Abstract
A food solution, suspension or emulsion is concentrated by ultrafiltration and food ingredients which increase its osmotic pressure, for example sea salt and sugar are added to it. An agent which destroys harmful microoganisms, in particular lysozyme, is present in the starting material or is added during the preparation. The process applies especially to egg white, to yolk or to whole egg, as well as to milk and to fruit juices. The concentrated product obtained may be preserved and then diluted by adding water without impairing the properties of the starting material.
