Abstract
"PARTICULADOS DE FIBRA DE SOJA E MéTODOS PARA A PREPARAçãO". A presente invenção pertence ao campo de técnicas de processamento empregadas na preparação de alimentos de soja. A invenção se refere a métodos para a preparação de um particulado de fibra de soja de sojas descascadas de uma textura suave, qualidade nutricional e sabor superior. A invenção pode ser empregada para obter um particulado de fibra de soja tendo um tamanho de partícula em uma faixa de cerca de 0,01 micron a cerca de 100 microns, onde pelo menos 50% a cerca de 100% do particulado de fibra de soja tem um tamanho em uma faixa de cerca de 0,01 micron a cerca de 35 microns. A invenção adicionalmente trata do uso na preparação de produtos alimentícios que incluem porém não estão limitados a bebidas, misturas secas, iogurtes, coalhadas e queijos cremosos. A invenção ainda se refere a composições de particulado de fibra, feitas de grãos tipo linho, girassol, arroz, canola, milho, trigo, semente de colza e tremoço.
