本发明主要涉及食品及其工艺技术领域,尤其涉及一种奶香鱼肉丸及其制备方法。
背景技术
市场上的即食肉食品的种类很少,基上是以生鲜肉为主,然而随着人们生活水平的提高,市场上单一的肉食品并不能满足人们的生活需求,且市售的即食肉食品的营养也是单一的,并没有体现其辅助的功效。
发明内容
本发明为了弥补已有技术的缺陷,提供一种奶香鱼肉丸及其制备方法。
本发明是通过以下技术方案实现的:一种奶香鱼肉丸,由以下重量份原料组成:鲫鱼100-120、银鱼80-100、牛奶60-70、海带30-40、黑豆20-30、黑米20-30、面粉80-100、黄豆粉30-50、当归4-5、人参5-6、枸杞子4-5、西洋参4-5、丁葵草4-5、合欢皮5-6、花生叶3-4、玉米叶2-3、芝麻油10-20、味精10-40、黄酒20-30、黑醋10-30、酱油20-60、食用盐30-60、水适量。
一种奶香鱼肉丸的制备方法,包括以下步骤:
(1)将鲫鱼洗净,取其肉,与银鱼一起放入锅中,加入所述牛奶,加热,至牛奶被吸收,将鱼肉捞出,做成鱼肉泥,备用;
(2)将海带洗净,喷上所述芝麻油,置于烤箱中烤熟,然后碾成粉末备用;
(3)将当归、人参。枸杞子、西洋参、丁葵草、合欢皮、花生叶、玉米叶用棉布包扎好,与黑豆、黑米一起用8-12倍量的水加热焖煮2-3小时,取黑豆、黑米,做成豆泥备用;
(4)将鱼肉泥、海带粉、豆泥与面粉、黄豆粉、味精、黄酒、黑醋、酱油、食用盐混合,充分搅拌均匀后,做成鱼肉丸,蒸熟即可。
本发明的优点是:本发明的一种奶香鱼肉丸,含有优质鱼肉蛋白,营养价值高,添加海带,增加碘含量,防止甲状腺疾病;同时添加人参、枸杞子、西洋参、女贞子等药食同源的中药材的提取物,对人体有一定的有益功效,是适合广大人群食用的保健食品。

一种奶香鱼肉丸,由以下重量份原料组成:鲫鱼100 Kg、银鱼80 Kg、牛奶60 Kg、海带30 Kg、黑豆20 Kg、黑米20 Kg、面粉80 Kg、黄豆粉30 Kg、当归4 Kg、人参5 Kg、枸杞子4 Kg、西洋参4 Kg、丁葵草4 Kg、合欢皮5 Kg、花生叶3 Kg、玉米叶2 Kg、芝麻油10 Kg、味精10 Kg、黄酒20 Kg、黑醋10 Kg、酱油20 Kg、食用盐30 Kg、水适量。
一种奶香鱼肉丸的制备方法,包括以下步骤:
(1)将鲫鱼洗净,取其肉,与银鱼一起放入锅中,加入所述牛奶,加热,至牛奶被吸收,将鱼肉捞出,做成鱼肉泥,备用;
(2)将海带洗净,喷上所述芝麻油,置于烤箱中烤熟,然后碾成粉末备用;

1.一种奶香鱼肉丸,其特征在于,由以下重量份原料组成:鲫鱼100-120、银鱼80-100、牛奶60-70、海带30-40、黑豆20-30、黑米20-30、面粉80-100、黄豆粉30-50、当归4-5、人参5-6、枸杞子4-5、西洋参4-5、丁葵草4-5、合欢皮5-6、花生叶3-4、玉米叶2-3、芝麻油10-20、味精10-40、黄酒20-30、黑醋10-30、酱油20-60、食用盐30-60、水适量。
2.如权利要求1所述的一种奶香鱼肉丸的制备方法,其特征在于,包括以下步骤:
(1)将鲫鱼洗净,取其肉,与银鱼一起放入锅中,加入所述牛奶,加热,至牛奶被吸收,将鱼肉捞出,做成鱼肉泥,备用;
(2)将海带洗净,喷上所述芝麻油,置于烤箱中烤熟,然后碾成粉末备用;
(3)将当归、人参;
枸杞子、西洋参、丁葵草、合欢皮、花生叶、玉米叶用棉布包扎好,与黑豆、黑米一起用8-12倍量的水加热焖煮2-3小时,取黑豆、黑米,做成豆泥备用;
(4)将鱼肉泥、海带粉、豆泥与面粉、黄豆粉、味精、黄酒、黑醋、酱油、食用盐混合,充分搅拌均匀后,做成鱼肉丸,蒸熟即可。
