本发明公开了一种羊肚菌小麦胚芽韧性饼干及其制备方法,由以下重量份原料制成:面粉200-300份、红薯粉30-50份、白糖50-70份、小麦胚芽15-17份、羊肚菌粉15-20份、鸡蛋8-12份、精炼植物油30-40份、卵磷脂0.8-1.2份、食用盐0.8-1.2份、碳酸氢铵1.5-2.0份、磷酸二氢钙0.5-0.7份、焦亚硫酸钠1.5-1.7份、蛋白酶制剂0.3-0.5份、食用香料0.05-0.08份、水适量。制备:(1)小麦胚芽预处理;(2)制备羊肚菌粉;(3)打粉;(4)成型;(5)烘焙;(7)包装。本发明制备的韧性饼干营养丰富,具有益肠胃、补脑提神、预防感冒、增强人体免疫力的功效,长期食用,具有抗病毒、抑制肿瘤作用,可以减少或消除致癌的危险。
Description
技术领域
本发明涉及食品加工技术领域,尤其涉及一种羊肚菌小麦胚芽韧性饼干及其制备方法。
背景技术
韧性饼干是饼干中的一大类产品,因需要长时间调粉,以形成韧性极强的面团而得名。通常在配方中使用较少量的油脂和砂糖,它的代表性产品如动物、玩具饼干等不规则形态的产品,这种饼干表面的花纹呈平面凹纹型,表面较光洁,松脆爽口,香味淡雅,同等重量情况下其体积一般要比粗饼干、香酥饼干大一些。市场的韧性饼干大部分是面粉制成,营养不均衡,营养价值低。
羊肚菌又称羊肚蘑、羊肝菜、编笠菌,真菌学分类属盘菌目,羊肚菌科,羊肚菌属。性平、味甘,具有益肠胃、消化助食、化痰理气、补肾、壮阳、补脑、提神之功能,对脾胃虚弱、消化不良、痰多气短、头晕失眠有良好的治疗作用。羊肚菌有机锗含量较高,具有强健身体、预防感冒、增强人体免疫力的功效。羊肚菌的营养相当丰富,据测定,羊肚菌含粗蛋白20%、粗脂肪26%、碳水化合物38.1%,还含有多种氨基酸,特别是谷氨酸含量高达1.76%。因此,有人认为是“十分好的蛋白质来源”,并有“素中之荤”的美称。人体中的蛋白质是由20种氨基酸搭配而组成的,而羊肚菌就含有18种,其中8种氨基酸是人体不能制造的,但在人体营养上显得格外重要,所以被称之为“必需氨基酸”。另外,据测定羊肚菌至少含有8种维生素:维生素B1、维生素B2、维生素B12、烟酸、泛酸、吡哕醇、生物素、叶酸等。羊肚菌含抑制肿瘤的多糖,抗菌、抗病毒的活性成分,具有增强机体免疫力、抗疲劳、抗病毒、抑制肿瘤等诸多作用;日本科学家发现羊肚菌提取液中含有酪氨酸酶抑制剂,可以有效地抑制脂褐质的形成。羊肚菌所含丰富的硒是人体红细胞谷胱甘肽过氧化酶的组成成分,可运输大量氧分子来抑制恶性肿瘤,使癌细胞失活;另方面能加强维生素E的抗氧化作用。硒的抗氧化作用能改变致癌物的代方向,并通过结合而解毒,从而减少或消除致癌的危险。
小麦胚芽是一种富含多种活性蛋白质、脂肪酸、维生素和矿物质等多种营养成分的物质,小麦胚芽中有丰富的镁、磷、钾、锌、铁、锰等矿物质,为人体所必需,品种比较全面,尤其微量元素硒等较其它食物含量高。这些矿物元素对维持人体健康,特别是对促进儿童的生长发育有重要作用。小麦胚芽还含有较高的碳水化合物和少量膳食纤维,具有降低血中的胆固醇含量,加深大脑皮层记忆力的作用。小麦胚芽中还含有二十二、二十五、二十六、二十八等碳烯醇,这些高级醇对改善集体基础代谢率、反应时间、反射性、灵敏性、肌肉机能和强化机体心负荷功能、增强体力、耐力、爆发力等有一定功效,其中尤以二十八醇对人体具众多生理活性而受人瞩目。
目前还尚未有羊肚菌小麦胚芽韧性饼干的发现。
发明内容
本发明的目的是克服现有技术的不足,提供一种羊肚菌小麦胚芽韧性饼干,不仅提升韧性饼干的风味和口感,而且提高韧性饼干的保健性能。
为了实现上述目的本发明采用如下技术方案:
一种羊肚菌小麦胚芽韧性饼干,由以下重量份的原料制成:面粉200-300份、红薯粉30-50份、白糖50-70份、小麦胚芽15-17份、羊肚菌粉15-20份、鸡蛋8-12份、精炼植物油30-40份、卵磷脂0.8-1.2份、食用盐0.8-1.2份、碳酸氢铵1.5-2.0份、磷酸二氢钙0.5-0.7份、焦亚硫酸钠1.5-1.7份、蛋白酶制剂0.3-0.5份、食用香料0.05-0.08份、水适量。
优选地,所述的羊肚菌小麦胚芽韧性饼干,由以下重量份的原料制成:面粉200-300份、红薯粉30-50份、白糖50-70份、小麦胚芽15-17份、羊肚菌粉15-20份、鸡蛋8-12份、精炼植物油30-40份、卵磷脂0.8-1.2份、食用盐0.8-1.2份、碳酸氢铵1.5-2.0份、磷酸二氢钙0.5-0.7份、焦亚硫酸钠1.5-1.7份、蛋白酶制剂0.3-0.5份、食用香料0.05-0.08份、水适量。
所述的羊肚菌小麦胚芽韧性饼干的制备方法,包括以下制备步骤:
(1)小麦胚芽预处理:将小麦胚芽洗净,放入电烤箱,60-100℃下烘烤1-2小时,烘烤过程中,用竹子翻弄8-10次,待小麦胚芽颜色为金黄色,发出麦香香味,开始降温冷却1-2小时,然后装袋,密封,备用;
(2)将羊肚菌洗净,用30-50℃温水浸泡10-15分钟,泡软后,把根蒂部分去掉,再用清水冲洗,然后放入鼓风干燥箱中干燥3-5小时,干燥温度50-60℃,烘干后超微粉碎,过200目筛,得羊肚菌粉;
(3)打粉:将步骤(1)的小麦胚芽粉碎后过100目的筛,按上述重量份比例称取粉碎的小麦胚芽、面粉、红薯粉和羊肚菌粉,加入适量水,混合均匀;然后加入上述重量份的白糖、鸡蛋、卵磷脂、食用盐、碳酸氢铵、磷酸二氢钙和20-30份精炼植物油搅拌3-5分钟,再加入焦亚硫酸钠和蛋白酶制剂搅拌12分钟,最后加入食用香料搅拌3-5分钟,形成面团;
(4)制皮:将面团进行辊轧,制皮成型;
(5)烘焙:成型后进入烤炉烘烤,200-300℃下烘烤5-7分钟;
(6)喷油:通过喷油机将剩余的精炼植物油均匀喷洒在烤好的饼干上;
(7)冷却,包装,检验,入库。
与已有技术相比,本发明的有益效果如下:
本发明通过添加了营养价值高的小麦胚芽和羊肚菌,合理配比小麦胚芽和羊肚菌,不仅提高了饼干的营养价值,提高了韧性饼干的保健性能,制备的韧性饼干营养均衡,营养丰富,具有益肠胃、补脑提神、预防感冒、增强人体免疫力的功效,长期食用,还具有抗病毒、抑制肿瘤作用,可以减少或消除致癌的危险。
具体实施方式
以下结合实施例对本发明作进一步的说明,但本发明不仅限于这些实施例,在未脱离本发明宗旨的前提下,所作的任何改进均落在本发明的保护范围之内。
实施例1:
一种羊肚菌小麦胚芽韧性饼干,由以下重量份的原料制成:面粉200份、红薯粉50份、白糖50份、小麦胚芽15份、羊肚菌粉15份、鸡蛋8份、精炼植物油30份、卵磷脂0.8份、食用盐0.8份、碳酸氢铵1.5份、磷酸二氢钙0.5份、焦亚硫酸钠1.5份、蛋白酶制剂0.3份、食用香料0.05份、水适量。
制备方法:
(1)小麦胚芽预处理:将小麦胚芽洗净,放入电烤箱,70℃下烘烤2小时,烘烤过程中,用竹子翻弄8次,待小麦胚芽颜色为金黄色,发出麦香香味,开始降温冷却1小时,然后装袋,密封,备用;
(2)将羊肚菌洗净,用30℃温水浸泡15分钟,泡软后,把根蒂部分去掉,再用清水冲洗,然后放入鼓风干燥箱中干燥3小时,干燥温度60℃,烘干后超微粉碎,过200目筛,得羊肚菌粉;
(3)打粉:将步骤(1)的小麦胚芽粉碎后过100目的筛,按上述重量份比例称取粉碎的小麦胚芽、面粉、红薯粉和羊肚菌粉,加入适量水,混合均匀;然后加入上述重量份的白糖、鸡蛋、卵磷脂、食用盐、碳酸氢铵、磷酸二氢钙和20份精炼植物油搅拌3分钟,再加入焦亚硫酸钠和蛋白酶制剂搅拌12分钟,最后加入食用香料搅拌3分钟,形成面团;
(4)制皮:将面团进行辊轧,制皮成型;
(5)烘焙:成型后进入烤炉烘烤,200℃下烘烤5分钟;
(6)喷油:通过喷油机将剩余的精炼植物油均匀喷洒在烤好的饼干上;
(7)冷却,包装,检验,入库。
实施例2:
一种羊肚菌小麦胚芽韧性饼干,由以下重量份的原料制成:面粉200-300份、红薯粉30-50份、白糖50-70份、小麦胚芽15-17份、羊肚菌粉15-20份、鸡蛋8-12份、精炼植物油30-40份、卵磷脂0.8-1.2份、食用盐0.8-1.2份、碳酸氢铵1.5-2.0份、磷酸二氢钙0.5-0.7份、焦亚硫酸钠1.5-1.7份、蛋白酶制剂0.3-0.5份、食用香料0.05-0.08份、水适量。
制备方法:

(3)打粉:将步骤(1)的小麦胚芽粉碎后过100目的筛,按上述重量份比例称取粉碎的小麦胚芽、面粉、红薯粉和羊肚菌粉,加入适量水,混合均匀;然后加入上述重量份的白糖、鸡蛋、卵磷脂、食用盐、碳酸氢铵、磷酸二氢钙和25份精炼植物油搅拌5分钟,再加入焦亚硫酸钠和蛋白酶制剂搅拌12分钟,最后加入食用香料搅拌5分钟,形成面团;
(4)制皮:将面团进行辊轧,制皮成型;
(5)烘焙:成型后进入烤炉烘烤,250℃下烘烤6分钟;
(6)喷油:通过喷油机将剩余的精炼植物油均匀喷洒在烤好的饼干上;
(7)冷却,包装,检验,入库。
实施例3:
一种羊肚菌小麦胚芽韧性饼干,由以下重量份的原料制成:面粉300份、红薯粉30份、白糖70份、小麦胚芽17份、羊肚菌粉20份、鸡蛋12份、精炼植物油40份、卵磷脂1.2份、食用盐1.2份、碳酸氢铵2.0份、磷酸二氢钙0.7份、焦亚硫酸钠1.7份、蛋白酶制剂0.5份、食用香料0.08份、水适量。
制备方法:
(1)小麦胚芽预处理:将小麦胚芽洗净,放入电烤箱,100℃下烘烤1小时,烘烤过程中,用竹子翻弄10次,待小麦胚芽颜色为金黄色,发出麦香香味,开始降温冷却1小时,然后装袋,密封,备用;
(2)将羊肚菌洗净,用50℃温水浸泡12分钟,泡软后,把根蒂部分去掉,再用清水冲洗,然后放入鼓风干燥箱中干燥5小时,干燥温度60℃,烘干后超微粉碎,过200目筛,得羊肚菌粉;
(3)打粉:将步骤(1)的小麦胚芽粉碎后过100目的筛,按上述重量份比例称取粉碎的小麦胚芽、面粉、红薯粉和羊肚菌粉,加入适量水,混合均匀;然后加入上述重量份的白糖、鸡蛋、卵磷脂、食用盐、碳酸氢铵、磷酸二氢钙和30份精炼植物油搅拌5分钟,再加入焦亚硫酸钠和蛋白酶制剂搅拌12分钟,最后加入食用香料搅拌5分钟,形成面团;
(4)制皮:将面团进行辊轧,制皮成型;
(5)烘焙:成型后进入烤炉烘烤,300℃下烘烤7分钟;
(6)喷油:通过喷油机将剩余的精炼植物油均匀喷洒在烤好的饼干上;
(7)冷却,包装,检验,入库。
Claims (3)
1.一种羊肚菌小麦胚芽韧性饼干,其特征在于:由以下重量份的原料制成:面粉200-300份、红薯粉30-50份、白糖50-70份、小麦胚芽15-17份、羊肚菌粉15-20份、鸡蛋8-12份、精炼植物油30-40份、卵磷脂0.8-1.2份、食用盐0.8-1.2份、碳酸氢铵1.5-2.0份、磷酸二氢钙0.5-0.7份、焦亚硫酸钠1.5-1.7份、蛋白酶制剂0.3-0.5份、食用香料0.05-0.08份、水适量。
2.根据权利要求1所述的羊肚菌小麦胚芽韧性饼干,其特征在于:由以下重量份的原料制成:面粉200-300份、红薯粉30-50份、白糖50-70份、小麦胚芽15-17份、羊肚菌粉15-20份、鸡蛋8-12份、精炼植物油30-40份、卵磷脂0.8-1.2份、食用盐0.8-1.2份、碳酸氢铵1.5-2.0份、磷酸二氢钙0.5-0.7份、焦亚硫酸钠1.5-1.7份、蛋白酶制剂0.3-0.5份、食用香料0.05-0.08份、水适量。
3.一种如权利要求1或2所述的羊肚菌小麦胚芽韧性饼干的制备方法,其特征在于:包括以下制备步骤:
(1)小麦胚芽预处理:将小麦胚芽洗净,放入电烤箱,60-100℃下烘烤1-2小时,烘烤过程中,用竹子翻弄8-10次,待小麦胚芽颜色为金黄色,发出麦香香味,开始降温冷却1-2小时,然后装袋,密封,备用;
(2)将羊肚菌洗净,用30-50℃温水浸泡10-15分钟,泡软后,把根蒂部分去掉,再用清水冲洗,然后放入鼓风干燥箱中干燥3-5小时,干燥温度50-60℃,烘干后超微粉碎,过200目筛,得羊肚菌粉;
(3)打粉:将步骤(1)的小麦胚芽粉碎后过100目的筛,按上述重量份比例称取粉碎的小麦胚芽、面粉、红薯粉和羊肚菌粉,加入适量水,混合均匀;然后加入上述重量份的白糖、鸡蛋、卵磷脂、食用盐、碳酸氢铵、磷酸二氢钙和20-30份精炼植物油搅拌3-5分钟,再加入焦亚硫酸钠和蛋白酶制剂搅拌12分钟,最后加入食用香料搅拌3-5分钟,形成面团;
(4)制皮:将面团进行辊轧,制皮成型;
(5)烘焙:成型后进入烤炉烘烤,200-300℃下烘烤5-7分钟;
(6)喷油:通过喷油机将剩余的精炼植物油均匀喷洒在烤好的饼干上;
(7)冷却,包装,检验,入库。
