本发明涉及食品生产中的原料配方技术,尤其涉及用红稗花生粥的生产技术。
背景技术:
红稗是属于粮食种类之外的植物,过去很少被利用,同是混杂在禾本科作物中,是被作为杂草去除的对象,很少加以利用,近年来的研究,其实红稗的营养成分含量非常丰富,也较全面,检测含有蛋白质5.2%,脂肪2.6%,膳食纤维2.57%,氨基酸5.11%,人体必须的氨基酸总量4.6%,矿质元素丰富,其中K:516mg/100g,Na:24.2mg/100g,Ca:208.5mg/100g,MG:181.6mg/100g,Fe:1.87mg/100g,Zn:1.66mg/100g,P:206mg/100g,Cu:0.29mg/100g,Se:0.0017mg/100g。过去贵州省黔东南少数民族民间有利用红稗作为节日礼仪食品,因此未能得到充分的认识开发与利用,针对这一现状,将红稗作为主要原料配合以不同的营养食物品种,使其营养更全面,搭配更合理,较全面满足人体对各种营养素的要求。

本发明的是提供一种营养快餐食品红稗花生粥的配方:红稗、糯米、花生、黄豆。
它的原料组成按重量分配合如下:红稗60-80,糯米10-30,花生5-20,黄豆5-20,上述四种原料比例配合,先对原料清选,用120-150℃温度烘焙熟透、冷却、粉碎为120目以上,过筛、包装即为产品。食用时用开水调合成羹,按不同口味加辅料即可食用。
