘀、促进血液循环、美容养颜、祛黄褐斑等多种保健功效。

本发明涉及一种保健酒及其生产方法,特别涉及一种海胆保健酒及其生产方法。
背景技术
海胆以其生殖腺供食,其生殖腺又称海胆卵、海胆籽、海胆黄、海胆膏,色橙黄,味鲜香,占海胆全重的8%~15%。其生殖腺中所含有二十碳烯酸占总脂肪酸的30%以上,可预防心血管病。海胆不仅是一种上等的海鲜美味,还是一种贵重的中药材。近年来,日本、法国、美国、德国和港澳的消费者,都把海胆视为较高档的名贵高级保健食品,尤其是日本人,不仅爱吃新鲜海胆黄卵),还喜欢仓用海胆制戍的鱼子酱,取名云丹。
海胆黄,不但味道鲜美,营养价值也很高,每100克鲜海胆黄中含蛋白质41克、旨肪32.7克,还含有维生素A、D各种氨基酸及磷、铁、钙等营养成分。海胆还可以生产加工成为盐渍海胆、酒精海胆、冰鲜海胆、海胆酱和清蒸海胆罐头等多种海胆食品。
海胆还具有药用功能,它性味咸、平,有制酸止痛、软坚散结、化瘀消肿、清热消炎、健脾强肾、舒筋活血。滋阴补阳等功效,主要用于治疗颈淋巴结核,积痰不化、胸肋胀痛。海胆卵中含有很高的脂肪酸,系预防心血管疾病的良药,可降低人体内甘油三酸脂和胆固醇的含量,抗凝血和阻止血栓形成等。用海胆卵制成食品食用,能提高机体免疫力,安神补血和促进性功能。海胆卵更含有极丰富的荷尔蒙,故食之有滋阴补肾,养颜护肤的作用。另外,海胆卵所含的较高蛋白质,易被人体吸收,加上它本身的味道特别鲜美,促进唾液分泌,能刺激食欲,有较好的滋补作用。
胃炎及十二指肠溃疡、中耳炎、颈淋巴结核、中胸肋、甲沟炎患者,用海胆壳缎灰研未,适量冲服或涂抹有疗效,中耳炎患者可用海胆的棘刺和着白蜡磨粉,吹入耳内;积痰不化、胸肋胀痛者可用去刺的海胆壳,用量3-6克,水煎服;治疗颈淋巴结核,用海胆壳6克、夏枯草15克、贝母9克,水煎服。海胆壳晒干碾碎还是很好的肥料,500克壳粉的肥效相当于500克豆饼。
海胆的吃法多种多样,不论是新鲜的海胆卵(黄)或是经过加工的任何系列品种,都可用于清蒸煎炒、冷盘或烹调成汤。例如,将海胆卵和肉类、芦笋、蛋品混合煎炒,便成为一款鲜美可口的上乘菜馔;而利用海胆卵汤泡面条,无需添加任何佐料,其味比鸡汤面还要鲜美。如果将海胆卵用于涮火锅,风味更是独特。更高档的食法还有海胆烩鲍翅、海胆烩雪蛤等多种名贵菜式。海胆可用于清蒸:先用锯把海胆壳顶端锯天一个切口,然后从切口中注入适量蛋浆,与壳内的海胆卵拌匀,原个蒸熟,可谓地道的原汁原味。此种吃法,老少咸宜。
海马是一种经济价值较高的名贵中药,具有强身健体、补肾壮阳、舒筋活络、消炎止痛、镇静安神、止咳平喘等药用功能,特别是对于治疗神经系统的疾病更为有效,自古以来备受人们的青睐,男士们更是情有独钟。海马除了主要用于制造各种合成药品外,还可以直接服用健体治病。
海龙,也称杨枝鱼、管口鱼。它是一种硬骨鱼,动物学分类中归为一科—-海龙科。海龙科约有150多种,亦有说200种。我国有25种海龙。海龙跟海马是亲戚。海龙含多种胱氨酸、蛋白质、脂肪酸、甾体及多种无机元素。尖海龙还含有胆甾醇、胆甾烯-4-酮-3(Cholest-4-en-3-one)。现代医学研究认为,海龙对人体机能有兴奋作用,补肾壮阳的功效十分明显,是一种治疗阳痿的良药,其效用往往超过海马。目前市场上销售的有刁海龙、拟海龙、及尖海龙海龙等三种。
枸杞子主治滋补肝肾,益精明目。用于虚劳精亏,腰膝酸痛,眩晕耳鸣,内热消渴,血虚萎黄,目昏不明。枸杞子中含有14种氨基酸,并含有甜菜碱、玉蜀黄素、酸浆果红素等特殊营养成分,使其具有不同凡响的保健功效。引枸杞子含有丰富的胡萝卜素、多种维生素和钙、铁等健康眼睛的必需营养物质,故有明目之功,俗称“明眼子”。历代医家治疗肝血不足、肾阴亏虚引起的视物昏化和夜盲症,常常使用枸杞子。
近年来。随着我国沿海养直业兴旺发展,海胆养殖业也一马当先。通过科学放养,目前,收获海胆已不受气候季节限制,在闽、粤、台地区一年四季皆产。而海马、海龙、枸杞子市面供应不断。
综上所述,若将海马、海龙、枸杞子等辅助于海胆制成保健酒,其营养价值、经济价值以及受消费者的青睐程度一定不同一般。

一种海胆保健酒及其生产方法,其技术特征在于:原料重量份为海胆黄5~15份、海马4~13份、海龙4~13份、山楂3~15份、桂圆3~12份、枸杞子1~12份、茯苓3~10份、葡萄籽1~10份、低聚果糖5~20份、玫瑰花1~6份、木瓜3~10份、肉桂1~6份、西洋参1~2份、当归1~10份、黄芪5~20份、淫羊藿3~9份、白糖1~20份、蜂蜜1~20份、白酒500~5000份。
本发明的生产方法:按重量份取海胆黄、海马、海龙、山楂、桂圆、枸杞子、茯苓、葡萄籽、玫瑰花、木瓜、肉桂、西洋参、当归、黄芪、淫羊藿等置于容器中,加入白酒升温至40℃~60℃并保持1~5h后停止升温。在常温条件下浸泡5~10d时降温至-5℃~-10℃并保持10~20d后趁冷过滤。将滤液升温至40℃~60℃,加入低聚果糖、白糖和蜂蜜并保持1~5h后再次过滤。然后又将滤液再降温至-5℃~-10℃并保持1~5h后三度过滤。滤液如此升温、过滤,降温、过滤1~3次,最后一次过滤后,升至常温,置于容器或装瓶后存入5~15℃环境中陈酿3~6个月,即得产品。
本发明的积极效果:海胆保健酒融合了多种功能原料,产品含有多种胱氨酸、蛋白质、脂肪酸、甾体等多种无机元素及总黄酮、粗多糖、总皂甙等多种功效成分,具有强身健体、补肾壮阳、滋补肝肾、益精明目、舒筋活络、消炎止痛、镇静安神、止咳平喘等药用功能,特别是对于治疗神经系统的疾病更为有效。另外,还具有预防心血管疾病、降低人体内甘油三酸脂和胆固醇含量和缓解疲劳及增强免疫力、缓解疲劳、促进新陈代谢、活血化瘀、促进血液循环、美容养颜、祛黄褐斑等多种保健功效。本发明所形成的产品清澈透黄,清香怡人,口感醇和,落口甘冽,清爽绵软,回味悠长,风格独特,实为保健及送礼之佳品。

下面将通过实施例对本发明做进一步的说明。
本实施例的配方为:海胆黄15份、海马10份、海龙10份、山楂12份、桂圆12份、枸杞子10份、茯苓10份、葡萄籽9份、低聚果糖20份、玫瑰花6份、木瓜9份、肉桂6份、西洋参1份、当归9份、黄芪15份、淫羊藿9份、白糖15份、蜂蜜15份、红枣酒4500份。
