SE DESCRIBE CEPAS MODIFICADAS DE LA LEVADURA OLEAGINOSA YARROWIA LIPOLYTICA CON LA CAPACIDAD DE PRODUCIR UN ACEITE QUE COMPRENDE MÁS DEL 50 POR CIENTO EN PESO DE ÁCIDO EICOSAPENTAENOICO ["EPA"], UN ÁCIDO GRASO POLIINSATURADO W-3, QUE SE DETERMINA COMO UN PESO PORCENTUAL DEL TOTAL DE ÁCIDOS GRASOS ["% DEL TFA"] Y QUE TIENE UNA RELACIÓN DE POR LO MENOS 3.1 DE % DE EPA DEL TFA Y ÁCIDO LINOLEICO DETERMINADO COMO % DEL TFA. ESTAS CEPAS SOBREEXPRESAN POR LO MENOS UNA MULTIENZIMA DELTA 9  ELONGASA/ DELTA 8 DESATURASA, ADEMÁS DE OTRAS DELTA 9 ELONGASAS, DELTA 8 DESATURASAS,DELTA 5 DESATURASAS, DELTA 17 DESATURASAS,DELTA 12 DESATURASAS, C16/18 ELONGASAS HETERÓLOGAS Y, OPCIONALMENTE, SOBREEXPRESAN DIACILGLICEROL COLINOFOSFOTRANSFERASA, MALONIL COA SINTETASA Y/O ACIL-COA LISOFOSFOLIPIDO ACILTRANSFERASA.
