Abstract

métodos e composições adequadas para a preservação do frescor de produtos alimentícios tipo pão a presente invenção refere-se a métodos e a composições adequadas para a manutenção do frescor dos produtos alimentícios tipo massa uniforme em um molho ou um gel de viscosidade adequada durante um período prolongado. quando os produtos alimentícios tipo massa uniforme forem esvaziados de um recipiente, o molho ou o gel cobre as superfícies expostas dos produtos alimentícios tipo massa uniforme e não escorre ou seca. após mais do que seis horas, os produtos alimentícios tipo massa uniforme ainda retêm a sua cor original e a aparência úmida fresca sem qualquer formação de crostas. consequentemente, a invenção resolve os problemas associados com a rápida formação de crostas/secagem, alteração de cor, odor, impróprio, deterioração e apelo visual reduzido dos produtos alimentícios tipo massa após eles terem sido expostos ao ar durante longo período de tempo.
