Abstract

另外,本发明还提供由长心卡帕藻制备提神且可口的饮料的方法。

健康意识的增强和现代生活方式刺激了对具有更高营养价值且同时乐于饮用的食品和饮料的需求。
可以参考Richards-Rajadurai的报告(Richards-Rajadurai(1990)RAS/90/002.FAO/UNDP海洋养殖项目(FAO/UNDP Seafarming Project),Philippines.149-180),其中,根据FAO的报告,世界上30多个国家每年收获大约3.1至3.8百万吨湿重的海藻。该总数中一半的数量用于人类消费,而其余的被用于工业上重要的藻胶(例如琼脂、角叉菜胶和藻酸盐)的生产。

可以参考由Repechage(www.repechage.com)出售的海藻饮料,其可能有助于克服疲劳。每管10mL的15管售价为37.00美元。
尽管海藻可以生产营养产品是公知的,但由于这些产品在海藻仅用于该产品的目的时不得不承担全部的海藻成本,因而这类产品很可能是相当昂贵的。非常希望的是使得由海藻制造的营养产品更加便宜,理想的是由可以大量获得的任何海藻副产品生产这类产品。

可以参考Adhikary等人的题目为“通过电渗析的果汁脱酸-第II部分(Deacidification of Fruit Juices by Electrodialysis-Part II)”的论文(Ind.J.Technol.25,1987,24-27),其中报道了葡萄汁、菠萝汁和橙汁分别具有3173ppm、1500ppm和3150ppm的KCl,而NaCl浓度在所有这些果汁中都非常低(<100ppm)。因此,KCl是由果汁提供的重要的营养素,但是许多国家的穷人买不起这类果汁。

发明内容
发明目的
本发明的主要目的是提供从长心卡帕藻得到的没有鱼腥味的提神且可口的饮料。
本发明的另一个目的是提供提神且可口的饮料的制备方法。
另外,本发明的又一目的是提供由长心卡帕藻得到的汁液用作提神、可口且营养的饮料的材料的用途。
本发明的再另一目的是提供一种提神且可口的饮料,该饮料可以提供几种必需微量元素(包括碘)的日需要量的大部分。
本发明的再另一目的是提供通过将纯化汁液与其它饮料混合或通过加入如盐、酸橙(lime)、香草、香料、二氧化碳等成分而具有不同风味的提神且可口的饮料,以适合不同的口味。
发明概述
本发明涉及来自长心卡帕藻海藻的汁液的有营养且提神的饮料,其中所述汁液如现有技术中报道的通过机械作用从新鲜海藻中排出并用食品级化学防腐剂保存或用其它防腐形式保存。通过物理方法(如离心)或化学方法(如加入絮凝剂)使富含钾和几种微量营养素(包括碘)的汁液变澄清。然后汁液进一步用活性炭处理或通过碳滤器处理,然后进行聚合物膜过滤或陶瓷膜过滤以得到没有任何鱼腥味或其它令人不愉快的气味/味道的无色液体。将该纯化的汁液包装并进行储存直到准备饮用,并在饮用时用适当体积的加糖水稀释,从而其味道在某种程度上类似嫩椰子汁的味道。
具体实施方式
因此,本发明提供如美国专利6893479号中公开的由长心卡帕藻获得的汁液的用途,其中所述饮料含有以下成分:
a)2500-5000mg/L钾、1000-2000μg/L碘和选自150-200mg/L钠、750-1250mg/L镁、250-350mg/L钙、25-35mg/L磷、50-100mg/L铁、3-6mg/L锌和1.5-2.5mg/L锰的其它必需矿物质;
b)0.75-1.0g/L蛋白质、15-25g/L碳水化合物、0.2-0.3ppm硫胺素,0.1-0.2ppm核黄素以及仅痕量的脂肪,具有70-100Kcal/L的总能量含量;
c)<6μg/L铅和<40μg/L铬。
在本发明的一个实施方式中,所述汁液可用于制备提神且可口的饮料。
在本发明的另一个实施方式中,所述汁液能够满足选自钾、碘、钠、镁、钙、磷、铁、锌和锰的几种必需微量营养素的日需要量。
另外,本发明还提供由长心卡帕藻制备提神且可口的饮料的方法,其中所述方法包括以下步骤:
a)提供如美国专利6893479号中公开的来自长心卡帕藻的汁液;
b)任选地将防腐剂加入到由步骤(a)得到的汁液中;
c)用活性炭粉末或碳滤器处理由步骤(a)或步骤(b)得到的汁液,以除去鱼腥味并改善适口性;
d)对步骤(c)得到的汁液进行膜过滤除去胶体杂质,接着灭菌以除去所有看不见的微生物并得到期望的饮料;
e)任选地通过混合向由步骤(d)得到的饮料中加入其它市售饮料、调味品或选自盐、酸橙、香草、香料、二氧化碳等的成分以增
强饮料的口感。
在本发明的一个实施方式中,所用的长心卡帕藻在印度的泰米尔纳德和古吉拉特的沿海区的筏上栽培。
在本发明的另一实施方式中,所用的防腐剂选自苯甲酸、苯甲酸钾、苯甲酸钠、对羟基苯甲酸甲酯和对羟基苯甲酸丙酯中的一种或其组合,其中所用的防腐剂的浓度在0.2-0.4%(w/v)的范围内。
此外,在本发明的又一实施方式中,用于过滤的膜选自在4kg/cm2压力下操作的具有200-300千道尔顿截止值的聚砜超滤膜或在1kg/cm2压力下操作的19-道陶瓷微滤元件。
在本发明的又另一实施方式中,灭菌采用热、辐射或臭氧分解进行。
在本发明的再另一实施方式中,膜过滤后得到的副产品渗余物流可用作植物营养物。
在本发明的再另一实施方式中,所述饮料通过用2-4份含有选自盐、糖、柠檬、二氧化碳等的添加剂的水稀释所述汁液而制备。
在本发明的再另一实施方式中,所述饮料由精制汁液制备,并且当其用3份含有4-6%(w/v)蔗糖的水稀释和优选以冷饮形式饮用时,其外观、香气和味道类似椰子汁。
在本发明的再另一实施方式中,包装的汁液或饮料可以在环境条件下储存,但更优选在2-10℃温度的冷藏条件下储存。
在本发明的再另一实施方式中,所述饮料具有以下特征:
a)没有鱼腥味;
b)外观和味道像椰子汁;
c)在环境温度下并优选在2-10℃的范围内稳定。
本发明基于以下几点:
a)设想:如现有技术中所公开的含有丰富的钾和几种其它矿物质的长心卡帕藻的汁液可以用作营养饮料的原料。
b)随后推论:尽管这种汁液是不可口的,但是通过除去令人讨厌的气味、改善其味道并改善其审美外观可以使其可口。
c)之后,主要设计汁液的物理处理方法以实现上述(b)的目的,同时保留饮料的自然特性。
d)在纯化后汁液中还存在的不可口性质源于过量浓度的盐,因而随后用水和甜味剂适当地调整味道以生产出具有与嫩椰子汁类似之处的提神和可口的饮料。
e)通过使用合适的食品级的防腐剂并更优选通过非化学防腐方法延长保存期限。
f)认识到汁液纯化步骤的残留物也将找到作为植物营养物的用途。
以下实施例通过举例说明本法明的方式给出而不应该理解为限制本发明的范围。
实施例1
在8月份从位于印度古吉拉特的奥卡(Okha)海岸的CSMCRT实验栽培基地新采集25Kg的45天龄的长心卡帕藻植株。如美国专利6,893,479号中所公开的,通过细薄棉布过滤后得到18.0Kg汁液。残留物留下用于制备κ-角叉菜胶。在加入防腐剂(每升汁液1g苯甲酸)后,仍含有微细的悬浮固体的粗汁液在10,000rpm(15900xg力)下离心30分钟。得到具有不可口的鱼腥味的略带粉红色的澄清上清液。
实施例2
如实施例1所述制得的粗汁液用不同量(400-1000ppm)的水溶液形式的明矾处理。用1000ppm明矾处理3h后观察到絮状沉淀(facilesettling),而用400ppm明矾的沉降时间是15h。
实施例3
从曼达帕姆(Mandapam)海岸采集20Kg长心卡帕藻海藻,按照实施例1的方法生产出15升汁液。加入1g/L苯甲酸防腐剂后,粗汁液在8000rpm下离心,然后使其通过5μ聚丙烯线绕式滤芯过滤器(wound cartridgefilter)。微黄色的7L处理过的汁液用21L含有6%蔗糖和1g/L苯甲酸的水稀释。得到的产物充以二氧化碳并以凉的状态提供给参加藻类学讨论会的测评者。
实施例4
将实施例3的汁液通过具有250,000道尔顿的分子量截止值的基于聚砜的超滤膜滤芯(0.05-0.06μ孔径)。得到的汁液完全无色,而且鱼腥味几乎不存在了,甚至完全消除。
实施例5
实施例3的汁液通过碳滤芯,随后通过实施例4的UF膜滤芯。得到了没有任何鱼腥味的无色汁液。然后如实施例3中所述用加糖水稀释汁液,并再次从研究所员工和研究所的访问者寻求反馈。发现该饮料是可口且提神的,而且几名被调查者指出饮料的味道与嫩椰子汁相似。该产品的营养数据在下面表1中给出。

实施例6
用布对新液化的海藻进行粗过滤,并将防腐剂加入到汁液中。将具有令人讨厌的鱼腥味的4L混浊的粗汁液装入食品级不锈钢制成的试验装置的加料箱中。汁液用不同剂量(0.0至1.0%w/v)的活性炭(默克(印度)公司;通过200目筛过滤并在100℃下干燥1小时)处理0.5h。然后通过缓慢增加跨膜压力至1.0kg/cm2并同时用冷却器将加料箱温度维持在12℃,用具有0.054m2过滤面积的19-道陶瓷MF元件(KM/B18/19C/45)对汁液进行过滤。膜过滤的汁液的浊度根据活性炭的预处理而变化。最佳结果是采用单批加入的0.5%活性炭获得。渗透流量为9.1L/m2/h。进料和渗透物的数据在下面表2中给出。

从表2可以看出,具有混浊外观和令人讨厌的鱼腥味的粗汁液变成具有淡绿色色调和嫩椰子香气的澄清的渗透物,同时从上表中的TDS(溶解性总固体)数据可以清楚地看出盐含量实质上保持不变。渗透物的营养数据在表3中给出。其可以用加糖的水稀释并用作饮料。

优点:
1.本汁液经过精制和保存,外观上类似椰子汁并且没有鱼腥味。
2.本汁液可以包装在玻璃瓶或塑料瓶或密封袋中,或者包装在不锈钢或塑料制成的大的密封容器中。
3.与汁液分离的残留物生产出与现有技术所公开的由相当重量的新鲜海藻制得的干海藻得到的κ-角叉菜胶相同量的K-角叉菜胶。
4.在对汁液进行膜过滤后得到副产物渗余物流,其可以用作植物营养物。
5.通过所述方法除了得到κ-角叉菜胶之外,还得到了营养饮料和液体植物营养物。
6.当粗汁液成本为0.07美元时,所述汁液的生产成本低于0.25美元/升,该成本基于每吨干长心卡帕藻的价格为500美元,新鲜海藻重量与干海藻重量的比为10∶1而假定每吨新鲜海藻的价格为0.50美元而计算的,从新鲜海藻回收70%(w/w)的汁液并把新鲜海藻的全部成本单独加到汁液上。
7.假定每公顷保守估计得到100吨鲜重的嫩长心卡帕藻,在外海中每公顷的筏上栽培可以产生2-4百万份各100mL的所述饮料。
8.本饮料可以采用本发明来进行大规模生产,并且普通大众可以消费得起。
9.本发明出于食用目的精制海藻汁液的制备方法可适用于其它含有营养汁液的海藻。
10.本饮料是提神、可口且有营养的,其能够达到所有必需微量营养素(包括碘)的日需要量。
Claims (8)
1、美国专利6893479号中公开的由海藻长心卡帕藻得到的汁液的用途,其中所述饮料包含以下成分:
a)2500-5000mg/L钾、1000-2000μg/L碘和选自150-200mg/L钠、750-1250mg/L镁、250-350mg/L钙、25-35mg/L磷、50-100mg/L铁、3-6mg/L锌和1.5-2.5mg/L锰的其它必须矿物质;
b)0.75-1.0g/L蛋白质、15-25g/L碳水化合物、0.2-0.3ppm硫胺素、0.1-0.2ppm核黄素和仅痕量的脂肪,总能量含量为70-100Kcal/L;
c)<6μg/L铅和<40μg/L铬。
2、根据权利要求1所述的汁液的用途,其中所述汁液用于制备提神且可口的饮料。
3、一种由海藻长心卡帕藻制备提神且可口的饮料的方法,其中所述方法包括以下步骤:
a)提供美国专利6893479号中公开的来自长心卡帕藻的汁液;
b)任选地将防腐剂加入到由步骤(a)得到的汁液中;
c)用活性炭粉末或碳滤器处理由步骤(a)或步骤(b)得到的汁液,以除去鱼腥味并改善适口性;
d)对步骤(c)得到的汁液进行膜过滤除去胶体杂质,接着灭菌以除去所有看不见的微生物并得到期望的饮料;
e)任选地通过混合向由步骤(d)得到的饮料中加入其它市售的饮料、调味品或选自盐、酸橙、香草、香料、二氧化碳等的成分以增强饮料的口感。
4、根据权利要求3所述的方法,其中所用的防腐剂选自苯甲酸、苯甲酸钾、苯甲酸钠、对羟基苯甲酸甲酯和对羟基苯甲酸丙酯中的一种或其组合,其中所用的防腐剂的浓度在0.2-0.4%(w/v)的范围内。
5、根据权利要求3所述的方法,其中所述用于过滤的膜选自在4kg/cm2压力下操作的200-300千道尔顿截止值的聚砜超滤膜或在1kg/cm2压力下操作的19-道陶瓷微滤元件。
6、根据权利要求3所述的方法,其中所述灭菌采用热、辐射或臭氧分解进行。
7、根据权利要求3所述的方法,其中所述膜过滤后得到的副产物渗余物流用作植物营养物。
8、根据权利要求3所述的方法,其中所述饮料具有以下特征:
a)没有鱼腥味;
b)外观和味道像椰子汁;
c)在环境温度下并优选在2-10℃的范围内稳定。
