Abstract

技术领域
本发明涉及一种用于冷冻甜食产品的切割或压印(emboss)工具,其包括至少两个元件,每个元件包括具有与待被切割或压印的产品的外部轮廓一致的内部轮廓的空隙。所述元件中的至少一者包括至少一个刀具或压印装置,所述刀具或压印装置具有沿着所述空隙的内部轮廓延伸的刀刃或压印表面。该工具可用于在冷冻甜食产品的表面内切割出一条或多条切割线或切割线的图案,特别是用于具有可剥离凝胶涂层的产品。该工具还可用于利用压印浮凸图案或图形装饰冷冻甜食产品的表面。
背景技术
完全由冷冻凝胶构成或者包含冷冻凝胶的冷冻甜食产品是已知的并且特别地受儿童喜爱。
包含由冷冻甜食构成的芯部(所述芯部至少部分被冷冻柔韧可食用凝胶层覆盖)的冷冻甜食产品的一个实例是雀巢(泰国)销售的冷冻甜食棒“EskimoMonkey(爱斯基摩猴子)”。该产品包括被冷冻柔韧可食用凝胶层覆盖的冰淇淋芯部。该凝胶层可以被消费者剥离并且单独食用。因为凝胶对液化具有抵抗力,所以即使在解冻状态,被消费者剥离的产品部分仍保持完整而没有融化和滴落。为了使剥离便利,在凝胶层上有四条纵向切割线,以便可以剥下四个剥离薄片。由此获得了香蕉型的剥离效果。
从以上可清楚地看出,用于构成可剥离凝胶层的凝胶的重要特性是它即使在完全解冻后也能抵抗融化。通过向混合配料中添加诸如角豆胶、卡拉胶、海藻酸钠或果胶的稳定剂来获得该特性。EP1339290A2描述了这样一种果冻或凝胶以及其在复合冷冻甜食产品中的使用。该文献的内容通过引用结合入本文。
到目前为止只存在容许非常简单的剥离效果的产品,也就是使用纵向切割线以便薄片可以被剥落。提供仍然包含相似“娱乐效果”的不同的产品概念的任何尝试都失败了。
发明目的
因此,本发明的目的是提供一种工具,该工具容许制造带给消费者不同体验的新颖且吸引人的冷冻甜食产品。
发明内容
该目的通过根据权利要求1的切割或压印工具实现。
根据本发明,用于冷冻甜食产品的切割或压印工具包括至少两个元件,例如两个半件/半部,每个元件包括具有与待被切割或压印的产品的外部轮廓一致的内部轮廓的空隙。所述元件中的至少一者包括至少一个刀具或压印装置,所述刀具或压印装置具有沿着所述空隙的内部轮廓延伸的刀刃或压印表面。
该切割工具的使用使得可以非常简单地将几乎任何期望的切割线图案切割进冷冻甜食产品的表面内,例如切割进外部凝胶层或另一类型的涂层内。
在切割或压印过程中,产品被保持在固定位置,例如,如果产品包括棒则被它的棒保持。切割工具的元件然后围绕产品合拢,一旦工具合拢,元件的空隙的内部轮廓就与产品的外部轮廓相符合。沿着空隙的内部轮廓延伸的刀具然后被推进外部层产品内,例如凝胶层或另一涂层内,并且因此切割出希望的切割线。如果是使用压印装置而非刀具,则压印装置被推进产品的外部层中以便在外表面上印制出图案或图形。之后,切割工具被打开,即元件被分开并与产品分离,然后此时已具有希望的切割线或浮凸装饰的产品可以被进一步处理或包装。
术语“压印装置”在本文中应理解为能够将期望的图形或图案压制或印制进冷冻甜食产品的外部层内而不会实际切割穿过外部层的任何突起。
产品和切割刀具都不需要被旋转,结果便不需要驱动机构和相关的控制装置,并且没有扭转力被施加在棒上或者在产品不包括棒的情况下被施加在保持产品的机构上。
可以为几乎任何产品形状设计适当的切割工具,特别但不限于圆柱形的或对称形状的产品。
尽管对于具有简单形状的产品和相对简单的切割图案而言,由诸如两个半件的两个元件组成的切割工具可能是优选的解决方案,但是更复杂的产品形状可能需要使用三个或更多个在切割过程中围绕产品合拢的元件。
根据本发明的优选实施例,工具的每个元件包括沿着所述空隙的内部轮廓平行地延伸的一组刀具,这些刀具组共同形成在冷冻甜食产品的表面上成螺旋形延伸的切割线。当被切割进由可剥离的冷冻凝胶组成的外部层内时,这种螺旋切割线容许获得一种带有能够以螺旋状物被剥离的外部凝胶层的有趣的产品。
优选地,切割线相对于垂直于螺旋状物的对称轴线延伸的平面具有介于3°和60°之间的倾角,优选地介于5°和25°之间。在产品包含棒的情况下,该对称轴线对应于插入的棒的轴线。
这种螺旋切割线可以是直的以形成简单的螺旋状物或者是波纹形的(ondulated)。可以有若干条这样的切割线,例如成螺旋形延伸、形成双螺旋线的两条切割线。
对于在凝胶层上成螺旋形延伸的切割线的倾角,由两个半件构成的工具通常优选地用于诸如直到20°的较小角度,然而对于20°以上的角度,优选地可以使用由三个或更多个元件组成的工具以获得希望的切割线。
根据本发明的另一优选实施例,工具的至少一个元件包括限定形成窗口状切口的切割线的至少一个刀具或成组刀具。该切口可具有几乎任何形状,例如矩形、圆形、椭圆形、心形或星形。如果产品的外部层由可剥离的凝胶涂层构成,那么消费者可剥离覆盖由切割线界定的切口的涂层,从而各段凝胶涂层可被剥离。代替剥离切口,也可以剥离切口形状周围的涂层,从而仅保留一个或几个具有特定形状的贴纸状的涂层。剥离既可以由消费者完成,也可以在工厂中已经完成,从而带有由冰淇淋芯部上的可剥离凝胶涂层制成的形状的产品可被出售。
根据本发明的另一优选实施例,工具的每个元件包括两组平行刀具,第一组刀具基本上垂直于第二组刀具延伸,从而形成在产品的表面上延伸的切割线网格。这种刀具布置结构为产品提供了有趣的和吸引人的外观,消费者可以玩弄以各种方式被切割成区段的涂层。

应指出,当工具被用于在可剥离凝胶涂层中切割出切割线或切割线图案时,刀具的刀刃应当充分深,并且工具的元件的空隙应当适合于产品以使切割线穿过凝胶层直到芯部充分延伸。切割的深度通常对应于外壳层的厚度或者比其稍大。

具体实施方式
图1和2示出了冷冻甜食产品,其包括完全被冷冻柔韧可食用凝胶层14覆盖的柱形冰淇淋芯部10(参照图2)。切割线16在凝胶层14上成螺旋形延伸并且容许以连续螺旋状物18的形式(参照图2)剥离凝胶层14。
产品的生产如下所述:
对于凝胶层,根据下述配方制备混合物:
在85℃下对混合物巴氏消毒30秒,并且在50℃的混合物温度下将混合物填充进模具。
如上已经提到,也可以使用包含聚阴离子凝胶化水状胶体或任何其它凝胶剂,凝胶化控制剂或抑制剂的配方。特别是可以使用EP1339290B1或US6548097B1中描述的其中一种配方。在这种情况下,混合物在制备完成后可以被冷却并在冷却状态下储存。由于添加了凝胶化控制剂或抑制剂,混合物可以以这种状态保存相当长的时间而没有任何退化。使用前,重新加热混合物,添加引发凝胶化的添加剂,接着采用与处理不含有凝胶化控制剂或抑制剂的混合物相同的方式处理该混合物。
在冷盐水浴中冷却容纳凝胶混合物的模具,直到形成大约3mm到5mm厚度的冷冻层。接着,将仍旧是液体的剩余混合物吸出模具。由此在模具中获得可食用柔韧冷冻凝胶壳。
接着,用标准香草冰淇淋混合物填充该壳。在产品中插入木制棒并且将产品完全冷冻。
一旦被冷冻,产品就要脱模。为了脱模,通过喷洒到模具外部的暖液体加热模具。这容许产品的表面层轻微变热并软化以方便脱模。软化还有助于执行随后的切割步骤。
在随后的步骤中,使用如图3和4所示的切割工具在凝胶层14中切割出切割线。切割工具20由两个半件20a、20b组成,每个半件具有半圆柱形状的空隙22a、22b。空隙通过一组刀具24、24’、24’’被限制在两个半件20a、20b的每一个中。在本例中,四个基本平行的刀具24、24’、24’’沿着空隙基本平行地布置。
为了在凝胶层中切割螺旋线,将切割工具20的两个半件20a、20b放置于产品的两侧(参照图4)并且朝向产品推进直到来自两个半件的刀具24、24’、24’’彼此接触。来自两个半件的刀具24、24’、24’’共同形成在产品的表面被压入凝胶层的螺旋线。工具20和刀具24、24’、24’’的尺寸选择为使得凝胶层被完全切穿,即切割线16具有至少为3mm的深度。
接着,打开切割工具20,即分开两个半件20a、20b。
如图2所示,当产品被容许轻微变热时,位于表面的凝胶层14能够以螺旋的形式从产品芯部上剥离。

Claims (5)
