背景技术
鸡精是以新鲜鸡肉、鸡骨、鸡蛋为原料制成的复合增鲜、增香的调味料。可以用于使用味精的所有场合,适量加入菜肴、汤羹、面食中均能达到效果。鸡精中除含有谷氨酸钠外,更含有多种氨基酸。它是既能增加人们的食欲,又能提供一定营养的家常调味品。味精产品更加注重鲜味,所以味精含量较高;鸡粉则着重产品来自鸡肉的自然鲜香,因而鸡肉粉的使用量较高。鸡精不是从鸡身上提取的,它是在味精的基础上加入化学调料制成的。由于核苷酸带有鸡肉的鲜味,故称鸡精,不过鸡精比味精更鲜。可以用于使用味精的所有场合,适量加入菜肴、汤羹、面食中均能达到效果。鸡精中除含有谷氨酸钠外,更含有多种氨基酸。它是既能增加人们的食欲,又能提供一定营养的家常调味品。传统的鸡精虽然鲜美但几乎没有营养,鸡的营养物质大部分为蛋白质和脂肪,吃多了会导致身体肥胖。鸡精中欠缺钙、铁、胡萝卜素、硫胺素、核黄素、尼克酸以及各种维生素和粗纤维,长期食用易导致身体亚健康。

各组分的最佳重量份数为:
低钠盐40份、芹菜叶冻干粉0.9份、大蒜叶冻干粉0.8份、硒酵母粉2份、鸡肉冻干粉8份、金樱子粉40份、红糖6份、麦芽糊精4份、大豆卵磷脂粉2份。
