La présente invention est relative aux machines dites "rouleuses" employées en boulangerie et dans les in- dustries analogues,et elle concerne plus spécialement une machine de ce genre,dans laquelle,après avoir été roulés ou noués entre deux corps de forme appropriée soumis à un mouvement de rotation de vitesse variable et de direction inverse, les pâtons sont expulsés de la machine le long d' un organe de profil correspondant dénommé "escargot de sortie".
On a constaté que si dans une machine à rouler de ce genre,la pâte est convenablement pressée et roulée, la fermeture du pâton,opération qui termine le travail manuel, ne se trouve pas réalisée ;par suitele pâton,traité mécaniquement,ne présente pas encore toutes les Qualités du pâton traité à la main.

et dans ce but elle prévoit la fixation sur la surface su- périeure de l'escargot de sortie, ou de l'organe équivalent, d'une pièce supplémentaire dont le profil extérieur est tel qu'à son contact le pâton sera comprimé,serré de manière à présenter la++fermeture++requise,laquelle se traduira par un amincissement de l'extrémité du pâton en forme de téton.
On utilisera avantageusement dans ce but une baguette demi- ronde qui,inclinée du haut vers le bas et d'arrière en avant,suivra sur une certaine longueur la courbure interne de l'escargot.Eventuellement cette pièce supplémentaire pour- ra consister en une saillie venue avec ou formée dans l'es- cargot.
Un autre perfectionnement de la machine dite "rouleuse" consiste en ce que l'inclinaison des deux corps, formant entre eux la chambre où est traité le pâton,peut varier chez l'un par rapport à l'autre,de telle sorte que la pression sur le pâton varie entre le point d'entrée de ce dernier dans la dite chambre et son point de sortie.
Le dessin annexé à ce mémoire montre,à titre excm- platif uniquement,une machine à nouer conforme à l'invention.

La machine comprend un corps extérieur I,en forme de cuve,soumis à un mouvement de rotation inverse de celui d'un second corps 2, en forme de poire,qu'il entoure en for- mant avec lui une chambre de travail 3 dans laquelle les pâtons sont amenés par une bande sans fin 4 surmontée d'un plateau de hauteur réglable 5 dimensionnant les pâtons.
Le corps I est supporté,de manière à pouvoir tour- ner, par un bâti 6 et il est solidaire à sa partie inférieure d'une couronne 7 présentant extérieurement une denture 3.
Celle-ci engrène avec une vis sans fin9 portée par un arbre 10,sur lequel est calée une poulie II recevant son mouvement de rotation d'un moteur 12 par l'intermédiaire d'une cournie

La poire 2 est portée sous une certaine inclinai- son par rapport au corps I,par un arbre central 14 traver- sant un carter 15 fixé au bâti 6.Sur l'arbre 14 est calée une roue dentée 16 en prise avec une vis sans fin 17,dont l'axe 18 porte une roue de friction 19 en contact avec un disque 20 porté par l'arbre de commande 10 du corps I.En manoeuvrant dans le sens voulu un volant 21,on pourra à volonté augmenter ou diminuer la vitesse relative du corps I,de sorte que les deux corps forment effectivement entre eux une chambre de travail,de.longueur infinement et ins- tantanément variable pendant la marche de la machine.
A l'intérieur de la cuve I,plonge,de manière con-, nue,du côté opposé à l'entrée l'organe d'éjection 22 dé- nommé "escargot de sortie",dont la volute inclinée vers le haut,aboutit à un bec d'éjection 23.Suivant l'invention, à l'intérieur de l'escargot 22 est fixas une pièce supplé- mentaire 24 formée dans le cas présent par une baguette demi-ronde,qui partant du début de l'escargot va en s' élargissant et se termine à proximité du bec de sortie 23.
Cette baguette placée ainsi dans le sens de la sortie du pâton est inclinée du haut vers le bas et d'arrière en avant.
A son pas sage sur l'escargot,le pâton vient en contact avec la baguette 24 qui comprime le pâton contre la poire 2,le serre et l'amincit progressivement si bien qu'à sa sortie de l'escargot,son extrémité présente la for- me d'un têton.Le pâton est ainsi "fermé",comme s'il avait été travaillé à la main.
La pièce supplémentaire 24 pourrait tout aussi bien être formée par une saillie de forme appropriée venue avec l'escargot 22 ou façonnée dans celui-ci.
Afin de faire varier la pression qui s'exerce sur le pâton entre les deux corps I et 2, on peut avantageuse-

The present invention relates to the so-called "rolling" machines used in baking and in similar industries, and it relates more especially to a machine of this type, in which, after having been rolled or tied between two bodies of suitable shape subjected to a rotational movement of variable speed and in the opposite direction, the dough pieces are expelled from the machine along a member of corresponding profile called "outlet snail".
It has been observed that if in a rolling machine of this kind, the dough is suitably pressed and rolled, the closing of the dough, an operation which terminates the manual work, is not carried out; consequently the dough, mechanically treated, does not present still all the Qualities of the dough processed by hand.

and for this purpose it provides for the fixing on the upper surface of the outlet snail, or of the equivalent member, of an additional part, the external profile of which is such that on contact the dough will be compressed, tightened. so as to present the ++ closure ++ required, which will result in a thinning of the end of the dough in the form of a stud.
