本发明属于食品工程技术功能性食品领域,尤其涉及一种抗氧化的双胶破壁灵芝孢子粉及其制备方法。
背景技术
灵芝孢子粉是灵芝发育后期弹射释放出的种子,生物学上称担孢子,集中起来后呈粉末状,通称灵芝孢子粉,它的利用和研究近年来逐年增多。灵芝孢子含有比灵芝更丰富的多糖肽、腺嘌呤、核苷、蛋白质、酶类、硒元素等特殊成分,灵芝孢子粉具有抑制肿瘤、调节免疫、调节神经、调节机能四大药理作用。灵芝孢子粉凝聚了灵芝的精华,具有灵芝的全部遗传物质和保健作用。灵芝孢子的大小只有4-6个微米,在显微镜下才能见到卵圆形状的物体,是个活体生物体,据分析灵芝孢子粉除了含有灵芝多糖、三萜类、维生素、蛋白质、微量元素等活性物质外,还含有丰富的脂溶性物质,含量可高达20%,其中主要为不饱和脂肪酸、和亚油酸。灵芝孢子成熟时这些营养物质被坚硬的孢子壁包裹在孢子里头,这层孢子壁对外界机械的、物理的、化学的损伤具有较强的防御作用,保护着孢子内的活性物质免受氧化破坏,因此灵芝孢子壁是非常坚固的、不易被破坏的,当然也不易被人体内的消化酶彻底降解,如果人们直接食用孢子粉就好似囫囵吞枣,吸收利用率极低,功能效果较差。
灵芝孢子油中的不饱和脂肪酸易被氧化,使过氧化值、酸价指标急剧升高,氧化后还会出现哈喇味,直接影响食用者的身体健康。目前市场上所见灵芝孢子粉产品琳琅满目,其生产工艺亦都采用破壁处理,而破壁后的氧化问题还未得到足够的重视和圆满的解决。因此研究破壁灵芝孢子粉的抗氧化配方、工艺对灵芝孢子粉的深度开发利用显得非常急需,具有巨大的经济效益和广阔市场前景。
物理屏障方法广泛应用于破壁灵芝孢子粉的抗氧化处理,其原理是采用一种加某种溶剂能溶解成液体干燥后又能重新凝结成固体的物料,通过相应的工艺处理使破壁的灵芝孢子碎片表面包裹上一层被膜,干燥后将灵芝孢子碎片紧密的包裹在里面,与外界环境空气隔绝,从而起到抗氧化的作用。因此抗氧化的效果与配方原料的性能和生产工艺密切相关,不同的配方原料、不同的生产工艺所制备的破壁灵芝孢子粉的包埋膜的致密性差异较大,其抗氧化效果完全不同。几丁聚糖又称壳聚糖或甲壳胺,是甲壳类动物(如虾、蟹)、昆虫和其他无脊椎动物外壳中的甲壳中的甲壳质,经脱乙酰化后制得的一种天然高分子多糖体,是动物性的食物纤维。由于几丁聚糖不溶于水、酒精、弱酸和弱碱等液体,只溶于强无机酸,所以只好用食醋来溶解且溶解度不高,干燥后凝结成膜的致密性不高,屏障作用不强,抗氧化的效果不理想。
发明内容
本发明的目的在于针对现有技术的不足,提供一种抗氧化的双胶破壁灵芝孢子粉及其制备方法。
本发明的目的是通过以下技术方案实现的:一种抗氧化的双胶破壁灵芝孢子粉,由破壁灵芝孢子粉经阿胶、猪皮胶胶体溶液喷雾包埋制粒、沸腾干燥工艺制成,其中阿胶、猪皮胶和破壁灵芝孢子粉的质量配比为2~5:2~5:90~96。
一种抗氧化的双胶破壁灵芝孢子粉及其制备方法,包括如下步骤:
(1)按阿胶、猪皮胶和破壁灵芝孢子粉的质量配比为2~5:2~5:90~96取材;
(2)制备阿胶、猪皮胶胶体浓缩液:将阿胶、猪皮胶分别加热溶解、过滤,滤液混合,真空浓缩,浓缩液比重大于1.10;
(3)喷雾制粒:浓缩后的阿胶、猪皮胶浓缩液经 0.2MPa的高压雾状喷入干燥塔内与塔内沸腾破壁灵芝孢子粉碎片碰撞,阿胶、猪皮胶的胶体液被破壁灵芝孢子碎片吸附,边喷入、边吸附、边干燥,破壁灵芝孢子粉碎片被凝结成微小颗粒;干燥塔温度为在60~70℃;
(4)沸腾干燥:已凝结的破壁灵芝孢子粉小颗粒继续在干燥塔中沸腾使水分蒸发,直至完全干燥,干燥塔温度控制在60~70℃,得到本发明破壁灵芝孢子粉。
本发明的有益效果是:本发明既有粘性、水溶性、凝结性,又有一定的营养性、功能性的配方原料,作为破壁灵芝孢子粉包膜材料,达到破壁灵芝孢子粉抗氧化目的。

阿胶由驴皮熬制而成,驴皮的主要成分是胶原蛋白,阿胶能溶于水,随着浓度的增加逐变成粘稠液体,干燥后又凝结成致密的固体,利用阿胶的这一特性用作破壁灵芝孢子粉的包埋材料是非常合适的。并且阿胶是流传了3000年的滋补上品,是著名的传统中药,具有补血止血,滋阴润肺的功能。临床多用于血虚、萎黄、眩晕、心悸、虚劳咯血、吐血、尿血、便血、崩漏等出血症的治疗。现代药理研究表明,阿胶有加速红细胞、血红蛋白生成和止血的作用。可改善体内钙的平衡,促进钙的吸收;可抗创伤性休克,有预防进行性肌营养障碍的功效。临床还发现,阿胶有益智健脑、缓延衰老、强筋健骨、美容养颜等功能,特别是阿胶的补血作用,通常把阿胶叫做“补血圣药”,阿胶通过补血而滋润皮肤,利于皮肤保健,长期服用使脸色红润,肌肤细嫩,有光泽,阿胶是滋养皮肤,美容养颜之佳品。
猪皮胶由猪皮脱脂熬制而成,猪皮中含有大量的胶原蛋白在蒸煮加热过程中可转化成明胶,明胶具有网状空间结构,它能结合许多水,增强细胞生理代谢,有效地改善机体生理功能和皮肤组织细胞的储水功能,使细胞得到滋润,保持湿润状态,防止皮肤过早褶皱,延缓皮肤的衰老过程。
猪皮所含蛋白质的主要成分是胶原蛋白,约占85%,其次为弹性蛋白。生物研究发现:胶原蛋白质与结合水的能力有关,人体内如果缺少这种属于生物大分子胶类物质的胶原蛋白,会使体内细胞贮存水的机制发生障碍。细胞结合水量明显减少,人体就会发生“脱水”现象,轻则使皮肤干燥、脱屑,失去弹性,皱纹横生,重则影响生命。猪皮味甘、性凉、有滋阴补虚,清热利咽的功使。现代,科学家们发现,经常食用猪皮有延缓衰老和抗癌的作用。
因为猪皮中含有大量的胶原蛋白,可以给予含有胶原蛋白的皮肤层所必需的养分,使皮肤中的胶原蛋白活性加强,保持角质层水分以及纤维结构的完整性,改善皮肤细胞生存环境和促进皮肤组织的新陈代谢,达到滋润皮肤延缓老化、美容、丰胸、消皱、养发等目的。
由于动物皮胶原蛋白的结构特点使得阿胶、猪皮胶既有良好的水溶性,溶于水后成粘稠的胶体溶液,干燥后又成富有韧性质地致密的固体,因此利用阿胶、猪皮胶的这一特点作为破壁灵芝孢子粉的包埋材料是非常理想的,用阿胶猪皮胶包埋的破壁灵芝孢子碎片表面凝结成的蛋白质膜质地致密,屏障效果良好,能达到抗氧化的目的。此外在破壁灵芝孢子粉中添加了阿胶和猪皮胶增加了养颜美容的保健功能。
本发明一种抗氧化的双胶破壁灵芝孢子粉,由破壁灵芝孢子粉经阿胶、猪皮胶胶体溶液喷雾包埋制粒、沸腾干燥工艺制成,其中阿胶、猪皮胶和破壁灵芝孢子粉的质量配比为2~5:2~5:90~96。
一种抗氧化的双胶破壁灵芝孢子粉及其制备方法,包括如下步骤:
(1)按阿胶、猪皮胶和破壁灵芝孢子粉的质量配比为2~5:2~5:90~96取材;
(2)制备阿胶、猪皮胶胶体浓缩液:将阿胶、猪皮胶分别加热溶解、过滤,滤液混合,真空浓缩,浓缩液比重大于1.10;
(3)喷雾制粒:浓缩后的阿胶、猪皮胶浓缩液经 0.2MPa的高压雾状喷入干燥塔内与塔内沸腾破壁灵芝孢子粉碎片碰撞,阿胶、猪皮胶的胶体液被破壁灵芝孢子碎片吸附,边喷入、边吸附、边干燥,破壁灵芝孢子粉碎片被凝结成微小颗粒;干燥塔温度为在60~70℃;
(4)沸腾干燥:已凝结的破壁灵芝孢子粉小颗粒继续在干燥塔中沸腾使水分蒸发,直至完全干燥,干燥塔温度控制在60~70℃,得到本发明破壁灵芝孢子粉。
下面结合附图对本发明的具体实施作进一步描述。
实施例1
本发明一种抗氧化的双胶破壁灵芝孢子粉及其制备方法,包括以下步骤:
1.取材:阿胶2kg、猪皮胶5kg、破壁的灵芝孢子粉90 kg。
2.制备阿胶、猪皮胶胶体浓缩液:将阿胶、猪皮胶分别加热溶解、过滤,滤液混合,真空浓缩,浓缩液比重大于1.10;
3.喷雾制粒:浓缩后的阿胶、猪皮胶浓缩液经0.2MPa的高压雾状喷入干燥塔内,干燥塔温度为在60~70℃之间,与塔内沸腾破壁灵芝孢子粉碎片碰撞,阿胶、猪皮胶的胶体液被破壁灵芝孢子碎片吸附,边喷入、边吸附、边干燥,破壁灵芝孢子粉碎片被凝结成微小颗粒;
4、沸腾干燥:已凝结的破壁灵芝孢子粉小颗粒继续在干燥塔中沸腾使水分蒸发,直至完全干燥,干燥塔温度控制在60~70℃,得到本发明破壁灵芝孢子粉。
实施例2
本发明一种抗氧化的双胶破壁灵芝孢子粉及其制备方法,包括以下步骤:
1.取材:阿胶5kg、猪皮胶2kg、破壁的灵芝孢子粉96 kg。
2.制备阿胶、猪皮胶胶体浓缩液:将阿胶、猪皮胶分别加热溶解、过滤,滤液混合,真空浓缩,浓缩液比重大于1.10;
3.喷雾制粒:浓缩后的阿胶、猪皮胶浓缩液经0.2MPa的高压雾状喷入干燥塔内,干燥塔温度为在60~70℃之间,与塔内沸腾破壁灵芝孢子粉碎片碰撞,阿胶、猪皮胶的胶体液被破壁灵芝孢子碎片吸附,边喷入、边吸附、边干燥,破壁灵芝孢子粉碎片被凝结成微小颗粒;
4、沸腾干燥:已凝结的破壁灵芝孢子粉小颗粒继续在干燥塔中沸腾使水分蒸发,直至完全干燥,干燥塔温度控制在60~70℃,得到本发明破壁灵芝孢子粉。
上述实施例用来解释说明本发明,而不是对本发明进行限制,在本发明的精神和权利要求的保护范围内,对本发明作出的任何修改和改变,都落入本发明的保护范围。
Claims (2)
1.一种抗氧化的双胶破壁灵芝孢子粉,其特征在于,它由破壁灵芝孢子粉经阿胶、猪皮胶胶体溶液喷雾包埋制粒、沸腾干燥工艺制成,其中阿胶、猪皮胶和破壁灵芝孢子粉的质量配比为2~5:2~5:90~96。
2.根据权利要求1所述的一种抗氧化的双胶破壁灵芝孢子粉的制备方法,其特征在于,包括以下步骤:
(1)按阿胶、猪皮胶和破壁灵芝孢子粉的质量配比为2~5:2~5:90~96取材;
(2)制备阿胶、猪皮胶胶体浓缩液:将阿胶、猪皮胶分别加热溶解、过滤,滤液混合,真空浓缩,浓缩液比重大于1.10;
(3)喷雾制粒:浓缩后的阿胶、猪皮胶浓缩液经 0.2MPa的高压雾状喷入干燥塔内与塔内沸腾破壁灵芝孢子粉碎片碰撞,阿胶、猪皮胶的胶体液被破壁灵芝孢子碎片吸附,边喷入、边吸附、边干燥,破壁灵芝孢子粉碎片被凝结成微小颗粒;干燥塔温度为60~70℃左右;
(4)沸腾干燥:已凝结的破壁灵芝孢子粉小颗粒继续在干燥塔中沸腾使水分蒸发,直至完全干燥,干燥塔温度控制在60~70℃左右,得到本发明抗氧化的双胶破壁灵芝孢子粉。
