本发明属于乳制品生产技术领域,具体涉及一种低乳糖、乳蛋白部分水解的特殊医学婴儿牦牛奶配方奶粉及其制备方法。
背景技术
按照GB25596-2010《食品安全国家标准 特殊医学用途婴儿配方食品通则》的要求,针对患有乳糖不耐症或乳蛋白过敏高风险婴儿而设计的配方,以牦牛奶、水解乳清蛋白、牛奶分离蛋白、麦芽糊精、葡萄糖、白砂糖、奶油和植物油等加入适量的维生素、矿物质或其他营养成分,仅用物理方法生产加工制成的适用于乳糖不耐症和乳蛋白过敏高风险的婴儿食用,其能量和营养成分能够满足0-6个月婴儿的营养需要,这是国家标准对有特殊医学状况的婴儿提供的配方奶粉在营养方面上的基本要求。如果在产品配方中按上述标准只满足必须成分,那只要符合蛋白、脂肪、碳水化合物、维生素物质和矿物质要求即可,既应用水解乳清蛋白、奶油和普通植物油辅以添加维生素和矿物质就能达到标准的基本要求。但是为了更好地满足有特殊医学状况的婴儿的均衡营养及有效吸收利用,针对会因乳糖不耐而产生腹泻、消化不良和因乳蛋白过敏产生湿疹等症状的婴儿,同时为其益智健脑,促进钙和能量的吸收,增加骨骼强度,提高免疫力,再额外添加一些国家规定的可选择性营养成分,如DHA、ARA、肌醇、胆碱、左旋肉碱等。但这些成分的添加可能会对患病期婴儿胃肠道造成刺激,反而不利于婴儿的吸收代谢。
牦牛奶比普通的牛奶更富含营养,富含天然共轭亚油酸、免疫球蛋白和乳铁蛋白。其固形物、蛋白质、有机钙的含量均远远超过普通牛乳,干物质16.67±0.53g/100g,乳脂肪6.90±0.11g/100g,碳水化合物5.00±0.73g/100g,乳蛋白质5.11±0.08g/100g,比黑白花奶牛乳分别高36.98%、106.56%、9.41%和81.85%。牦牛乳中钙的含量为150.00±7.91mg/100 g。比普通牛乳高21.75mg/100g。除维生素B2外,维生素A、C、D、E、B1和B12都高于普通牛乳;必需氨基酸是黑白花牛奶高1.897倍,并且含有人体所需要的18种氨基酸,包括天门冬氨酸ASP、苏氨酸THR、丝氨酸SER、谷氨酸GLU、甘氨酸、GLY、丙氨酸ALA、缬氨酸VAL、蛋氨酸MET、异亮氨酸ILE、亮氨酸LEU、酪氨酸TYR、苯丙氨酸PHE、赖氨酸LYS、组氨酸HIS、精氨酸ARG、脯氨酸PRO、色氨酸TRP、胱氨酸CYS,其中有8种是人体内不能合成的必须氨,比普通牛奶高1.897倍。所含的铁、锌和锰等比一般牛奶高1倍多,且含有一般牛奶所没有的硒元素,喝牦牛奶能提高人体免疫力。含有一般牛奶所没有的硒元素,这对于预防宝宝营养性贫血,提高宝宝的生长智力发育及增加宝宝的免疫力至关重要。大量含有一种普通牛奶没有的“神奇因子”,牦牛奶中发现含有共轭亚油酸,对提高人体免疫力和保健强身有独到的功效,是人类理想的绿色保健食品,可促进人体脑细胞发育,调理气血,促进骨骼生长,是婴幼儿和中老年的有效调补佳品。 含有大量的免疫球蛋白、乳铁蛋白,免疫球蛋白是人体的健康之本,可增强细胞的吞噬能力,调节人体免疫功能,提高人体抗病机能。
牦牛奶深加工方法及其产品的研究开发方面的报道已有不少。中国专利公开的一种“牦牛牛奶的深加工工艺”(CN01142325.0),提供了一种牦牛奶粉的加工方法。但没有见到利用牦牛奶生产配方奶粉方面的相关报道。
发明内容
本发明的目的在于,采用牦牛奶作为一种乳类原料,提供一种新型配方的特殊医学婴儿牦牛奶配方奶粉,以正确合理的配比与其它水解乳蛋白、葡萄糖、白砂糖、奶油、植物油、维生素和矿物质,以及DHA、ARA等特殊营养成分经真空配料、全均质、浓缩蒸发、喷雾干燥加工成的特殊医学婴儿牦牛奶配方奶粉,乳糖含量≤2%,乳蛋白部分水解成小分子蛋白、肽和氨基酸,不仅营养均衡,易吸收,所富含的天然有机成分充足,对胃肠道刺激小,对有特殊医学状况的婴儿健康成长具有重要意义。

为了给婴幼儿提供均衡及更多的营养物质,还添加有:二十二碳六烯酸DHA1~8kg,花生四烯酸ARA2~10 kg,牛磺酸0~700g,左旋肉碱100~500g,氯化胆碱200~1000g,维生素类物质:醋酸视黄酯 50~100g、胆钙化醇30~70g、dl-ɑ-醋酸生育酚40~600g、植物甲萘醌0~2g、盐酸硫胺素5~40g、核黄素0~20g、盐酸吡哆醇4~20g、氰钴胺0~0.5g、烟酸20~100g、叶酸0~5g、D-泛酸钙15~80g、L-抗坏血酸700~3500g、D-生物素0~1g、肌醇0~700g、牛磺酸0~700g、左旋肉碱100~500g和氯化胆碱200~1000g,矿物质:碳酸钙0~8000g、磷酸三钙1000~8000g、硫酸亚铁100~300g、硫酸锌60~230g、硫酸锰1~12g、硫酸铜10~20g、碳酸镁0~3500g、亚硒酸钠0~80g、碘酸钾0~60g、柠檬酸钾100~2000g、氯化钾100~5000g和碳酸镁100~1200g。
各类营养物质的纯度:二十二碳六烯酸DHA为7%,花生四烯酸ARA为10%,醋酸视黄酯为9.85%,胆钙化醇为0.25%,dl-ɑ-醋酸生育酚为50%,植物甲萘醌为≥97%,盐酸硫胺素为≥99%,核黄素为≥98%,盐酸吡哆醇为≥98%,氰钴胺为98%,烟酸为≥99.5%,叶酸为95-102%,D-泛酸钙为97-102%,L-抗坏血酸为≥98%,D-生物素为97.5-100.5%,肌醇为≥98%,牛磺酸为≥98.5%,左旋肉碱为≥98%,氯化胆碱为≥73%,叶黄素为5%;碳酸钙为≥99%,磷酸三钙为≥98%,硫酸亚铁为≥98%,硫酸锌为≥98%,硫酸锰为≥99%,硫酸铜为≥98%,碳酸镁为≥98%,亚硒酸钠为≥1%,碘酸钾为≥10%,柠檬酸钾为≥98%,氯化钾≥98%,碳酸镁≥99%。
本发明的制备方法包括以下步骤:
(1)将经杀菌、净化处理的牦牛奶、纯水经板式换热器预热预热50℃-55℃,吸入真空混料机与混料罐形成闭合循环;
(2)将水解乳清蛋白、牛奶分离蛋白、葡萄糖、白砂糖、麦芽糊精、二十二碳六烯酸DHA和花生四烯酸ARA经筛粉机流入混合机中混合溶解循环,同时将奶油、精炼植物油和溶解好的维生素物质和矿物质泵进入混合机的管路内进行在线混合乳化循环,此配料的浓度应在11~13%之间;
(3)全部溶解混合好的物料进行均质,均质压力14~16Mpa,均质后的物料通过冷却板换将物料降到4℃~6℃;
(4)均质后将物料用泵送入蒸发器进行杀菌浓缩,杀菌温度90~91℃,浓缩后物料浓度在41-44%之间,再经高压泵送入低落温干燥塔进行喷雾干燥并通过静床和振动流化床进行二次干燥成成品粉。
步骤(2)中,在溶解维生素类物质和矿物质时,先溶解矿物质,再溶解维生素类物质。
本发明以牦牛奶和鲜牛奶作为乳类原料,进行合理正确的配比,特别采用牦牛奶中丰富的、天然的共轭亚油酸、氨基酸、维生素、钙、铁、锌等,避免了单独使用普通牛奶时需要补充大量的化工合成的有机和无机营养素,能够使宝宝更好地吸收代谢,减少了对胃肠道的刺激。牦牛奶中的天然共扼亚油酸具有清除自由基,增强机体的抗氧化能力和免疫能力,促进脂肪氧化分解,促进人体蛋白合成对促进生长发育有着重要作用。乳糖含量≤2%,是专为0~12个月乳糖不耐受、腹泻期及腹泻恢复期婴儿配置的特殊膳食类的营养食品。同时使用经过酶水解的乳清蛋白和牛奶分离蛋白,由于高效的蛋白消化率,通过非常好的氨基酸模式,更容易被吸收,减少了肾脏的负担,对乳蛋白过敏、不吸收的婴儿是更好的营养补充食品。
具体实施方式
本发明公开了一种特殊医学婴儿牦牛奶配方奶粉的产品配方及生产工艺,本领域技术人员可以借鉴本发明内容,对原料和添加剂在国家相关标准规定范围内做适当的替换和调整,但需要特别说明的是,所有的替换和调整都被视为包括在本发明的范围中。因特殊医学婴儿配方食品是针对有特殊医学状况的婴儿而设计的,对其内含营养成分有着严格的控制要求,本发明的配方已经过实践和应用,经过国家监督检验部门的检验是符合国家食品安全标准的,并通过较好的实例进行如下描述,相关人员在使用本发明时不应脱离本发明内容和范围进行改动、变更或组合。
实施例1
特殊医学婴儿牦牛奶配方奶粉,生产原料配方为:牦牛奶140 kg,水解乳清蛋白120 kg,牛奶分离蛋白20kg,奶油170kg,精炼植物油80kg,葡萄糖225 kg,白砂糖250kg,麦芽糊精102kg,二十二碳六烯酸DHA 2kg,花生四烯酸ARA 5.7kg,维生素类物质:醋酸视黄酯70g、胆钙化醇45g、dl-ɑ-醋酸生育酚300g、植物甲萘醌1g、盐酸硫胺素14g、核黄素6g、盐酸吡哆醇9g、氰钴胺0.025g;烟酸60g、叶酸1g、D-泛酸钙30g、L-抗坏血酸1900g、D-生物素0.25g、肌醇500g、牛磺酸550g、左旋肉碱150g和氯化胆碱400g,矿物质:碳酸钙1600g、磷酸三钙6600g、硫酸亚铁149g、硫酸锌138g、硫酸锰2.6g、硫酸铜14g、碳酸镁1200g、亚硒酸钠0.06g、碘酸钾2.9g、柠檬酸钾2000g、氯化钾5000g和碳酸镁1200g。

实施例2
特殊医学婴儿牦牛奶配方奶粉,生产原料配方为:牦牛奶140 kg,水解乳清蛋白120 kg,牛奶分离蛋白20kg,奶油170kg,大豆油80kg,葡萄糖50 kg,白砂糖250kg,麦芽糊精277kg,二十二碳六烯酸DHA 2kg,花生四烯酸ARA 5.7kg,维生素类物质:醋酸视黄酯70g、胆钙化醇45g、dl-ɑ-醋酸生育酚300g、植物甲萘醌1g、盐酸硫胺素14g、核黄素6g、盐酸吡哆醇9g、氰钴胺0.025g、烟酸60g、叶酸1g、D-泛酸钙30g、L-抗坏血酸1900g、D-生物素0.25g、肌醇500g、牛磺酸550g、左旋肉碱150g和氯化胆碱400g,矿物质:碳酸钙1600g、磷酸三钙6600g、硫酸亚铁149g、硫酸锌138g、硫酸锰2.6g、硫酸铜14g、碳酸镁1200g、亚硒酸钠0.06g、碘酸钾2.9g、柠檬酸钾2000g、氯化钾5000g和碳酸镁1200g。
制备方法:与实施例1相同。
上述实施例中,所说的牦牛奶为鲜牦牛奶。但也可使用牦牛奶粉替代,其加入量,按鲜牦牛奶蒸发所得牦牛奶粉的比例加入。
Claims (6)
1.一种特殊医学婴儿牦牛奶配方奶粉,其特征在于,生产每吨产品的主要原料为:牦牛奶120-150kg,麦芽糊精80-300kg,葡萄糖40-250kg,无水奶油150-180kg,精炼植物油60-100kg,水解乳清蛋白100-140kg,牛奶分离蛋白10-30kg,白砂糖200-260kg。
2.根据权利要求1所述的特殊医学婴儿牦牛奶配方奶粉,其特征在于,还添加有:二十二碳六烯酸DHA1~8kg,花生四烯酸ARA2~10 kg,维生素类物质和矿物质,所述维生素类物质为:醋酸视黄酯 50~100g、胆钙化醇30~70g、dl-ɑ-醋酸生育酚40~600g、植物甲萘醌0~2g、盐酸硫胺素5~40g、核黄素0~20g、盐酸吡哆醇4~20g、氰钴胺0~0.5g、烟酸20~100g、叶酸0~5g、D-泛酸钙15~80g、L-抗坏血酸700~3500g、D-生物素0~1g、肌醇0~700g、牛磺酸0~700g、左旋肉碱100~500g和氯化胆碱200~1000g,所述矿物质为:碳酸钙0~8000g、磷酸三钙1000~8000g、硫酸亚铁100~300g、硫酸锌60~230g、硫酸锰1~12g、硫酸铜10~20g、碳酸镁0~3500g、亚硒酸钠0~80g、碘酸钾0~60g、柠檬酸钾100~2000g、氯化钾100~5000g和碳酸镁100~1200g。
3.根据权利要求2所述的特殊医学婴儿牦牛奶配方奶粉,其特征在于,生产原料配方为:牦牛奶140 kg,水解乳清蛋白120 kg,牛奶分离蛋白20kg,无水奶油170kg,精炼植物油80kg,葡萄糖225 kg,白砂糖250kg,麦芽糊精102kg,二十二碳六烯酸DHA 2kg,花生四烯酸ARA 5.7kg,维生素:醋酸视黄酯70g、胆钙化醇45g、dl-ɑ-醋酸生育酚300g、植物甲萘醌1g、盐酸硫胺素14g、核黄素6g、盐酸吡哆醇9g、氰钴胺0.025g、烟酸60g、叶酸1g、D-泛酸钙30g、L-抗坏血酸1900g、D-生物素0.25g、肌醇500g、牛磺酸550g、左旋肉碱150g和氯化胆碱400g,矿物质:碳酸钙1600g、磷酸三钙6600g、硫酸亚铁149g、硫酸锌138g、硫酸锰2.6g、硫酸铜14g、碳酸镁1200g、亚硒酸钠0.06g、碘酸钾2.9g、柠檬酸钾2000g、氯化钾5000g和碳酸镁1200g。

5. 一种如权利要求2所述的特殊医学婴儿牦牛奶配方奶粉的制备方法,其特征在于,包括以下步骤:
(1)将经杀菌、净化处理的牦牛奶、纯水经板式换热器预热50℃-55℃,吸入真空混料机与混料罐形成闭合循环;
(2)将水解乳清蛋白、牛奶分离蛋白、葡萄糖、白砂糖、麦芽糊精、二十二碳六烯酸DHA和花生四烯酸ARA经筛粉机流入混合机中混合溶解循环,同时将无水奶油、精炼植物油和溶解好的维生素类物质和矿物质泵进入混合机的管路内进行在线混合乳化循环,此配料的浓度应在11~13%之间;
(3)全部溶解混合好的物料进行均质,均质压力14~16MPa,均质后的物料通过冷却板将物料降到4℃~6℃;
(4)均质后将物料用泵送入蒸发器进行杀菌浓缩,杀菌温度90~91℃,浓缩后物料浓度在41-44%之间,再经高压泵送入低温干燥塔进行喷雾干燥并通过静床和振动流化床进行二次干燥成成品粉。
6.根据权利要求5所述的特殊医学婴儿牦牛奶配方奶粉的制备方法,其特征在于,步骤(2)中,在溶解维生素类物质和矿物质时,先溶解矿物质,再溶解维生素类物质。
