Abstract
一种水包油型β-胡萝卜素的制作工艺,本发明主要是经复合乳化剂:吐温类、司盘类和亲水性胶体,以一定的比例和β-胡萝卜素的油溶液及水进行乳化,可得乳化粒径小于1um的稳定的乳状液,然后加入β-环状糊精或蔗糖作防止β-胡萝卜素氧化的保护剂,上述乳状液再经造立干燥,即或得含一定量的β-胡萝卜素的水包油颗粒。
Description
本发明是一种生产水包油型β-胡萝卜素固体颗粒的方法。
β-胡萝卜素是一种维生素A源,在医药界和饮食界具有广泛的用途,β-胡萝卜素是难溶于水的,而且其色素很不稳定,见光易分解,这给β-胡萝卜素的使用带来诸多不便。在此发明以前,水溶性β-胡萝卜素制作工艺复杂,制作程序要求严格,需人为添加化学合成的抗氧化剂。
本发明的目的是为食品业和医药业提供一种以食用油乳化液为基质的高稳定性的β-胡萝卜素的水溶性干粉,其制作工艺简单,无需添加专一的抗氧化剂,产品稳定性好,能抗紫外照射,乳化粒径小于1um。
本发明的方法为将一定含量的β-胡萝卜素油溶液,加入HLB较低的乳化剂1,同时加入水溶性的胶体和HLB较高的乳化剂2及水,其比例为油∶乳化剂1∶胶∶乳化剂2∶水=20-25∶3-8∶20-30∶5-8∶50-150和40-50份糖。将其混合物用乳化机械充分乳化10-15分钟,乳化过程可以是20℃-100℃,然后将上述乳状液加入保护剂和分散剂,充分混匀后其软材经造粒机造粒成形、干燥,即可制成高稳定性的含β-胡萝卜素的水包油型颗粒。
上述的乳化剂1可以是食品工业中常用的亲油性乳化剂,如分子蒸馏单甘酯、司盘80、司盘60、月桂酸丙二醇酯。
上述的乳化剂2为食品工业中常用的亲水性乳化剂,如乳化剂OP、吐温80、吐温20、蔗糖脂肪酸酯类。
上述的水溶性胶体可以为羧甲基纤维素钠(简称:CMC-Na)、海藻胶(或称藻朊酸钠)、黄芪胶、阿拉伯树胶等植物多糖胶。
本发明所涉及的生产工艺为将β-胡萝卜素的油溶液、乳化剂、亲水胶体、水按上述比例混合,用高压匀浆泵或胶体磨充分乳化,再用兼作保护剂和分散剂的β-环糊精或糖与上述乳状胶体充分混匀,所得软材,经制颗粒的筛网筛过,造粒,经烘房50-60℃干燥,即得含β-胡萝卜素的水溶性小颗粒,此颗粒能在常温下溶于水,其稳定性好,乳化粒径小于1um。
操作例1:CMC-Na20份、加吐温805份、加水150份、加热至60-80℃溶解,置于乳匀机上搅拌均匀,后加20份含20%β-胡萝卜素的油溶液,同时加8份司盘80,上述混合液经市售DJM立式胶体磨充分乳化,再用上述乳状液以1∶1与市售蔗糖混合,即可得含5%β-胡萝卜素的水包油型颗粒。
操作例2,阿拉伯胶20份加吐温205份,加水50份,溶解混匀后加20份含2.78%的β-胡萝卜素油溶液,5份司盘20,经市售GYB高压匀浆泵充分乳化,所得乳化液与25份β-环糊精,混合,再经造粒、干燥,即可得0.5-0.8%的β-胡萝卜素的水包油型固体颗粒。
操作例3,黄芪胶20份,吐温605份,水100份,分子蒸馏单甘酯8份,25-30%β-胡萝卜素的油溶液20份,蔗糖30份充分混匀,经高压匀浆泵充分乳化。所得乳状胶体经造粒、干燥,即可得5-7% 8-胡萝卜素的水溶性干粉。
Claims (7)
1.一种生产水包油型β-胡萝卜素的制作工艺,乳状液配方为20-25份β-胡萝卜素的油溶液,3-8份HLB较高的亲水性乳化剂,20-30份水溶性胶体,5-8份HLB较低的亲油性乳化剂,50-150份水,40-50份糖,将上述组分按比例混合,置20℃-100℃经乳化机械充分乳化,然后加入保护剂和分散剂,再经干燥、造粒即可得含β-胡萝卜素0.5-10%的水包油型固体颗粒。
2.根据权利要求1的方法,β-胡萝卜素的油溶液选自市售的或自配的各种含β-胡萝卜素的油溶液或油悬液。
3.根据权利要求1的方法,其HLB较低的亲油性乳化剂选自司盘80,司盘60,司盘83,分子蒸馏单甘酯,月桂酸丙二醇酯。
4.根据权利要求1的方法,其HLB较高的亲水性乳化剂,选自吐温20、乳化剂OP、吐温80、蔗糖脂肪酸酯。
5.根据权利要求1的方法,水溶性胶体选自羧甲基纤维素钠、海藻胶、黄芪胶、阿拉伯树胶。
6.根据权利要求1的方法,乳化机械选自胶体磨、高压匀浆泵、高速搅拌机。
7.根据权利要求1的方法,作保护剂和分散剂的选自β-环糊精、蔗糖或其它单糖或双糖类。
