Abstract

"PROCESSOS PARA A PRODUçãO DE UMA INFUSãO TENDO FILTRABILIDADE REALçADA E/OU RENDIMENTO MELHORADO DO EXTRATO DEPOIS DA FILTRAçãO, E PARA REDUZIR A VISCOSIDADE DE UMA SOLUçãO AQUOSA QUE COMPREENDE UM HIDROLISADO DE AMIDO, COMPOSIçãO, E, USO DE UMA COMPOSIçãO". A presente invenção diz respeito a uma etapa de brassagem e filtração em um processo de fabricação de bebida fermentada e a uma composição útil na brassagem e etapa de filtração de um processo de brassagem. A infusão é preparada na presença de atividades da enzima compreendendo uma xilanase de uma família GH 10.
