本发明公开了一种咸鸭蛋的腌制配方及其腌制方法,是由下述重量份的原料制成:水1000、黄土1000、食盐250-300、花椒2-3、桂皮2-4、茴香1-3、生姜2-4、绿萝花2-5、三七花2-4、雪莲茶花1-3、玉竹2-4、绞股蓝2-3、罗布麻叶1-3、麦饭石粉30-35、玉石粉3-5、薏仁油2-4。本发明提供了一种咸鸭蛋的腌制配方及其腌制方法,先用盐水腌制鸭蛋,并加入了多种中药保健成分及调味成分,使咸鸭蛋口味更加鲜美、营养价值更高,再用黄泥腌制,使得咸鸭蛋蛋黄出油率更高,蛋黄更加松软,口感更好。

背景技术
咸鸭蛋是我国人民非常喜欢的一种休闲食品,它富含脂肪、蛋白质以及人体所需的各种氨基酸,还含有钙、磷、铁等多种矿物质和人体必需的各种微量元素及维生素,而且容易被人体所吸收。
发明内容
本发明提供了一种咸鸭蛋的腌制配方及其腌制方法。
本发明是通过以下技术方案实现的:
一种咸鸭蛋的腌制配方及其腌制方法,其特征在于包括以下步骤:
(1)称取以下质量份的原料:水1000、黄土1000、食盐250-300、花椒2-3、桂皮2-4、茴香1-3、生姜2-4、绿萝花2-5、三七花2-4、雪莲茶花1-3、玉竹2-4、绞股蓝2-3、罗布麻叶1-3、麦饭石粉30-35、玉石粉3-5、薏仁油2-4;
(2)将花椒、桂皮、茴香、生姜、绿萝花、三七花、雪莲茶花、玉竹、绞股蓝、罗布麻叶一起放入水中,加热提取2-3小时后,过滤,得提取液和药渣;将食盐平均分成两份,一份加入至提取液中,搅拌溶解,另一份待用;
(3)将上述药渣烘干后,研磨成粉,与剩余部分的食盐、麦饭石粉、玉石粉、薏仁油、余下的食盐一起加入至黄土中,加入适量水后充分搅拌混合均匀;
(4)将精选的鸭蛋浸没于步骤(2)的提取液中,腌制15-20天后捞出,然后用步骤(3)制备的黄泥均匀包覆,再腌制10-15天,除去表面黄泥,洗净,即可。

一种咸鸭蛋的腌制配方及其腌制方法,其特征在于包括以下步骤:
(1)称取以下质量份的原料:水1000、黄土1000、食盐250-300、花椒2-3、桂皮2-4、茴香1-3、生姜2-4、绿萝花2-5、三七花2-4、雪莲茶花1-3、玉竹2-4、绞股蓝2-3、罗布麻叶1-3、麦饭石粉30-35、玉石粉3-5、薏仁油2-4;
(2)将花椒、桂皮、茴香、生姜、绿萝花、三七花、雪莲茶花、玉竹、绞股蓝、罗布麻叶一起放入水中,加热提取2-3小时后,过滤,得提取液和药渣;将食盐平均分成两份,一份加入至提取液中,搅拌溶解,另一份待用;
(3)将上述药渣烘干后,研磨成粉,与剩余部分的食盐、麦饭石粉、玉石粉、薏仁油、余下的食盐一起加入至黄土中,加入适量水后充分搅拌混合均匀;
(4)将精选的鸭蛋浸没于步骤(2)的提取液中,腌制15-20天后捞出,然后用步骤(3)制备的黄泥均匀包覆,再腌制10-15天,除去表面黄泥,洗净,即可。

1.一种咸鸭蛋的腌制配方及其腌制方法,其特征在于包括以下步骤:
(1)称取以下质量份的原料:水1000、黄土1000、食盐250-300、花椒2-3、桂皮2-4、茴香1-3、生姜2-4、绿萝花2-5、三七花2-4、雪莲茶花1-3、玉竹2-4、绞股蓝2-3、罗布麻叶1-3、麦饭石粉30-35、玉石粉3-5、薏仁油2-4;
(2)将花椒、桂皮、茴香、生姜、绿萝花、三七花、雪莲茶花、玉竹、绞股蓝、罗布麻叶一起放入水中,加热提取2-3小时后,过滤,得提取液和药渣;将食盐平均分成两份,一份加入至提取液中,搅拌溶解,另一份待用;
(3)将上述药渣烘干后,研磨成粉,与剩余部分的食盐、麦饭石粉、玉石粉、薏仁油、余下的食盐一起加入至黄土中,加入适量水后充分搅拌混合均匀;
(4)将精选的鸭蛋浸没于步骤(2)的提取液中,腌制15-20天后捞出,然后用步骤(3)制备的黄泥均匀包覆,再腌制10-15天,除去表面黄泥,洗净,即可。
