本发明属于食品的酿造,具体涉及一种辣椒大豆酱。
背景技术
目前市场上销售的大豆酱是由大豆﹑水和盐等共同发酵而成,味道欠佳,营养相对单调。
发明内容
本发明的技术解决方案是采用优质开封辣椒和开封大豆为主要原料,组成成份为大豆30―48%,食用盐12-15%,辣椒20-40%,西瓜10―30%,用本发明制作的辣椒大豆酱有营养﹑有清香味,对人体健康更有益。
具体实施方式
若制作10千克辣椒大豆酱,用优质大豆2.5千克,加入烀熟,捣碎,做成粙块。发酵大约1个月,然后放入坛中,再加入西瓜汁3千克,辣椒3.3千克,盐1.2千克,发酵15天即可。
