Abstract
Patente de Invenção: <B>''MéTODO APERFEIçOADO PARA MATURAR RAPIDAMENTE UMA CARCAçA CRUA''<D>. Um método para maturar rapidamente uma carcaça crua por estímulo elétrico de corrente contínua pulsante à carcaça. A corrente contínua pulsante fornece períodos substancialmente iguais de intensidade máxima e mínima (forma de onda quadrada). A tensão preferida aplicada através da carcaça é de 50 volts a uma freq³ência de 10 Hz e a uma intensidade de 45 miliamps com a corrente pulsante estando ligado por 0,075 segundo e desligada por 0,025 s. O estímulo é aplicado por 30 segundos para produzir uma queda no pH de 0,3 unidade. A carcaça maturada é então resfriada a ar.
