Abstract
PROCESSO PARA A PREPARAçãO, ANTES DO PREENCHIMENTO, DE UMA CASQUINHA FEITA DE BISCOITO FOLHADO, CASQUINHA ASSIM OBTIDA E INSTALAçãO PARA A IMPLEMENTAçãO DO PROCESSO. A presente invenção refere-se a um processo para a preparação de uma casquinha que consiste em um biscoito folhado substancialmente cónico (22) antes do preenchimento da dita casquinha com um sorvete, de modo a preservar a natureza crocante do biscoito folhado, a parede interna da casquinha é aspergido com chocolate líquido (23); este chocolate solidifica rapidamente de modo a formar uma camada de revestimento para separar o biscoito folhado e o sorvete. O processo é caracterizado pelo fato de que o lado de dentro da casquinha é aspergida com uma quantidade em excesso de chocolate para garantir que nenhuma zona sem revestimento permaneça na parede interna do biscoito folhado, sendo que o chocolate líquido em excesso é recolhido, sob a ação da gravidade, na ponta de fundo da casquinha, antes da solidificação do dito excesso, o excesso é sugado da casquinha, subseqüente solidificação da camada de revestimento é possível para estabelecer uma barreira contínua sobre a parede interna do biscoito folhado.
