Abstract

"PEPTìDEOS ATIVOS PARA FLAVORIZANTE". A presente invenção refere-se a peptídeos específicos obteníveis a partir de sementes de cacau e que proporcionam o progresso de um aroma originam a um sabor particular e distinto, quando submetidos a uma reação de Maillard com açúcares redutores. Em particular, a presente invenção refere-se ao uso desses peptídeos específicos para a preparação de um flavorizante de chocolate, especificamente um flavorizante de cacau e de caramelo, um flavorizante floral ou especificamente um flavorizante de bombom, um flavorizante semelhante a pão, um flavorizante de carne assada e um flavorizante de carne.
