Abstract

"MéTODO DE COZINHAR ALIMENTOS POR PRé-AQUECIMENTO E ALIMENTO A SER COZINHADO POR AQUECIMENTO". Para um alimento, o componente principal do qual é proteína e que e deva ser refrigerado ou congelado para armazenamento, há conveniência há conveniência em aperfeiçoar o mesmo para que possa ser facilmente cozinhado em um curto tempo e seja superior em flavores, sabores e higiene. Anteriormente à refrigeração de frangos grelhados em um espeto quando o alimento deve ser cozido por aquecimento, ele é pré-aquecido passando eletricidade a uma temperatura não inferior àquela temperatura em que a proteína é desnaturada e inferior à temperatura de cozimento até sua proteína ser uniformemente desnaturada até o seu interior de forma que simplesmente por pré-aquecimento pelo menos de seu exterior a uma temperatura não inferior à temperatura de cozimento durante o cozimento por aquecimento, sabores em que o inteiro frango é aquecido até o interior são suscetíveis de ser obtidos e ele pode ser cozido facilmente sem qualquer variação em um curto tempo com excelentes flavores e sabores.
