本发明涉及一种杜仲养生挂面及其制备方法,属于食品加工技术领域。
背景技术
挂面又称卷面、筒子面,在中国已有2000多年的历史,其主要制作过程是:将小麦和各种辅料放入和面机中充分拌和,静置熟化后,将散碎的面团通过压片、切条,烘干,切断,包装。
目前,人们食用的挂面均以面粉为主,由于加工精度较高,面粉中很多营养物质流失,导致挂面中的营养成分含量极低,随着人们生活水平的提高,要求挂面向主食型、风味型、营养型、保健型等共同发展,满足市场的需求。
发明内容
本发明的目的在于提供一种杜仲养生挂面及其制备方法。
本发明采用的技术方案如下:
一种杜仲养生挂面,是由下述重量份的原料制成:
面粉70-90、土豆淀粉6-8、石耳4-6、杜仲雄花2-3、普洱茶3-6、冬瓜籽粉4-6、黑米5-10、黑豆5-10、甜菊叶2-4、千针万线草2-3、鸡骨草1-3、糯稻须根1-3、苹果花2-3、营养添加剂8-10、水适量;
所述的营养添加剂由下述重量份的原料制成:灵芝孢子4-6、红景天5-8、丹参4-6、海参肽粉2-4、全脂羊乳粉60-100;
所述的营养添加剂的的制备方法为:将洗净烘干灵芝孢子,用细胞破壁微粉机破壁粉碎,加水煮沸3-8分钟再喷雾干燥,得破壁灵芝孢子粉,将红景天、丹参合并破碎至40-60目,加水煎煮,过滤去渣,滤液喷雾干燥,得粉体,与破壁灵芝孢子粉及其他剩余原料混合,即得。
所述的杜仲养生挂面的制备方法,包括以下步骤:
(1)、将杜仲雄花、普洱茶分别破碎至40-60目合并,加10-15倍水煎煮至沸5-10分钟,过滤去渣,得滤液,加入洗净黑米、黑豆混匀,蒸煮至熟香,冷却烘干,研磨成粉,得黑米粉;
(2)、将石耳烘干研磨成粉,与冬瓜籽粉混合均匀,炒制熟香,得石耳粉;
(3)、将甜菊叶、千针万线草、鸡骨草、糯稻须根、苹果花合并,加8-10倍水煎煮,过滤去渣,得中药液;
(4)、将石耳粉、黑米粉、与其他剩余原料混合均匀,加入中药液进行和面,得到混合均匀面团,再经常规方法熟化、滚压压片、切条、烘干、切断、包装即得。
本发明中石耳为地衣植物门植物,属于腐生性中温型真菌,含有高蛋白和多种微量元素,是营养价值较高的滋补食品;千针万线草是石竹科植物,有健牌,养肝,益肾之功效。
海参肽粉是采用生物酶解技术,把纯净的野生海参通过生物酶水解后,变成全部可溶于水的活性成分,经低温干燥后,再进行超微粉碎,制成“海参肽粉”(或酶解海参粉)。制成品更有利于海参活性成分的吸收和利用,产品功效比其他的海参粉更好。

所述的营养添加剂由下述重量(千克)的原料制成:灵芝孢子6、红景天6、丹参6、海参肽粉3、全脂羊乳粉100;
所述的营养添加剂的的制备方法为:将洗净烘干灵芝孢子,用细胞破壁微粉机破壁粉碎,加水煮沸6分钟再喷雾干燥,得破壁灵芝孢子粉,将红景天、丹参合并破碎至60目,加水煎煮,过滤去渣,滤液喷雾干燥,得粉体,与破壁灵芝孢子粉及其他剩余原料混合,即得。
所述的杜仲养生挂面的制备方法,包括以下步骤:
(1)、将杜仲雄花、普洱茶分别破碎至60目合并,加15倍水煎煮至沸10分钟,过滤去渣,得滤液,加入洗净黑米、黑豆混匀,蒸煮至熟香,冷却烘干,研磨成粉,得黑米粉;
(2)、将石耳烘干研磨成粉,与冬瓜籽粉混合均匀,炒制熟香,得石耳粉;
(3)、将甜菊叶、千针万线草、鸡骨草、糯稻须根、苹果花合并,加10倍水煎煮,过滤去渣,得中药液;
(4)、将石耳粉、黑米粉、与其他剩余原料混合均匀,加入中药液进行和面,得到混合均匀面团,再经常规方法熟化、滚压压片、切条、烘干、切断、包装即得。

1.一种杜仲养生挂面,其特征在于是由下述重量份的原料制成:
面粉70-90、土豆淀粉6-8、石耳4-6、杜仲雄花2-3、普洱茶3-6、冬瓜籽粉4-6、黑米5-10、黑豆5-10、甜菊叶2-4、千针万线草2-3、鸡骨草1-3、糯稻须根1-3、苹果花2-3、营养添加剂8-10、水适量;
制备方法为:(1)、将杜仲雄花、普洱茶分别破碎至40-60目合并,加10-15倍水煎煮至沸5-10分钟,过滤去渣,得滤液,加入洗净黑米、黑豆混匀,蒸煮至熟香,冷却烘干,研磨成粉,得黑米粉;
(2)、将石耳烘干研磨成粉,与冬瓜籽粉混合均匀,炒制熟香,得石耳粉;
(3)、将甜菊叶、千针万线草、鸡骨草、糯稻须根、苹果花合并,加8-10倍水煎煮,过滤去渣,得中药液;
