Abstract
一种菠萝山竹果酱及其制备方法,其主要是选取新鲜成熟的菠萝和山竹,清洗后去皮,分别将菠萝和山竹切块;选用筛网孔径为5~10mm的打浆机对菠萝果肉进行打浆,得菠萝浆,选用筛网孔径为3~5mm的打浆机对山竹果肉进行打浆,得山竹浆;将菠萝浆和山竹浆按比例调和,且菠萝浆:山竹浆=5-8:4-6(质量比),向上述混合果浆中加入0.1~0.6%(质量比)的柠檬酸和0.01~0.08%(质量比)的抗坏血酸;将该混合果浆于常压下用微波浓缩5~10分钟后,再于胶体磨中研磨4~8分钟,得到果酱。本发明具有制作成本较低,无有毒成分加入且富含菠萝、山竹的营养物质的优点。
Description
技术领域 本发明涉及一种果酱及其制备方法。
背景技术
菠萝(Pineapple),含有大量的果糖,葡萄糖,维生素B、C、磷、柠檬酸和蛋白酶等物质。性平味甘,具有解暑止渴、消食止泻之功, 1891年用鲜菠萝提炼出来的凤梨酵素(凤梨酶,bromelain),已经被用来治疗坏血症,新近研究发现,凤梨酵素对治疗心脏疾病、烧伤、脓疮和溃疡等都有着很好的效果,所以菠萝实为夏令医食兼优的时令佳果。
山竹(Mangosteen),山竹果肉雪白嫩软,味清甜甘香,消火压热,清凉可口,山竹不仅味美,还具有降火的功效,山竹对抑制食欲和降低体重都有良好功效,对心血管系统也有很好的保护作用。
由于菠萝和山竹都盛产于南方,大都是将未成熟的果实通过技术手段催熟运至北方,且在北方的售价较高,所以北方人很少能吃到新鲜成熟的菠萝和山竹。
发明内容 本发明的目的在于提供一种可供人们放心食用的菠萝山竹果酱及其制备方法。
一种菠萝山竹果酱及其制备方法,包括以下步骤:
1、选料:选取新鲜成熟的菠萝和山竹,清洗后去皮,分别将菠萝和山竹切块;
2、打浆:选用筛网孔径为5~10mm 的打浆机对菠萝果肉进行打浆,得菠萝浆,选用筛网孔径为3 ~ 5mm 的打浆机对山竹果肉进行打浆,得山竹浆;
3、配料:将菠萝浆和山竹浆按比例调和,且菠萝浆:山竹浆=5-8:4-6(质量比),向上述混合果浆中加入0.1 ~ 0.6%( 质量比) 的柠檬酸和0.01 ~ 0.08% (质量比) 的抗坏血酸;
4、微波浓缩:将该混合果浆于常压下用微波浓缩5 ~ 10 分钟后,再于胶体磨中研磨4~ 8 分钟,得到果酱。
本发明与现有技术相比具有如下优点:
1、本发明的菠萝山竹果酱富含菠萝、山竹的营养物质,天然、营养、口感好。
2、制作成本较低,无有毒成分加入,适宜推广使用。
具体实施方式
实施1
选取新鲜成熟的菠萝和山竹,清洗后去皮,分别将菠萝和山竹切块;选用筛网孔径为5mm 的打浆机对菠萝果肉进行打浆,得菠萝浆,选用筛网孔径为3mm 的打浆机对山竹果肉进行打浆,得山竹浆;将菠萝浆和山竹浆按比例调和,且菠萝浆:山竹浆=5:4(质量比),向上述混合果浆中加入0.1%( 质量比) 的柠檬酸和0.08% (质量比) 的抗坏血酸;将该混合果浆于常压下用微波浓缩5分钟后,再于胶体磨中研磨4分钟,得到果酱。
实施2
选取新鲜成熟的菠萝和山竹,清洗后去皮,分别将菠萝和山竹切块;选用筛网孔径为8mm 的打浆机对菠萝果肉进行打浆,得菠萝浆,选用筛网孔径为5mm 的打浆机对山竹果肉进行打浆,得山竹浆;将菠萝浆和山竹浆按比例调和,且菠萝浆:山竹浆=8:5(质量比),向上述混合果浆中加入0.6%( 质量比) 的柠檬酸和0.01% (质量比) 的抗坏血酸;将该混合果浆于常压下用微波浓缩10 分钟后,再于胶体磨中研磨8 分钟,得到果酱。

1.一种菠萝山竹果酱及其制备方法,其特征在于:
(1)、选料:选取新鲜成熟的菠萝和山竹,清洗后去皮,分别将菠萝和山竹切块;
(2)、打浆:选用筛网孔径为5~10mm 的打浆机对菠萝果肉进行打浆,得菠萝浆,选用筛网孔径为3 ~ 5mm 的打浆机对山竹果肉进行打浆,得山竹浆;
(3)、配料:将菠萝浆和山竹浆按比例调和,且菠萝浆:山竹浆=5-8:4-6(质量比),向上述混合果浆中加入0.1 ~ 0.6%( 质量比) 的柠檬酸和0.01 ~ 0.08% (质量比) 的抗坏血酸;
(4)、微波浓缩:将该混合果浆于常压下用微波浓缩5 ~ 10 分钟后,再于胶体磨中研磨4~ 8 分钟,得到果酱。
