背景技术
香肠是我国南方餐桌上的常见食品,由于其香气浓郁,味道鲜美而深受人们的喜爱。但是,随着人们生活水平的不断提高,对香肠的质量及口味的要求也越来越高,传统的香肠加工方法中,大多还有一定的食品添加剂成分,过多的食品添加剂对人体健康不益,而单一的口味则难以满足人们的需要。
发明内容
本发明提供了一种红枣香肠的加工方法。
本发明是通过以下技术方案实现的:
一种红枣香肠的加工方法,其特征在于包括以下步骤:
(1)称取以下质量份的原料:精肉30-50、肥肉30-50、红枣粒6-10、莳落籽2-3、紫菜5-7、黑木耳2-5、苦瓜3-6、淮山药5-7、米兰花2-4、葛花1-3、金莲花2-3;
(2)将莳落籽、紫菜放入锅中,加入少量食用油炒制,至出香后出锅,然后研磨成粉;苦瓜、淮山药、黑木耳处理干净后,一起混合,打成浆料;米兰花、葛花、金银花加适量水提取,得提取液;
(3)精肉、肥肉洗净沥干后,放入绞肉机中绞成肉泥,然后将步骤(2)制得的辅料和红枣粒加入其中,混合搅拌10-20分钟,搅拌完成后进行灌装;
(4)灌装完成后的香肠经过烘烤至熟,再进过微波灭菌,封口,即得。

实施例1
一种红枣香肠的加工方法,其特征在于包括以下步骤:
(1)称取以下质量份(kg)的原料:精肉50、肥肉30、红枣粒10、莳落籽3、紫菜5、黑木耳4、苦瓜5、淮山药6、米兰花3、葛花2、金莲花3;
(2)将莳落籽、紫菜放入锅中,加入少量食用油炒制,至出香后出锅,然后研磨成粉;苦瓜、淮山药、黑木耳处理干净后,一起混合,打成浆料;米兰花、葛花、金银花加适量水提取,得提取液;
(3)精肉、肥肉洗净沥干后,放入绞肉机中绞成肉泥,然后将步骤(2)制得的辅料和红枣粒加入其中,混合搅拌15分钟,搅拌完成后进行灌装;
(4)灌装完成后的香肠经过烘烤至熟,再进过微波灭菌,封口,即得。

(2)将莳落籽、紫菜放入锅中,加入少量食用油炒制,至出香后出锅,然后研磨成粉;苦瓜、淮山药、黑木耳处理干净后,一起混合,打成浆料;米兰花、葛花、金莲花加适量水提取,得提取液;
