背景技术
望江南(拉丁学名:CassiaoccidentalisLinn)又名野扁豆、狗屎豆、羊角豆、黎茶。为决明属植物。直立、少分枝的亚灌木或灌木,无毛,枝带草质,有棱;根黑色。托叶膜质,卵状披针形,早落。花数朵组成伞房状总状花序,花长约2厘米;花瓣黄色,荚果带状镰形,褐色种子间有薄隔膜。花期4-8月,果期6-10月。分布于中国东南部、南部及西南部各省区。原产美洲热带地区,现广布于全世界热带和亚热带地区。茎叶、荚果、种子均可入药。喜温暖湿润和光充足环境,耐寒性差,易受早危害,怕积水,对土壤要求不严,宜在疏松肥沃和排水好的壤土中生长。
望江南具有清肝,健胃,通便,解毒的效果。主目赤肿痛,头晕头胀,消化不良,胃痛,痢疾,便秘,痈肿疔毒等症状。
现有技术中,还没有对于望江南的食用价值进行开发,仅限于在中药领域的用药,无法实现望江南价值的最大化利用,无法提高望江南的社会价值和经济价值。
发明内容
本发明的目的是针对上述现有技术的缺陷,提供了一种望江南养生汤及其加工工艺,其将望江南的有效中药成分与老鸭汤混合,是老鸭汤口味独特,且望江南本身的药用价值也得到了进一步的利用,有效的拓宽了望江南的市场,提高了望江南的社会价值和经济价值。
本发明的目的可以通过以下技术方案实现:
一种望江南养生汤及其加工工艺,所述望江南养生汤的组成物料包括如下配方及重量比:老鸭1000-1600g、望江南80-120g、胡萝卜80-120g、菠菜60-100g、猴头菇60-100g、大枣30-50g、枸杞14-20g、党参14-20g、百合14-20g、桂圆干14-20g、生姜20-30g、葱20-30g、大蒜16-20g、桂皮10-16g、八角10-16g、精盐30-50g、白糖15-25g、料酒20-30g、食用油20-30g、味精5-9g;
该望江南养生汤的加工工艺,具体如下:
(1)根据上述配方及比例,挑选、称取优质原料;
(2)将老鸭洗净切成块、焯水后捞出,备用;
(3)将采摘的新鲜望江南洗净后,晾晒6—10小时,干透,碾碎成颗粒状;
(4)将胡萝卜去皮后切成滚刀块,将菠菜洗净后切成段;将猴头菇洗净后掰开,将大枣、枸杞、党参、百合、桂圆干洗净后用水浸泡,将生姜、大蒜洗净后切成片,将葱洗净后切成段;
(5)在加热容器中放入食用油、生姜、葱、大蒜,炒出香味后加入再放入老鸭块、料酒,煸炒后放入水3000-4000g以及望江南、胡萝卜块、猴头菇、大枣、枸杞、党参、百合、桂圆干、桂皮、八角及精盐15-25g,一起加热煮制60-90分钟;
(6)待煮开后,加入菠菜、白糖及剩余精盐,再用大火加热3-5分钟;
(7)待上述汤料煮开后撇去上层浮沫,放入味精,搅拌后煮1-2分钟即可;
(8)将上述汤料杀菌后,进行灌装、封口,并传输至速冻隧道,在零下40℃的环境中,速冻至中心温度达到零下l8℃以下,经检验合格后装箱入库,即为成品,届时通过加热即可食用。
作为本发明的进一步优化,所述望江南养生汤的组成物料包括如下配方及重量比:老鸭1200-1500g、望江南90-110g、胡萝卜90-110g、菠菜70-90g、猴头菇70-90g、大枣35-45g、枸杞15-18g、党参15-18g、百合15-18g、桂圆干15-19g、生姜21-29g、葱21-29g、大蒜17-19g、桂皮11-15g、八角11-15g、精盐32-50g、白糖16-24g、料酒21-29g、食用油22-29g、味精6-9g。
作为本发明的进一步优化,所述望江南养生汤的组成物料包括如下配方及重量比:老鸭1300-1500g、望江南90-110g、胡萝卜90-120g、菠菜80-100g、猴头菇70-100g、大枣40-50g、枸杞16-20g、党参17-20g、百合14-18g、桂圆干15-18g、生姜20-28g、葱22-28g、大蒜17-20g、桂皮11-15g、八角11-15g、精盐31-48g、白糖16-23g、料酒21-28g、食用油22-30g、味精6-9g。
本发明上述成分合理配伍,达到了清肝,健胃,通便,解毒的效果,同时也实现了望江南药用价值的最大化利用,提高了望江南的社会价值和经济价值。 
具体实施方式
下面结合实施例对本发明的具体实施方式作进一步详细说明:
实施例1
一种望江南养生汤的加工制作方法,具体步骤如下:
(1)挑选、称取优质的老鸭1000g、望江南80g、胡萝卜80g、菠菜60g、猴头菇60g、大枣30g、枸杞14g、党参14g、百合14g、桂圆干14g、生姜20g、葱20g、大蒜16g、桂皮10g、八角10g、精盐30g、白糖15g、料酒20g、食用油20g、味精5g;
(2)将老鸭洗净切成块、焯水后捞出,备用;
(3)将采摘的新鲜望江南洗净后,晾晒6小时,干透,碾碎成颗粒状;
(4)将胡萝卜去皮后切成滚刀块,将菠菜洗净后切成段;将猴头菇洗净后掰开,将大枣、枸杞、党参、百合、桂圆干洗净后用水浸泡,将生姜、大蒜洗净后切成片,将葱洗净后切成段;
(5)在加热容器中放入食用油、生姜、葱、大蒜,炒出香味后加入再放入老鸭块、料酒,煸炒后放入水3000g以及望江南、胡萝卜块、猴头菇、大枣、枸杞、党参、百合、桂圆干、桂皮、八角及精盐15g,一起加热煮制60分钟;
(6)待煮开后,加入菠菜、白糖及剩余精盐,再用大火加热3分钟;
(7)待上述汤料煮开后撇去上层浮沫,放入味精,搅拌后煮1分钟即可;
(8)将上述汤料杀菌后,进行灌装、封口,并传输至速冻隧道,在零下40℃的环境中,速冻至中心温度达到零下l8℃以下,经检验合格后装箱入库,即为成品,届时通过加热即可食用。
实施例2
一种望江南养生汤的加工制作方法,具体步骤如下:

(2)将老鸭洗净切成块、焯水后捞出,备用;
(3)将采摘的新鲜望江南洗净后,晾晒10小时,干透,碾碎成颗粒状;
(4)将胡萝卜去皮后切成滚刀块,将菠菜洗净后切成段;将猴头菇洗净后掰开,将大枣、枸杞、党参、百合、桂圆干洗净后用水浸泡,将生姜、大蒜洗净后切成片,将葱洗净后切成段;
(5)在加热容器中放入食用油、生姜、葱、大蒜,炒出香味后加入再放入老鸭块、料酒,煸炒后放入水4000g以及望江南、胡萝卜块、猴头菇、大枣、枸杞、党参、百合、桂圆干、桂皮、八角及精盐25g,一起加热煮制90分钟;
(6)待煮开后,加入菠菜、白糖及剩余精盐,再用大火加热5分钟;
(7)待上述汤料煮开后撇去上层浮沫,放入味精,搅拌后煮2分钟即可;
(8)将上述汤料杀菌后,进行灌装、封口,并传输至速冻隧道,在零下40℃的环境中,速冻至中心温度达到零下l8℃以下,经检验合格后装箱入库,即为成品,届时通过加热即可食用。
实施例3
一种望江南养生汤的加工制作方法,具体步骤如下:
(1)挑选、称取优质的老鸭1300g、望江南100g、胡萝卜90g、菠菜80g、猴头菇90g、大枣40g、枸杞18g、党参16g、百合19g、桂圆干17g、生姜25g、葱26g、大蒜18g、桂皮13g、八角12g、精盐35g、白糖20g、料酒26g、食用油28g、味精8g;
(2)将老鸭洗净切成块、焯水后捞出,备用;
(3)将采摘的新鲜望江南洗净后,晾8小时,干透,碾碎成颗粒状;
(4)将胡萝卜去皮后切成滚刀块,将菠菜洗净后切成段;将猴头菇洗净后掰开,将大枣、枸杞、党参、百合、桂圆干洗净后用水浸泡,将生姜、大蒜洗净后切成片,将葱洗净后切成段;
(5)在加热容器中放入食用油、生姜、葱、大蒜,炒出香味后加入再放入老鸭块、料酒,煸炒后放入水3500g以及望江南、胡萝卜块、猴头菇、大枣、枸杞、党参、百合、桂圆干、桂皮、八角及精盐,一起加热煮制80分钟;
(6)待煮开后,加入菠菜、白糖及剩余精盐,再用大火加热4分钟;
(7)待上述汤料煮开后撇去上层浮沫,放入味精,搅拌后煮2分钟即可;
(8)将上述汤料杀菌后,进行灌装、封口,并传输至速冻隧道,在零下40℃的环境中,速冻至中心温度达到零下l8℃以下,经检验合格后装箱入库,即为成品,届时通过加热即可食用。

该望江南养生汤的加工工艺,具体如下:
(1)根据上述配方及比例,挑选、称取优质原料;
(2)将老鸭洗净切成块、焯水后捞出,备用;
(3)将采摘的新鲜望江南洗净后,晾晒6—10小时,干透,碾碎成颗粒状;
(4)将胡萝卜去皮后切成滚刀块,将菠菜洗净后切成段;将猴头菇洗净后掰开,将大枣、枸杞、党参、百合、桂圆干洗净后用水浸泡,将生姜、大蒜洗净后切成片,将葱洗净后切成段;
(5)在加热容器中放入食用油、生姜、葱、大蒜,炒出香味后加入再放入老鸭块、料酒,煸炒后放入水3000-4000g以及望江南、胡萝卜块、猴头菇、大枣、枸杞、党参、百合、桂圆干、桂皮、八角及精盐15-25g,一起加热煮制60-90分钟;
(6)待煮开后,加入菠菜、白糖及剩余精盐,再用大火加热3-5分钟;
(7)待上述汤料煮开后撇去上层浮沫,放入味精,搅拌后煮1-2分钟即可;
(8)将上述汤料杀菌后,进行灌装、封口,并传输至速冻隧道,在零下40℃的环境中,速冻至中心温度达到零下l8℃以下,经检验合格后装箱入库,即为成品,届时通过加热即可食用。
