本发明公开了一种豆脐茶的制备工艺,步骤为:先将精选的豆脐去皮去豆糁,水分控制在9%~11%,然后过10目筛,然后将豆脐放入气流膨化机中,密封后加热8~12分钟,突然释放压力,豆脐在此过程中膨化熟化,按照此方法间歇式生产,最后进行分级过筛包装,即为豆脐茶。本发明采用独特的熟化方式,膨化后的豆脐酥脆、豆香味浓,浸泡溶出效果好,色泽深,适用于女性保健,每天饮用10克左右可祛痘、嫩肤、延长女性更年期等,本发明具有制备工艺简单、成本低、制得的产品品质优良等优点。

技术领域
本发明涉及一种豆脐茶的制备工艺。
背景技术
目前,茶与人类健康的课题吸引国内外专家学者,日本、欧美等发达国家的专家把“茶-21世纪的天然健康饮料”列为重大研究课题,茶已经成为各国学术界研究防癌衰老的重点。
豆脐含有丰富的营养物质和活性因子,其中每100克豆脐中约含有活性物质异黄酮3克、皂甙4克、低聚糖14克,及少量的维生素E和多不饱和脂肪酸。其活性成分能够有效调理人体内分泌系统,具有祛痘、嫩肤、延缓衰老、减肥等作用,还可预防骨质疏松、乳腺癌、心血管等疾病的发生,缓解女性更年期症状,是女性良好的生活伴侣。
迄今为止,国内外对豆脐的研究停留在提取功能性成分上,真正将豆脐做成产品的研究很少。豆脐中含有功能性成分皂甙,因此没熟化的豆脐腥味和苦味较重,难以接受;而采用简单的焙烤工艺则容易产生糊粒,色泽深且有黑点,颗粒坚硬,产品质量不稳定,口感差。
发明内容
针对上述现有技术的不足,本发明提供了一种工艺简单可行、生产成本低、产品质量优良的制备豆脐茶的工艺。
本发明是通过以下技术方案实现的:
一种豆脐茶的制备工艺,步骤如下:
A.将豆脐精选去皮、去豆糁:把含有豆皮、豆糁的豆脐均匀通过风力分级筛选器,将豆皮、豆糁分离出去,风力控制在0.5~1米/秒,精选后豆脐的水分控制在9%~11%;
B.将上述精选后的豆脐过筛;
C.膨化熟化:将豆脐放入气流膨化机中,密封后加热8~12分钟,然后突然释放压力,豆脐在此过程中膨化熟化,体积膨胀到原来的2倍左右,按照此方法间歇式生产;
D.分级过筛,包装。
所述步骤B中的过筛为过10目筛。
采用本发明的制备工艺得到的产品色泽淡黄、油亮,口感酥脆,香味浓郁、苦味小,入口香,咀嚼后略苦。这种产品可以当作零食食用也可以作为女性保健茶,和茶叶使用类似,每次取6~10克(约两汤匙)放入杯中,用开水冲泡3~5分钟,即可饮用;反复冲泡2~3次后可将松软胚芽直接食用,充分吸收其营养及活性成分。
本发明采用独特的熟化方式,膨化后的豆脐酥脆、豆香味浓,浸泡溶出效果好,色泽深。本发明提供的豆脐茶适用于女性保健,豆脐中含有功能性异黄铜、皂甙和不饱和脂肪酸,能够调理女性内分泌系统,增强雌激素的分泌。每天饮用10克左右的豆脐茶,祛痘、嫩肤、延长女性更年期等效果明显。本发明具有制备工艺简单、成本低、制得的产品品质优良等优点。
具体实施方式
下面结合实施例对本发明作进一步的说明:
实施例1:制备豆脐茶,工艺如下:
A.把含有豆皮、豆糁的豆脐均匀通过风力分级筛选器,将豆皮、豆糁分离出去,风力控制在0.5米/秒,精选后豆脐的水分为9%;
B.将上述精选后的豆脐过10目筛;
C.膨化熟化:称量1公斤左右的豆脐,放入气流膨化机中,膨化压力为1公斤,密封后加热10分钟,然后突然释放压力,豆脐在此过程中膨化熟化,体积膨胀到原来的2倍左右,按照此方法间歇式生产;
D.分级过筛,包装:膨化熟化后的豆脐大小不均匀,为了使得豆脐颗粒均匀,特将其通过10目筛,未通过的作为合格品进行包装,即可得到本发明的豆脐茶。
实施例2:制备豆脐茶,工艺如下:

D.分级过筛,包装:膨化熟化后的豆脐大小不均匀,为了使得豆脐颗粒均匀,特将其通过10目筛,未通过的作为合格品进行包装,即可得到本发明的豆脐茶。

1.一种豆脐茶的制备工艺,其特征在于:步骤如下:
A.将豆脐精选去皮、去豆糁:把含有豆皮、豆糁的豆脐均匀通过风力分级筛选器,将豆皮、豆糁分离出去,风力控制在0.5~1米/秒,精选后豆脐的水分控制在9%~11%;
B.将上述精选后的豆脐过筛;
C.膨化熟化:将豆脐放入气流膨化机中,膨化压力为1公斤,密封后加热8~12分钟,然后突然释放压力,豆脐在此过程中膨化熟化,体积膨胀到原来的2倍,按照此方法间歇式生产;
