Claims (2)
- 두부에 함유된 응고제 성분이 제거된 두부 3~6wt%와, 증자된 증자대두 3~11wt%와, 볶음대두 1~3wt%와, 볶음땅콩 3~2wt%에 물 90~78wt%를 단계적으로 투입하여 분쇄한 후, 110~130 메시의 여과장치를 통과시켜 여과액을 추출하고,상기 여과액 100wt%에 대하여 당류 2~4wt%와, 폴리덱스트로즈 0.5~1wt%와, 칼슘 0.3~0.8wt%와, 소금 0.5~1wt%를 첨가하여 혼합된 것을 특징으로 하는 두부를 함유하는 음료.
- 공지의 제조방법에 의해 제조된 두부를 으깬 후 3~5시간 동안 물속에 침지하여 상기 으깬 두부에 포함된 응고제 성분을 제거한 후, 물기를 제거하여 응고제 성분이 제거된 두부 만을 추출하는 두부에 함유된 응고제 성분 제거공정(101)과,대두를 세척하여 이물질을 제거하고, 18℃ 물에 2~3시간 담그어 불리는 전처리 및 불림공정(102)과,상기 전처리 및 불림공정(102)을 통해 물에 불리어진 대두를 100℃의 증기로서 약 9~11분간 증자시키는 대두 증자공정(103)과,대두와 땅콩을 220~240℃에서 18~22분 동안 교반하면서 볶아 익히는 볶음공정(104)과,이소말토올리고당 50wt%와, 솔비톨 45wt%와, 벌꿀 5wt%를 각각 혼합하여 당류를 제조하는 당류형성공정(105)과,상기 두부에 함유된 응고제 성분 제거공정(101)을 통해 응고제 성분이 제거된 두부 3~6wt%와, 상기 대두 증자공정(103)을 통해 증자된 증자대두 3~11wt%와, 상기 볶음공정(104)을 거친 볶음대두 1~3wt%와, 볶음땅콩 3~2wt%를 물 90~78wt%를 단계적으로 투입하면서 분쇄 혼합하여 분쇄혼합물을 얻는 분쇄혼합공정(106)과,상기 분쇄혼합공정(106)을 거쳐 얻어진 분쇄혼합물을 110~130 메시의 여과장치를 통해 여과액 만을 추출하는 여과액 추출공정(107)과,상기의 여과액 추출공정(107)을 통해 얻어진 여과액 100wt%에 대하여 당류 2~4wt%와, 폴리덱스트로즈 0.5~1wt%와, 칼슘 0.3~0.8wt%와, 소금 0.5~1wt%를 첨가하여 골고루 혼합하여서 되는 두부음료 용액을 얻는 영양소 첨가혼합공정(108)과,상기 여과액에 영양소 첨가혼합공정(108)에서 얻어진 두부음료 용액을 온도 80℃, 압력 100㎏/㎠ 조건에서 1차 균질하고, 이어서 온도 80℃, 압력 300㎏/㎠ 조건에서 2차 균질하는 균질공정(109)과,상기 균질공정(109)에 의해 균질된 두부음료 용액을 일정용량의 용기에 충전한 후, 가압.가열 살균하는 포장 및 살균공정(100)을 거쳐 제조되는 것을 특징으로 하는 두부를 함유하는 음료의 제조방법.
