本发明属于食品加工技术领域,涉及一种芝麻糊,尤其涉及一种海味富硒芝麻糊及其制备方法。
背景技术
芝麻糊是以芝麻为原料调制而成,是一种常见的食品,广受人们欢迎。目前,市场上销售的芝麻糊口味单一,且不具功能性保健作用。
发明内容
本发明的目的是提供一种海味富硒芝麻糊及其制备方法,本发明具香郁可口,营养健康的特点。
本发明所采用的技术方案是:
    一种海味富硒芝麻糊,其特征在于由以下重量份的原料制成:
芝麻150-180、麦芽糊精10-12、植脂末0.5-0.8、纳米硒1-1.2、海藻酸钠0.7-1、虾肉20-25、鱼粉3-4、蟹黄7-8、蜂蜜水18-20、杜仲3-4、佛手2-3、桑芽1-2、岗梅根4-5、岗梅叶2-4、蛇舌草1-2、镜面草4-4.5、栝楼子1-2、蛋白酶0.2-0.3、葡萄籽油3-4、葱末1-2、蒜泥0.5-1。
    所述的海味富硒芝麻糊的制备方法,其特征在于包括以下步骤:
   (1)将杜仲、佛手、桑芽、岗梅根、岗梅叶、蛇舌草、镜面草、栝楼子加4-5倍水煎煮40-60分钟,过滤除渣所得滤液经超滤得精制液;
   (2)将虾肉捣成泥状,加入一倍的水加热到45-50℃,加入蛋白酶,恒温静置3-4小时;
   (3)将海藻酸钠中加入4-5倍的水,搅拌至溶解;在锅中倒入葡萄籽油,预热后加入葱末、蒜泥煸炒至香,加入步骤(2)所得物料、蟹黄、鱼粉,翻炒4-5分钟,加入一倍的水,大火煮沸,倒入含有海藻酸钠的水溶液,搅拌加热至黏稠状,得到海鲜酱;
   (4)将芝麻洗净,均匀喷洒蜂蜜水,晒干后粉碎,加入精制液、海鲜酱和剩余物料,在60-65摄氏度下焖制20-30分钟,再经冷冻干燥、磨粉,即得。
本发明的有益效果为:
     本发明中添加了纳米硒、虾肉、蟹黄等,使得本发明硒含量大大提高,具有抗癌、抗氧化的作用,此外,本发明含有多种中草药成分,可达到补肝肾、强筋骨、降血压、舒肝健脾、清热解毒、利尿除湿的功效,长期食用可达到强身健体的功效。
具体实施方式
    一种海味富硒芝麻糊,其特征在于由以下重量份(公斤)的原料制成:
芝麻150、麦芽糊精12、植脂末0.8、纳米硒1.2、海藻酸钠0.、虾肉25、鱼粉4、蟹黄7、蜂蜜水20、杜仲4、佛手2、桑芽2、岗梅根5、岗梅叶4、蛇舌草1、镜面草4.5、栝楼子2、蛋白酶0.2、葡萄籽油4、葱末1、蒜泥1。
    所述的海味富硒芝麻糊的制备方法,包括以下步骤:
   (1)将杜仲、佛手、桑芽、岗梅根、岗梅叶、蛇舌草、镜面草、栝楼子加4-5倍水煎煮40-60分钟,过滤除渣所得滤液经超滤得精制液;
   (2)将虾肉捣成泥状,加入一倍的水加热到45-50℃,加入蛋白酶,恒温静置3-4小时;

1.一种海味富硒芝麻糊,其特征在于由以下重量份的原料制成: 
芝麻150-180、麦芽糊精10-12、植脂末0.5-0.8、纳米硒1-1.2、海藻酸钠0.7-1、虾肉20-25、鱼粉3-4、蟹黄7-8、蜂蜜水18-20、杜仲3-4、佛手2-3、桑芽1-2、岗梅根4-5、岗梅叶2-4、蛇舌草1-2、镜面草4-4.5、栝楼子1-2、蛋白酶0.2-0.3、葡萄籽油3-4、葱末1-2、蒜泥0.5-1。 
2.根据权利要求1所述的海味富硒芝麻糊的制备方法,其特征在于包括以下步骤: 
(1)将杜仲、佛手、桑芽、岗梅根、岗梅叶、蛇舌草、镜面草、栝楼子加4-5倍水煎煮40-60分钟,过滤除渣所得滤液经超滤得精制液; 
(2)将虾肉捣成泥状,加入一倍的水加热到45-50℃,加入蛋白酶,恒温静置3-4小时; 
(3)将海藻酸钠中加入4-5倍的水,搅拌至溶解;在锅中倒入葡萄籽油,预热后加入葱末、蒜泥煸炒至香,加入步骤(2)所得物料、蟹黄、鱼粉,翻炒4-5分钟,加入一倍的水,大火煮沸,倒入含有海藻酸钠的水溶液,搅拌加热至黏稠状,得到海鲜酱; 
(4)将芝麻洗净,均匀喷洒蜂蜜水,晒干后粉碎,加入精制液、海鲜酱和剩余物料,在60-65摄氏度下焖制20-30分钟,再经冷冻干燥、磨粉,即得。
