本发明是关于一种鸡肉丁保健粥及其制备方法,属于食品类中粥的工艺技术领域。
背景技术
老母鸡的补益之功效更高,许多久病、瘦弱之人用来补身,尤其是畏寒风重,虚不受补者,老母鸡不但能补气补血,还可祛风,故比鸡项(指未生过鸡蛋的雌鸡)优胜得多。按照一般人的习惯,多喜欢吃鲜嫩的鸡项,不爱吃肉粗骨硬的老母鸡。但从祛风补气补血的功效来看,母鸡愈老,功效越好。因为老母鸡肉多,钙质多,用文火熬汤,最适宜贫血患者及孕妇、产妇和消化力弱的人补养。
粥可调节胃口,增进食欲,补充身体需要的水分。它味道鲜美、润喉易食,营养丰富又易于消化,实在是养生保健的佳品。粥的妙不可言,在于它介于饭、菜和汤三者之间。

一种鸡肉丁保健粥,其特征在于由以下重量份的原料制成:糯米200~250、鸡肉150~170、柑橘皮15~20、蒜5~8、香菇20~25、细盐10~15、山药40~45、姜10~12、黄酒8~15、醋8~15、水芹菜20~25、助剂4~5、水650~800;所述助剂由以下重量份的原料制成:丁葵草4~5、紫苏籽1~2、白术2~3、二色补血草4~5、向日葵花盘1~2、瓜萎叶2~3、蘘荷花苞10~12、炒大麦粉6~8;制备方法是将除炒大麦粉以外的各原料混合,加水煎煮,过滤得提取液,提取液浓缩后烘干,与炒大麦粉混合即得。
丁葵草是一种多年生豆科小草本,生于荒野。全草夏秋采收,晒干,可以祛瘀消肿,调起利湿。
紫苏籽为唇形科植物紫苏的干燥成熟果实,有降气消痰、止咳平喘、润肠的功效。
白术:一种菊科多年生草本植物,以根茎入药,具有多项药用功能。
二色补血草:它是白花丹科多年生草本,属补血草属。
瓜萎叶:瓜萎即栝楼,多年生攀缘草本,可药用,有解热止渴、利尿、镇咳祛痰等作用。
蘘荷:是一种多年生姜科草本,根部具有药用价值,其嫩花序、嫩叶可当蔬菜,花序可治咳嗽,配生香榧治小儿百日咳有显效。
一种鸡肉丁保健粥的制备方法,其特征在于包括以下几个步骤:
(1)将新鲜老母鸡肉洗干净后用小刀割去皮,然后切成馒头块大小,放于高压锅中,兑水,加入山药、黄酒、醋、柑橘皮、大火烧开后小火炖60~70min;
(2)打开高压锅盖,取出鸡肉块,迅速过凉水冷却,之后小刀削下鸡肉群,并切成花生米大小放于碗中,将蒜拍碎做成蒜末和黄酒一起加入碗中,搅拌均匀,常温下放置20~30min;
(3)将香菇切成绿豆粒大小并和糯米、细盐、水芹菜、水一起放入砂锅,大火迅速烧开,揭开锅盖,放入助剂和(2)所述的鸡肉粒,同时搅拌均匀,盖上锅盖,小火慢熬30~40min;
(4)打开砂锅,姜切成丝状洒在粥表面,常温下冷却即可。
