本发明提供了一种药食两用的天香鸡肉丸。由以下原料按重量份配比加工而成:鸡胸肉50~70,鸡皮10~20,食盐2.8~3.5,白砂糖1.5~2,天香菜15~20,冰水30~50。加入以下重量份的辅料:增稠剂11~15,保水剂5~7,增香剂2~3。采用本发明技术方案生产的产品具有“清热、凉血、解毒、治痢疾、黄疸、血淋、痔瘘、疗肿”等药用功效。

天香鸡肉丸
技术领域
本发明涉及一种新型的鸡肉丸及其制备工艺。
背景技术
现有的肉丸系列中,大多数产品单纯的采用肉类,添加少部分香料,虽然符合大众口味,但是从营养价值上来讲,长期使用对人体并没有明显的好处,在当今这个强调“药食两用”、“药食同源”、“药补不如食补”的年代,现有的同行业技术及丸子品种中缺乏绿色药、食两用的新原料,没有具备功能保健突出特色的产品,没能突出食疗的功效。天香菜有名苦香甘、龙葵,俗称苦菜,别名苦苣菜,仙人菜,观音菜,臭味菜,为一二年生菊科草本植物,每100克鲜嫩叶含水分95.1克,蛋白质1.2克,钙77毫克,18种氨基酸及多种维生素等天然营养物质。苦微甘、寒、无毒。
发明内容
本发明的目的是提供一种药食两用的天香鸡肉丸。
为了达到上述目的本发明由以下原料按重量份配比加工而成:鸡胸肉50~70,鸡皮10~20,食盐2.8~3.5,白砂糖1.5~2,天香菜15~20,冰水30~50。
加入以下重量份的辅料:增稠剂11~15,保水剂5~7,增香剂2~3。
天香鸡肉丸的加工工艺如下:
a.原料预处理后,在斩拌机内高速斩拌,同时加入各种辅料,均匀混合;
b.利用冰水来控制料馅出锅温度在8℃以下;
c.然后用丸子机成型,接着进行煮制;
d.然后将冷却的天香鸡肉丸及时送往速冻隧道进行速冻;
e.将速冻好的天香鸡肉丸进行包装,然后将成品放入-18℃低温库储藏。
采用本发明技术方案生产的产品具有“清热、凉血、解毒、治痢疾、黄疸、血淋、痔瘘、疗肿”等药用功效,能降压、降血脂、降糖,可有效地保护肝脏,增强肝脏排毒、解毒功能,对糖尿病也有显著地疗效。其维生素含量高,可预防治疗近视眼、假性近视。在传统的丸子配料里按适当的比例添加焯水后的天香菜,提高产品的保健功能,最大限度发挥了天香菜绿色保健的作用。
具体实施方式
实施例1
天香鸡肉丸由以下原料按重量份配比加工而成:鸡胸肉50,鸡皮10,食盐2.8,白砂糖1.5,天香菜15,冰水30。加入以下重量份的辅料:增稠剂11,保水剂5,增香剂2。
天香鸡肉丸的加工工艺如下:
a.原料预处理后,在斩拌机内高速斩拌,同时加入各种辅料,均匀混合;
b.利用冰水来控制料馅出锅温度在8℃以下;
c.然后用丸子机成型,接着进行煮制;
d.然后将冷却的天香鸡肉丸及时送往速冻隧道进行速冻;

由以下原料按重量份配比加工而成:鸡胸肉70,鸡皮20,食盐3.5,白砂糖2,天香菜20,冰水50。加入以下重量份的辅料:增稠剂15,保水剂7,增香剂3。

由以下原料按重量份配比加工而成:鸡胸肉60,鸡皮15,食盐3.2,白砂糖1.8,天香菜17,冰水40。加入以下重量份的辅料:增稠剂13,保水剂6,增香剂2.5。

由以下原料按重量份配比加工而成:鸡胸肉55,鸡皮12,食盐3,白砂糖1.7,天香菜16,冰水38。加入以下重量份的辅料:增稠剂12,保水剂6,增香剂2.2。

由以下原料按重量份配比加工而成:鸡胸肉65,鸡皮17,食盐3.4,白砂糖1.6,天香菜18,冰水40。加入以下重量份的辅料:增稠剂14,保水剂5,增香剂2.1。

1.一种天香鸡肉丸,其特征是由以下原料按重量份配比加工而成:鸡胸肉50~70,鸡皮10~20,食盐2.8~3.5,白砂糖1.5~2,天香菜15~20,冰水30~50。
2.根据权利要求1所述的天香鸡肉丸,其特征是加入以下重量份的辅料:增稠剂11~15,保水剂5~7,增香剂2~3。
3.根据权利要求1所述的天香鸡肉丸,其特征是加工工艺如下:
a. 原料预处理后,在斩拌机内高速斩拌,同时加入各种辅料,均匀混合;
