Abstract

PRODUTOS DE CARNE REESTRUTURADOS E SEUS PROCESSOS DE REPARAçãO A presente invenção refere-se a um produto de carne reestruturado, o qual compreende: (A) um material de proteína de soja; (B) uma carne moída; e (C) água. Em uma outra realização, a presente invenção descreve um processo para a preparação de um produto de carne reestruturado, o qual compreende as etapas de: hidratação de (A) um material de proteína de soja; e adição de (B) uma carne moída, em que a temperatura da carne moída está abaixo de cerca de 40<198>C; e mistura de (A) e (B) para produzir um produto de carne homogêneo e texturizado que tem um teor de umidade de pelo menos cerca de 50%.
