Abstract

"ESTABILIZADORES úTEIS NA PRODUçãO DE PASTA DE BAIXA GORDURA". A presente invenção refere-se a métodos para a produção de emulsões de pasta de baixa gordura estabilizadas com proteínas do leite. A fase aquosa é estabilizada por proteínas de soro de leite termicamente desnaturadas a baixas concentrações de cálcio. Depois do tratamento térmico, o pH da fase aquosa é ajustado a condições neutras ou ácidas. A presente invenção também refere-se a métodos para a produção de um produto de proteína de soro de leite que pode ser usado como ingrediente alimentar estabilizador.
