本发明属于食品加工技术领域,主要涉及一种以仙草、红豆、莲子为原料制得的仙草饮品。
背景技术
仙草(Mesona Blume),又名仙人草、凉草粉,系唇形科仙草属一年生草本植物,是我国传统的药食两用的植物资源。仙草富含多糖、色素、熊果酸、齐墩果酸、香树精、黄酮、果胶、酚类以及其他的微量元素和维生素。上述成分中,黄酮具有抑制癌症细胞生长、降低血压的作用;多糖具有增强和提高肌体免疫力的作用;熊果酸和齐墩果酸具有降温、镇静、降血糖的作用。香树精有镇静、清凉解毒利水的功效;微量元素具有抑制自由基形成、抗衰老、抗癌;维生素能调节和增强人体生理机能。现代研究表明仙草可以治疗中暑、解热利水、消渴、治疗高血压、肾病、糖尿病、关节肌肉疼痛、淋病。
仙草胶是仙草中含有的一种组成较为复杂的具有凝胶型的水溶性多糖,广泛存在于仙草的叶、根、茎中。仙草胶具有很好的凝胶型,而且具有超过一般食品胶的热稳定性,其用于制作果冻,弹性和韧性都很好,且口感嫩滑、风味独特。
目前,仙草胶一般采用高压浸提或高压碱液浸提法,高压浸提法的提取率较低,而高压碱液法的提取率随着碱液浓度的增大而提高,却给产品造成不良风味。常见的仙草类饮品口感大多不够好,且口感单一,不能满足人们多样化的需求。
发明内容
本发明要解决的技术问题是提供一种由仙草、红豆、莲子为原料制作的仙草饮品,该产品口感丰富,味道清甜。
本发明通过以下技术方案实现,一种仙草饮品,由以下重量配比的原料制成:
仙草粒55-65%、红豆2-6%、莲子1-3%、白砂糖10-15%、余量为纯净水;
所述仙草粒的制备方法如下:
将仙草粉碎,加入仙草重量15-20倍的纯净水煎煮至沸腾,冷却,再加入仙草重量0.35-0.45%的纤维素酶、果胶酶、果胶裂解酶的复合酶,在50-60℃、pH5.0-5.8条件下提取2-4小时,再加入碳酸钠或碳酸钾调节pH7.0-8.0,煮沸2小时,过滤,滤液即为仙草汁;向仙草汁加入淀粉和稳定剂,混匀,高温灭菌,冷却至40-50℃,切粒后用0.6-1%的乳酸钙浸泡1-2小时即为仙草粒。
所述的复合酶是纤维素酶、果胶酶、果胶裂解酶按照5:3:2的重量比组成。
所述淀粉优选木薯粉、地瓜粉或籼米粉,用量优选重量的2-5%。
所述稳定剂优选卡拉胶、果胶或明胶,用量优选重量的0.02-1%。
上述的制备方法如下:
将仙草粒、红豆、莲子、白砂糖和纯净水装入容器中,灭菌后即得。
相比现有技术,本发明的优点在于:
1、仙草的细胞壁是由纤维素构成,仙草的有效成分往往包裹在细胞壁内,而纤维素则是由β-D-纤维素以及1,4-β纤维素苷键连接,用纤维素酶酶解可以破坏该键,使仙草细胞壁破坏,但是仙草内含有大量胶质成分,和纤维素紧密结合,单独使用纤维素酶,效果不好。本发明中采用纤维素酶、果胶酶、果胶裂解酶组成的复合酶,可以对胶质和纤维素的分解起到相互促进的作用,相比单独使用纤维素酶、果胶酶或果胶裂解酶,更有利于有效成分的提取,同时,碱性条件下提取,提高有效成分的提取率,提取率提高20-40%,效果更好,风味更佳。

制备方法:将仙草粉碎,加入仙草重量20倍的纯净水煎煮至沸腾,冷却,再加入仙草重量0.45%的复合酶,在60℃、pH5.8条件下提取4小时,再加入碳酸钠调节pH8.0,煮沸2小时,过滤,滤液即为仙草汁;向仙草汁加入3%重量的地瓜粉和0.02%重量的卡拉胶,混匀,高温灭菌,冷却至40℃,切粒后用0.8%的乳酸钙浸泡1.5小时即为仙草粒;再将仙草粒、红豆、莲子、白砂糖和水装入罐中,高温灭菌后即为成品。

制备方法:将仙草粉碎,加入仙草重量18倍的纯净水煎煮至沸腾,冷却,再加入仙草重量0.4%的复合酶,在55℃、pH5.5条件下提取3小时,再加入碳酸钾调节pH7.5,煮沸2小时,过滤,滤液即为仙草汁;向仙草汁加入4%重量的籼米粉和0.1%重量的明胶,混匀,高温灭菌,冷却至40℃,切粒后用1%的乳酸钙浸泡1小时即为仙草粒;再将仙草粒、红豆、莲子、白砂糖和水装入罐中,高温灭菌后即为成品。
实施例4
仙草饮品,它是由以下重量配比的原料制成:
仙草粒60kg、红豆5kg、莲子1kg、白砂糖15kg、纯净水19kg。
制备方法:将仙草粉碎,加入仙草重量20倍的纯净水煎煮至沸腾,冷却,再加入仙草重量0.35%的复合酶,在60℃、pH5.0条件下提取4小时,再加入碳酸钾调节pH8.0,煮沸2小时,过滤,滤液即为仙草汁;向仙草汁加入5%重量的木薯粉和0.2%重量的卡拉胶,混匀,高温灭菌,冷却至40℃,切粒后用0.7%的乳酸钙浸泡1.5小时即为仙草粒;再将仙草粒、红豆、莲子、白砂糖和水装入罐中,高温灭菌后即为成品。
Claims (4)
1.一种仙草饮品,其特征在于:它是由以下重量配比的原料制成:
仙草粒55-65%、红豆2-6%、莲子1-3%、白砂糖10-15%、余量为纯净水;
所述仙草粒的制备方法如下:
将仙草粉碎,加入仙草重量15-20倍的纯净水煎煮至沸腾,冷却,再加入仙草重量0.35-0.45%的纤维素酶、果胶酶、果胶裂解酶的复合酶,在50-60℃、pH5.0-5.8条件下提取2-4小时,再加入碳酸钠或碳酸钾调节pH7.0-8.0,煮沸2小时,过滤,滤液即为仙草汁;向仙草汁加入淀粉和稳定剂,混匀,高温灭菌,冷却至40-50℃,切粒后用0.6-1%的乳酸钙浸泡1-2小时即为仙草粒;
所述的复合酶是纤维素酶、果胶酶、果胶裂解酶按照5:3:2的重量比组成。
2.根据权利要求1所述的仙草饮品,其特征在于:所述稳定剂为卡拉胶、果胶或明胶。
3.根据权利要求1所述的仙草饮品,其特征在于:所述淀粉为木薯粉、地瓜粉或籼米粉。
4.根据权利要求1-3任一所述的仙草饮品,其特征在于:上述仙草饮品的制备方法如下:将仙草粒、红豆、莲子、白砂糖和纯净水装入容器中,灭菌后即得。
