Abstract
COMPOSIçãO MELHORADA DE éSTER FOSFATO DE AMIDO APERFEIçOADA, PROCESSO E MéTODO DE USO EM ALIMENTOS". A presente invenção é dirigida a um processo para preparação de monoésteres de fosfato de amido, opcionalmente em presença de oligossacarídeos, possuindo eficiência de reação aperfeiçoada e reações colaterais reduzidas. A invenção também inclui os produtos de monoéster de fosfato de amido aperfeiçoados, caracterizados por viscosidade alta e nível inferior de sais residuais, seu uso em alimentos e as composições alimentícias melhoradas preparadas dos mesmos.
