LA PRESENTE INVENCIÓN SE REFIERE AL USO DE UNA O MÁS ENZIMAS PECTINOLITICAS ENDOPOLIGALACTURONASAS PARA TRATAR LOS PURÉS DE FRUTAS O DE VERDURAS, DONDE AL MENOS UNA ENZIMA ES UN POLIPÉPTIDO QUE TIENE ACTIVIDAD ENDOPOHGALACTURONASA Y QUE COMPRENDE UNA SECUENCIA DE AMINOÁCIDOS QUE SE SELECCIONA DE: (A) UN POLIPÉPTIDO QUE COMPRENDE UNA SECUENCIA DE AMINOÁCIDOS QUE TIENE AL MENOS UN 77% DE IDENTIDAD RESPECTO DE LA SECUENCIA DEL POLIPÉPTIDO PGAI (SEQ ID NO: 2); (B) UNA VARIANTE DE (A) QUE COMPRENDE UN FRAGMENTO QUE TIENE ACTIVIDAD ENDOPOLIGALACTURONASA; Y (C) UN FRAGMENTO DE (A) O (B) QUE TIENE ACTIVIDAD ENDOPOHGALACTURONASA.
