背景

发明详述

在本发明的一个方面中,将槲皮素悬浮于饮料中的方法包括将至少一种悬浮剂和微粒化槲皮素导入饮料,其中悬浮剂的存在量足以将微粒化槲皮素悬浮于饮料中。本申请中使用的“微粒化”或“微粒”意指大小介于约0.1um至约50um范围的小颗粒,其平均粒度在约10um以下。

实施例1:通过将槲皮素(粉末形式)加入到水中、加入柠檬酸和山梨酸钾和匀化制备槲皮素浆料。所述成分以如下浓度存在于浆料中:

Claims (19)
1.将微粒化槲皮素颗粒悬浮于饮料中的方法,包括下列步骤:a)将至少一种悬浮剂导入饮料;和b)将微粒化槲皮素导入饮料,其中悬浮剂的存在量足以将微粒化槲皮素悬浮于饮料中。
2.权利要求1的方法,其中至少一种悬浮剂是选自瓜尔胶、黄原胶、吉兰糖胶、果胶及其组合的树胶。
3.权利要求1的方法,其中饮料是等渗饮料。
4.权利要求1的方法,其中饮料还包括至少一种另外的成分,其选自碳水化合物、盐、盐掺合物、食品级酸、矫味剂、着色剂、维生素B 3、维生素C、甜味剂及其组合。
5.权利要求4的方法,其中盐在饮料中的存在浓度为占饮料总重的约0.1-0.5wt%且将占饮料总重的约1-25wt%浓度的碳水化合物加入到饮料中。
6.权利要求5的方法,其中将占饮料总重的约1-3wt%浓度的碳水化合物加入到饮料中。
7.权利要求4的方法,其中饮料还包含至少一种盐和至少一种选自羟糖铝、乙酰氨基磺酸钾、蜜叶糖、monatin、罗汉果、罗汉果甙、二萜、三萜甙及其组合的甜味剂。
8.将槲皮素颗粒悬浮于饮料中的方法,包括:合并至少一种悬浮剂和微粒化槲皮素,其中悬浮剂的存在量足以将微粒化槲皮素悬浮于饮料中,且其中微粒化槲皮素的存在形式为槲皮素浆料,其包含槲皮素、水、至少一种食品级酸和至少一种食品级防腐剂。
9.权利要求8的方法,其中悬浮剂是选自瓜尔胶、吉兰糖胶、黄原胶、果胶及其组合的树胶。
10.权利要求9的方法,其中树胶在饮料中的存在浓度为占饮料总重的约0.005-0.06wt%。
11.权利要求10的方法,其中树胶在饮料中的存在浓度为占饮料总重的约0.02wt%。
12.权利要求8的方法,其中饮料具有约2.5-4.5的pH。
13.权利要求12的方法,其中饮料的pH为约3.2-3.9。
14.权利要求8的方法,其中至少一种食品级酸是柠檬酸。
15.权利要求8的方法,其中至少一种食品级防腐剂是山梨酸钾。
16.用于食物的组合物,包含槲皮素和至少一种悬浮剂,其中约95%的槲皮素具有在约10微米以下的粒度且至少一种悬浮剂的存在量足以将槲皮素悬浮于液体介质。
17.用于食物的组合物,包含微粒化槲皮素和至少一种悬浮剂,其中至少一种悬浮剂的存在量足以将微粒化槲皮素悬浮于液体介质中且其中微粒化槲皮素的存在形式为槲皮素浆料,其包含槲皮素、水、至少一种食品级酸和至少一种食品级防腐剂。
18.权利要求14的组合物,其中食物包括至少一种盐和至少一种碳水化合物。
19.提高体力活动过程中耐力的方法,包括对有此需要的受试者给予有效量的包含槲皮素、稳定剂、至少一种盐和至少一种碳水化合物的组合物。
