Abstract
本发明涉及一种麸皮饮料,该饮料的配比为(以重量份计):麸皮11-14、蜂蜜10-12、葡萄糖10-14、甜味素0.2-0.3、柠檬酸0.2-0.3、山梨酸钾0.04-0.06、苯甲酸钠0.04-0.06、维生素B20.02-0.03、络合镁铝硅酸盐0.02-0.03、水68.5-59.2。将原料按工艺步骤混合、加热、调配、均质、灭菌灌装即可得成品。该饮料可以补充人体必需的膳食纤维和B族维生素,饮用方便,口感好。

技术领域
本发明属于功能性食品领域,提供一种麸皮饮料的配比和加工工艺。
背景技术
随着人们生活水平的提高,人们的饮食越来越精细,这样就导致了对膳食纤维和B族维生素的摄取不足,时间一长容易导致因缺少膳食纤维和B族维生素所带来的疾病,这种情况在儿童群体表现的尤为明显。
目前市场上已有很多种补充膳食纤维食品,但都是固体食品,在烤制的过程中B族维生素和膳食纤维会被部分破坏,制作工艺也比较复杂。
发明内容
本发明利用麸皮中丰富的膳食纤维和B族维生素,通过一系列的工艺步骤制作成一种功能性饮料。本发明的原料配比为:麸皮11-14、蜂蜜10-12、葡萄糖10-14、甜味素0.2-0.3、柠檬酸0.2-0.3、山梨酸钾0.04-0.06、苯甲酸钠0.04-0.06、维生素B2 0.02-0.03、络合镁铝硅酸盐0.02-0.03、水68.5-59.2,以上原料均以重量份计。
本发明的技术方案是:
A、原料加工:将麸皮磨细,过50目筛,备用;
B、将A步骤所得麸粉,加水调匀,使麸皮浓度为5-15%,加入0.1-1.0%的络合镁铝硅酸盐,加入柠檬酸使该混合液pH值保持在3.5-5.5之间,升温至85-95℃,连续加热25-55分钟,冷却备用;
C、将B步骤所得混合液加入蜂蜜10-12重量份、葡萄糖10-14重量份、甜味素0.2-0.3重量份、山梨酸钾0.04-0.06重量份、苯甲酸钠0.04-0.06重量份、维生素B2 0.02-0.03重量份,混匀后,通过均质机在15-35MPa的压力下均质,灭菌灌装即可得成品。

本发明加工工艺简单,口感好,不仅可以满足日常生活中膳食纤维和B族维生素的摄入,而且为麸皮的利用提供了一个良好的应用途径。
具体实施方式是:
实施例1:
A、原料加工:将麸皮11公斤磨细,过50目筛,备用;
B、将A步骤所得麸粉,加水调匀,使麸皮浓度为5%,加入0.1%的络合镁铝硅酸盐,加入柠檬酸使该混合液pH值保持在3.5之间,升温至85℃,连续加热25分钟,冷却备用;
C、将B步骤所得混合液加入蜂蜜10公斤、葡萄糖10公斤、甜味素0.2公斤、山梨酸钾0.04公斤、苯甲酸钠0.04公斤、维生素B2 0.02公斤,混匀后,通过均质机在15MPa的压力下均质,灭菌灌装即可得成品。
实施例2:
A、原料加工:将麸皮14公斤磨细,过50目筛,备用;
B、将A步骤所得麸粉,加水调匀,使麸皮浓度为15%,加入1.0%的络合镁铝硅酸盐,加入柠檬酸使该混合液pH值保持在5.5之间,升温至95℃,连续加热55分钟,冷却备用;
C、将B步骤所得混合液加入蜂蜜12公斤、葡萄糖14公斤、甜味素0.3公斤、山梨酸钾0.06公斤、苯甲酸钠0.06公斤、维生素B2 0.03公斤,混匀后,通过均质机在35MPa的压力下均质,灭菌灌装即可得成品。
实施例3:
A、原料加工:将麸皮12公斤磨细,过50目筛,备用;
B、将A步骤所得麸粉,加水调匀,使麸皮浓度为10%,加入0.5%的络合镁铝硅酸盐,加入柠檬酸使该混合液pH值保持在4.5之间,升温至90℃,连续加热40分钟,冷却备用;
C、将B步骤所得混合液加入蜂蜜11公斤、葡萄糖12公斤、甜味素0.25公斤、山梨酸钾0.05公斤、苯甲酸钠0.05公斤、维生素B2 0.025公斤,混匀后,通过均质机在25MPa的压力下均质,灭菌灌装即可得成品。。

1. 一种麸皮饮料,其特征在于,所述麸皮饮料的原料配比为:麸皮11-14、蜂蜜10-12、葡萄糖10-14、甜味素0.2-0.3、柠檬酸0.2-0.3、山梨酸钾0.04-0.06、苯甲酸钠0.04-0.06、维生素B2 0.02-0.03、络合镁铝硅酸盐0.02-0.03、水68.5-59.2,以上原料均以重量份计。
2. 如权利要求1所述的一种麸皮饮料,其特征在于,所述麸皮饮料的加工工艺为:
A、原料加工:将麸皮磨细,过50目筛,备用;
B、将A步骤所得麸粉,加水调匀,使麸皮浓度为5-15%,加入0.1-1.0%的络合镁铝硅酸盐,加入柠檬酸使该混合液pH值保持在3.5-5.5之间,升温至85-95℃,连续加热25-55分钟,冷却备用;
C、将B步骤所得混合液加入蜂蜜10-12重量份、葡萄糖10-14重量份、甜味素0.2-0.3重量份、山梨酸钾0.04-0.06重量份、苯甲酸钠0.04-0.06重量份、维生素B2 0.02-0.03重量份,混匀后,通过压力均质,灭菌灌装即可得成品。
3. 如权利要求2所述的麸皮饮料加工工艺,其特征在于,所述的C步骤中压力均质是指用均质机在15-35MPa的压力下均质。
