Abstract

Patente de Invenção: <B>"MéTODO E APARELHO PARA A CONFECçãO DE PRODUTOS ALIMENTìCIOS DE LANCHE EM FORMATO DE TAçA"<D>. Um método e um aparelho para a confecção de produtos alimentícios para lanches em formato de taça, por exemplo, biscoitos de tortilla. O método caracteriza a colocação de preformas de biscoito em cavidades em formato de taça abertas e fritar parcialmente as preformas de biscoito ao enchê-las com óleo quente a partir de cima. Adicionalmente, as preformas são parcialmente fritas a partir de debaixo, pela imersão das porções inferiores das preformas em uma cuba de óleo quente e transportando-as através do óleo quente. Após o cozimento das preformas até um teor de umidade desejado, no ponto em que as preformas retêm seus formatos de taça fora ou independentemente das cavidades de molde, as preformas são removidas das cavidades de molde e, subseq³entemente, cozidas até o final em uma operação de fritura secundária. A invenção também caracteriza um aparelho para a realização do método.
