Abstract
一种果味燕麦片的制作方法叙述的是一种食品的加工方法,具体地说是一种果味燕麦片的制作方法。称取燕麦米,淘洗干净捞出,使燕麦米吸足水分,上笼屉常压蒸15~20分钟,然后加入燕麦米量0.1%的复合水果香精,混匀,喂入双辊压片机,形成均匀的燕麦片,然后经硫化床干燥至含水10%以下,即得成品。本发明的燕麦片营养丰富,同时含有浓郁的水果香气,有效地解决了普通燕麦片口感一般,部分消费者不愿食用的不足,特别适合儿童食用。

(一)、技术领域
本发明叙述的是一种食品的加工方法,具体地说是一种果味燕麦片的制作方法。
(二)、背景技术
燕麦作为一种古老的粮食作物,生长在海拔1000~2700米的高寒地区,具有高蛋白低碳水化合物的特点。燕麦一般分为带稃型和裸粒型两大类。世界各国栽培的燕麦以带稃型的为主,常称为皮燕麦。我国栽培的燕麦以裸粒型的为主,常称裸燕麦。燕麦营养丰富,是较受现代人欢迎的食物之一。在《时代》杂志评出的十大健康食品中,燕麦名列第五。据中国医学科学院卫生研究所综合分析结果:优质燕麦粉蛋白质含量为15.6%,并富含幼儿生长发育的8种必需氨基酸、脂肪、铁、锌等。燕麦含极其丰富的亚油酸,占全部不饱和脂肪酸的35%~52%,每100克燕麦中含钙50~100毫克,B族维生素的含量居各种谷类粮食之首,尤其富含维生素B1,能够弥补精米精面在加工中丢失的大量B族维生素。燕麦也是目前唯一一种经美国食品药物管理局(FDA)确认,可以在包装上注明有保健功能的谷物。常食燕麦可以降低血胆固醇、控制血糖、改善便秘、促进伤口愈合、预防更年期障碍、预防骨质疏松、预防贫血、控制体重。
燕麦作为一种营养全面的食品原料,近年来备受人们的青睐,研究生产品种多样、色香味俱全的燕麦方便食品已成为市场和科研的共识,目前市场上出售的燕麦食品以燕麦片为主,燕麦片虽然营养丰富,但口感一般,特别是不为青少年所喜欢,如果将燕麦片制成水果口味的,那么消费者在享用美味燕麦片的同时还可以获得营养和保健功能。
(三)、发明内容
本发明的目的在于针对市售燕麦片口感不佳的不足而提供的一种口感较好、营养丰富的果味燕麦片的制作方法。
本发明的目的是这样实现的:
称取燕麦米,淘洗干净捞出,使燕麦米吸足水分,上笼屉常压蒸15~20分钟,然后加入燕麦米量0.1%的复合水果香精,混匀,喂入双辊压片机,形成均匀的燕麦片,然后经硫化床干燥至含水10%以下,即得成品。
本发明的燕麦片营养丰富,同时含有浓郁的水果香气,有效地解决了普通燕麦片口感一般,部分消费者不愿食用的不足,特别适合儿童食用。
(四)、具体实施方案
称取100公斤燕麦米,淘洗干净捞出,使燕麦米吸足水分,上笼屉常压蒸20分钟,然后加入100克复合水果香精,混匀,喂入双辊压片机,形成均匀的燕麦片,然后经硫化床干燥至含水10%以下,即得成品。

1.一种果味燕麦片的制作方法,其特征是以燕麦米、复合水果香精为原料,经过如下加工工艺过程制备而成:
称取燕麦米,淘洗干净捞出,使燕麦米吸足水分,上笼屉常压蒸15~20分钟,然后加入燕麦米量0.1%的复合水果香精,混匀,喂入双辊压片机,形成均匀的燕麦片,然后经硫化床干燥至含水10%以下,即得成品。
