Abstract

SAL DE LATICÍNIO, MÉTODO PARA SUA PRODUÇÃO E PRODUTOS ALIMENTÍCIOS CONTENDO O MESMO. A presente invenção refere-se ao processamento de material bruto de leite que produz um sal de laticínio. Tratamento preliminar do leite bruto é realizado, com pasteurização e sua concentração por nanofiltração através de um filtro com um tamanho de poro de 0,001-0,01 µm, subsequente filtração do permeado de nanofiltração obtido através de um módulo de membranas com um tamanho de poro de 0,0001-0,001 µm de uma unidade de osmose reversa, eletrodiálise do retido de RO obtido, concentração do concentrado ou sua concentração e secagem. Os sais de laticínio podem ser fabricados e usados para salgar produtos alimentícios, bebidas, queijo cottage granulado, batatas fritas, bolachas e pastas. Uma fração de mascaramento com porções de ácido orgânico, aminoácido, ácido graxo, e açúcar oculta com sucesso as notas estranhas de outro modo associadas com composições de potássio. Produtos alimentícios salgados com qualquer dos sais de laticínio aqui descritos obtêm reduzido teor de sódio sem comprometimento de sabor.
