背景技术
随着经济的快速发展,人们的生活水平大大提高,对食品的纯天然性、安全性、营养性等方面的要求也越来越高。尤其是对“三高”(高血压、高血脂、高血糖)人群而言,选择低脂、低糖健康安全的食品尤为重要。菠萝含糖类、维生素B族系列维生素、维生素C、钙、钾、磷、铁、镁等矿物质、d-酒石酸、柠檬酸、甲酸、2-苹果酸等有机酸,并含丝氨酸、β-丙氨酸、脯氨酸、苯丙氨酸、亮氨酸等氨基酸和果胶、膳食纤维。维生素C可以治疗坏血病,预防牙龈萎缩、出血,预防动脉硬化,治疗贫血,丰富的胶原蛋白有助于防止癌细胞的扩散,提高人体的免疫力;磷是维持骨骼和牙齿的必要物质,能使心脏有规律地跳动、维持肾脏正常机能和传达神经刺激的重要物质;铁、镁等微量元素,可使皮肤细润有光泽,起到美容瘦身的作用,缓解工作压力;纤维、微量元素等能降低胆固醇和血脂含量,保护心血管和肝脏系统等重要生理功能;丰富的矿物质和多种维生素,可预防佝偻病;膳食纤维是健康饮食不可缺少的,摄取足够的纤维可以预防心血管疾病、癌症、糖尿病以及其它疾病;铁质必须在酸性条件下和在维生素C存在的情况下才能被吸收,吃菠萝可以预防缺铁性贫血。目前生产的普通糕点原料大都是高糖高热量等添加剂,缺乏人体所需的维生素和多种微量元素。

针对目前生产的普通糕点大都缺乏维生素和多种微量元素的这一现实问题,提供一种新的添加含有多种人体必需微量元素和维生素的保健糕点制作方法,制成天然绿色保健食品,更加受消费者的欢迎。
本发明的技术解决方案是:一种菠萝保健糕点制备方法,其特征在于:
(1)由下列重量份的原料制成:大米粉39-45份、大麦粉47-53份、青稞粉38-49份、小豆粉35-44份、菠萝11-17份、麦芽4-6份、神曲6-9份、红曲米5-9份、紫芝7-9份、海金沙5-7份、地龙6-8份;
(2)将菠萝粉碎至25-35目,然后与麦芽、神曲、红曲米一起放入锅中炒至变焦,然后磨成粉;
(3)将紫芝、海金沙、地龙一起用适量水煎煮 4-5次,合并煎煮液;
(4)将大米粉、大麦粉、青稞粉、小豆粉混合,加入步骤(3)得到的煎煮液,搅拌均匀后静置25-35分钟,然后加入步骤(2)得到的菠萝、麦芽、神曲、红曲米的混合粉,再次搅拌,至黏稠糊状,分成小份揉成团;
(5)将上述制得的粗粮面团,置于模具中压制成型,然后转移至铺有荷叶的蒸锅中,隔水蒸熟,即得。

(1)由下列重量份的原料制成:大米粉39-45份、大麦粉47-53份、青稞粉38-49份、小豆粉35-44份、菠萝11-17份、麦芽4-6份、神曲6-9份、红曲米5-9份、紫芝7-9份、海金沙5-7份、地龙6-8份;
(2)将菠萝粉碎至25-35目,然后与麦芽、神曲、红曲米一起放入锅中炒至变焦,然后磨成粉;
(3)将紫芝、海金沙、地龙一起用适量水煎煮 4-5次,合并煎煮液;
(4)将大米粉、大麦粉、青稞粉、小豆粉混合,加入步骤(3)得到的煎煮液,搅拌均匀后静置25-35分钟,然后加入步骤(2)得到的菠萝、麦芽、神曲、红曲米的混合粉,再次搅拌,至黏稠糊状,分成小份揉成团;
(5)将上述制得的粗粮面团,置于模具中压制成型,然后转移至铺有荷叶的蒸锅中,隔水蒸熟,即得。
