本发明是提供了一种富锌大米的生产方法,属于大米加工方法。具体步骤如下:膨化→喷淋、搅拌→干燥→包装。1、将市场上加工好的大米通过湿热膨化器,使大米米粒整体膨化出许多微孔;2、将富锌营养液喷淋到膨化微孔内;3、干燥喷淋后的大米;4、根据需要定量分装既得本发明富锌大米的成品。其中富锌营养液是将所有锌元素有机液与预糊淀粉、明胶液、赖氨酸、苏氨酸按设计剂量混合均匀所得。本发明提供了一种富锌大米生产的新方法。

本发明涉及一种大米的生产方法,具体涉及一种富锌大米的生产方法。
背景技术
本发明涉及的是一种富锌大米的生产方法,特别涉及是在大米颗粒整体膨化有许多微孔,微孔内一次性喷淋了由富锌有机液与预糊淀粉、明胶、赖氨酸、苏氨酸配制好的富锌营养液,干燥后富锌营养液附在微孔内,与其他工艺比较更简便、成本低,便于推广生产。
大米蛋白质中氨基酸比例对人身体蛋白体系是不完整的,长期食用,由于缺少人体必需的氨基酸,容易造成人体的免疫下降,在添加了赖氨酸、苏氨酸后,大米的营养价值提高,食用后可有效的提高人体的健康水平。
国外在上世纪八九十年代已经开始对大米进行营养强化,日本、美国等发达国家已有相关产品面市并深受广大消费者喜爱。但国内相关大米改良的研究与生产公开文献报道儿乎没有,而且目前面市的营养大米大都通过在大米种植过程中施加特定的肥料米提高大米的矿物质含量,这种措施由于大米生长特性而见效甚微,例如富锌大米。本发明运用食品营养学的理论和糊化技术制成的富锌大米,具有良好的稳定性和营养性。
锌是人体内必需的微量元素之一,它在维持人体健康方面起关键作用。锌对人体十分有利的微量元素,不应该被忽视。锌元素在人体具有很多重要的生理功能:促进人体的生长发育;维持人体正常食欲;增强人体免疫力;促进伤口和创伤的愈合;影响维生素A的代谢和正常视觉;维持男性正常的生精功能;调节节影响大脑生理功能的各种酶及受体。基于上述的生理功能,人体不能缺锌,否则会有很多的不适症状。儿童缺锌可能会导致味觉障碍、皮肤疾患、生长发育不良、免疫力下降、智力发育落后、肝脾肿大;孕妇缺锌可能会导致妊娠反应加重、宫内胎儿发育迟缓、分娩合并症增多、肝脾肿大;成年男性缺锌可能会导致男性不育、肝脾肿大。
发明内容
鉴于以上原因,本发明的目的是为了提供一种富锌大米的加工方法。
本发明的目的是这样米实现的:
本发明富锌大米包括位于大米上的膨化微孔,填充于微孔中的配制好的富锌营养液。
上述的富锌大米的加工方法,其步骤如下:
(1)采用合格大米;
(2)膨化:大米输送到湿热膨化器进行处理,在通过湿热膨化器的同时,受压力为5.1-6.0kg/m2的净化蒸汽喷射处理25-30秒钟。快速打开预置好排气量的阀门,膨化器内大米膨化成有微孔的完整颗粒大米,与糊化前外型尺寸上肉眼看不到的变化;在膨化工序,加压压力与膨化微孔的空隙有关,加压压力越大,膨化效果更好,但生产成本提高;温度过高,大米外观色泽变化明显,温度过低,临界温度不够膨化不发生,压力作用明显降低或消失;
(3)富锌营养液由下述步骤制得:
a、将麦芽汁制成酵母培养液,然后在培养液中加入硫酸锌使每100kg培养液中锌元素含量分别为:1500-2000mg;
b、在上述培养液中接种安琪酵母;
c、在30-38℃培养120-160小时;
d、经充分匀浆得到富锌营养液。
(4)将糊化好的大米输送到喷淋器,用高压喷枪均匀喷淋富锌营养液,喷淋器中的搅拌启动,促进富锌营养液快速喷淋到大米微孔内部中;
(5)干燥内部喷淋了富锌营养液的富锌大米,含水量≤11%;
(6)将上述干燥好的富锌大米根据需要定量分装既得本发明的成品。
上述胶化工序充入氮气可保护大米与营养素不被氧化,保护了食品原有风味和营养素的品质。使用搅拌是为了快速地更好地将富锌营养液填充到大米微孔内部中。
本发明工艺既保证了大米颗粒的完整性又添加了多种营养成份;加工成的强化大米抗氧化、抗淘洗;生产工艺简便,成本较已有的强化大米更低。
具体实施方式
本发明富锌大米加工方法,其步骤如下:
(1)采用合格大米;
(2)膨化:大米输送到湿热膨化器进行处理,在通过湿热膨化器的同时,受压力为5.1-6.0kg/m2的净化蒸汽喷射处理25-30秒钟。快速打开预置好排气量的阀门,膨化器内大米膨化成有微孔的完整颗粒大米,与糊化前外型尺寸上肉眼看不到的变化;在嘭化工序,加压压力与膨化微孔的空隙有关,加压压力越大,膨化效果更好,但生产成本提高;温度过高,大米外观色泽变化明显,温度过低,临界温度不够膨化不发生,压力作用明显降低或消失;

1.一种富锌大米的生产方法,其特征在于加工方法如下:1、将市场上加工好的大米通过设备湿热膨化器,使大米米粒整体膨化出许多微孔;2、将富锌营养液喷淋到膨化微孔内;3、干燥喷淋后的大米;4、根据需要定量分装既得本发明富锌大米的成品。
2.根据权利要求1所述的一种富锌大米的生产方法,其特征在于大米是经过膨化后,在大米表层与内部有许多微孔。
3.根据权利要求1所述的一种富锌大米的生产方法,其特征是膨化微孔内喷淋了由富锌有机液与预糊淀粉、明胶、赖氨酸、苏氨酸配制好的富锌营养液。
4.根据权利要求1所述的一种富锌大米的生产方法,其特征是将上述富锌营养液与大米按1-5%:99-95%比例进行喷淋制成出锌大米。
5.根据权利要求1所述的一种富锌大米的生产方法,其特征是将上述富锌有机液为富锌酵母经匀浆后的产物,锌含量为:150mg/kg。
6.根据权利要求1所述的一种富锌大米的生产方法,其步骤如下:
(1)采用合格大米;
