Abstract

ISOLATO DE PROTEìNA DE SOJA, BEBIDA áCIDA PRONTA PARA BEBER E PROCESSO PARA A PRODUçãO DE UM ISOLATO DE PROTEìNA DE SOJA. A presente invenção descreve um isolato de proteína de soja e o método para a preparação do mesmo. O novo isolato de proteína de soja possui excelente estabilidade de suspensão e sabor. O processo utilizado para a produção do isolato de proteína de soja inclui um processo de hidrólise enzimática e o isolato de proteína de soja resultante pode ser utilizado em formulações de bebidas ácidas.
