本发明涉及一种鸡肉营养挂面及其制备方法,属于食品加工技术领域。
背景技术
挂面又称卷面、筒子面,在中国已有2000多年的历史,其主要制作过程是 :将小麦和各种辅料放入和面机中充分拌和,静置熟化后,将散碎的面团通过压片、切条,烘干,切断,包装。
目前,人们食用的挂面均以面粉为主,由于加工精度较高,面粉中很多营养物质流失,导致挂面中的营养成分含量极低,随着人们生活水平的提高,要求挂面向主食型、风味型、营养型、保健型等共同发展,满足市场的需求。
发明内容
本发明的目的在于提供一种鸡肉营养挂面及其制备方法。
本发明采用的技术方案如下:
一种鸡肉营养挂面,是由下述重量份的原料制成:
面粉80-100、鸡肉粉6-9、竹菇5-8、荞麦4-6、燕麦4-6、柑皮粉4-6、红薯粉3-6、艾草2-3、肉桂2-3、枇杷花1-2、槐米2-3、桔梗1-2、板栗壳2-3、木芙蓉花2-3、营养添加剂6-10、水适量;
所述的营养添加剂由下述重量份的原料制成:灵芝孢子4-6、红景天5-8、丹参4-6、海参肽粉2-4、全脂羊乳粉60-100;
所述的营养添加剂的的制备方法为:将洗净烘干灵芝孢子,用细胞破壁微粉机破壁粉碎,加水煮沸3-8分钟再喷雾干燥,得破壁灵芝孢子粉,将红景天、丹参合并破碎至40-60目,加水煎煮,过滤去渣,滤液喷雾干燥,得粉体,与破壁灵芝孢子粉及其他剩余原料混合,即得。
所述的鸡肉营养挂面的制备方法,包括以下步骤:
(1)、将艾草、肉桂、板栗壳、木芙蓉花等中药原料加水煎煮,滤液超滤,得煎煮液;
(2)、将荞麦、燕麦洗净除杂,加入煎煮液浸泡3-5小时,加热煮熟,摊晾晒干后,研磨成粉,得麦粉;
(3)、将竹菇洗净蒸熟,烘干研磨成粉,与柑皮粉、红薯粉等混合,文火炒制熟香,得熟香粉;
(4)、将麦粉、熟香粉与其他剩余原料混合均匀,加适量水揉拌和面,得干湿均匀面团,再经常规方法熟化、滚压压片、切条、烘干、切断、包装即可。
本发明中桔梗,别名包袱花、铃铛花、僧帽花,为桔梗科桔梗属植物;槐米是为豆科植物槐的干燥花蕾及花。
海参肽粉是采用生物酶解技术,把纯净的野生海参通过生物酶水解后,变成全部可溶于水的活性成分,经低温干燥后,再进行超微粉碎,制成“海参肽粉”(或酶解海参粉)。制成品更有利于海参活性成分的吸收和利用,产品功效比其他的海参粉更好。

所述的营养添加剂的的制备方法为:将洗净烘干灵芝孢子,用细胞破壁微粉机破壁粉碎,加水煮沸3分钟再喷雾干燥,得破壁灵芝孢子粉,将红景天、丹参合并破碎至40目,加水煎煮,过滤去渣,滤液喷雾干燥,得粉体,与破壁灵芝孢子粉及其他剩余原料混合,即得。

面粉80-100、鸡肉粉6-9、竹菇5-8、荞麦4-6、燕麦4-6、柑皮粉4-6、红薯粉3-6、艾草2-3、肉桂2-3、枇杷花1-2、槐米2-3、桔梗1-2、板栗壳2-3、木芙蓉花2-3、营养添加剂6-10、水适量;
所述的营养添加剂由下述重量份的原料制成:灵芝孢子4-6、红景天5-8、丹参4-6、海参肽粉2-4、全脂羊乳粉60-100;
所述的营养添加剂的的制备方法为:将洗净烘干灵芝孢子,用细胞破壁微粉机破壁粉碎,加水煮沸3-8分钟再喷雾干燥,得破壁灵芝孢子粉,将红景天、丹参合并破碎至40-60目,加水煎煮,过滤去渣,滤液喷雾干燥,得粉体,与破壁灵芝孢子粉及其他剩余原料混合,即得。
2.一种如权利要求1所述的鸡肉营养挂面的制备方法,其特征在于包括以下步骤:
(1)、将艾草、肉桂、板栗壳、木芙蓉花等中药原料加水煎煮,滤液超滤,得煎煮液;
