Machine de boulanger La présente invention a pour objet une machine de boulanger pour la fabrication de pains longs. Cette machine est caractérisée par le fait qu'elle comprend, un grand et un petit cylindre montés en tre deux flasques parallèles, l'écartement de ces cy lindres étant réglable au moyen d'un agencement de leviers actionnés par une tringle longitudinale, un tapis en matière élastique porté par des cerceaux élastiques disposés du côté interne de chaque flasque latérale et entourant le grand cylindre à une dis tance réglable,
la partie supérieure du grand cylin- dre restant à découvert et l'intervalle entre le tapis et le grand cylindre étant réglable par un dispositif comprenant des plateaux disposés du côté interne de chaque flasque, munis de biellettes guidées pre nant appui contre les cerceaux, lesdits plateaux étant actionnés par deux leviers solidaires chacun d'un plateau et reliés entre eux par une tringle longitudi nale, se déplaçant dans deux coulisses fixées aux flasques. Cette machine est caractérisée en outre par le fait qu'elle comprend un dispositif,
servant au laminage de la pâte destinée à la fabrication de pro duits spéciaux, et comportant une tablette amovible coulissant sur deux cornières latérales disposées en tre les deux cylindres, et servant de rails à ladite ta blette, celle-ci pouvant avancer et reculer alternati vement entre les deux cylindres dont le sens de ro tation peut être inversé électriquement.
Une forme d'exécution d'une telle machine, objet de l'invention, est représentée, à titre d'exemple, dans le dessin annexé. Dans ce dernier La fig. 1 représente une vue longitudinale de la machine rouleuse de cette forme d'exécution.
La fig. 2 est une vue de côté représentant la flasque de gauche (en regardant la machine de face), montrant le dispositif d'entraînement du grand cylin dre ainsi qu'une partie du dispositif d'écartement du petit cylindre et le mode d'entraînement de celui-ci.
La fig. 3 est une vue de côté représentant la flasque droite (en regardant la machine de face) et montrant l'autre partie du dispositif destiné à faire varier l'écartement entre les deux cylindres. La fig. 4 représente une vue du dispositif d'écar tement des cerceaux, et la fig. 5 représente le détail de l'entraînement des cylindres et du dispositif d'écartement des cylindres. Dans la machine représentée en fig. 1, le grand cylindre est désigné par 1, le petit cylindre par 2, leurs axes respectifs par 3 et 9,
ces derniers étant entraînés par un agencement de poulies et roues dentées 4, 5, 7 et 8 commandé par le moteur M situé à la partie inférieure de la flasque de gauche F.
Le grand cylindre 1 est entouré, sauf sur la par tie supérieure de son périmètre par un tapis en caout chouc T ou en toute autre matière élastique appro priée, ce tapis étant disposé à distance du périmètre du grand cylindre cette distance pouvant varier au moyen de deux cerceaux porteurs élastiques C qui sont disposés sur chaque face interne de chacune des flasques. Le tapis est fixé sur ces cerceaux C au moyen de rivets 19.
La fig. 2 représente plus particulièrement les moyens de commande de la rotation de l'axe 3 du grand cylindre 1 et de l'axe 9 du petit cylindre, ces moyens étant disposés sur la flasque de gauche F de la machine, tandis que cette même fig. 2, conjointe ment aux fig. 1 et 3 représente également le disposi tif permettant de faire varier l'écartement entre le grand et le petit cylindre.
Sur les fig. 2 et 5, l'on voit le moteur M en- tramant au moyen de la courroie 4, la poulie 5 en traînant un pignon 7 qui engrène avec une roue den tée 8 montée sur l'axe 3 du grand cylindre. Sur le même axe que celui de la poulie 5 et du pignon 7 est montée une poulie à gorge 6 munie d'une cour roie 24 entraînant une poulie tendeuse 10 et une poulie 11 montée sur l'axe 9 du petit cylindre, assu rant ainsi la rotation de celui-ci.
L'ensemble de le viers 15, 14, 17, 18 de la flasque gauche F (fig. 2) conjointement avec l'ensemble des leviers 15', 14', 19', 18' de la flasque droite F (fig. 3) actionné au pied par la tringle longitudinale 16 (voir fig. 1, 2 et 3) agit sur l'axe 9 du petit cylindre qui peut ainsi monter ou descendre le long de coulisses 12 et 12' et être fixé dans une position déterminée, au moyen des écrous 13 et 13' situés dans la partie supérieure de chaque flasque (mouvement indiqué par les flè ches sur les fig. 2 et 3). Un ressort de rappel R est fixé sur le levier et à la flasque F.
Le dispositif d'écartement des cerceaux C et con séquemment du réglage de l'intervalle entre le grand cylindre 1 et le tapis en caoutchouc T est plus parti culièrement représenté aux fig. 3 et 4. Chaque flas que F et F' est munie sur sa face interne sous les cerceaux C d'un plateau central P sur lequel sont disposées 4 biellettes 25 coulissant dans des guides 35. A chaque plateau P se raccorde un levier 20, ces leviers étant réunis par une tringle longitudinale commune 17 (voir fig. 1).
Les extrémités de cette tringle 17 raccordées chacune à un levier 20 peuvent se déplacer dans des coulisses 27 articulées chacune sur une des flasques F et F' (voir fig. 2 et 3).
En faisant glisser la tringle 17 dans les coulisses 27 on provoque la rotation des plateaux P et selon leur sens de rotation les biellettes 25 pousseront ou s'écarteront des cerceaux C de manière à écarter ou à rapprocher le tapis en caoutchouc T de la sur face du grand cylindre 1.
Le -fonctionnement de la machine rouleuse est le suivant (en regardant la machine de face) : le mor ceau de pâte informe est poussé ou plutôt jeté sur la partie supérieure du grand cylindre 1 en rotation (voir flèche sur fig. 4) et amené ainsi sous le petit cylindre 2 qui tourne exactement à la même vitesse que le grand cylindre 1, condition nécessaire pour ob tenir un bon laminage de la pâte. Sortant de sous le petit cylindre 2, le morceau de pâte a une forme aplatie à l'épaisseur désirée, déterminée par l'écarte ment donné au petit cylindre 2 ;
il s'engage ensuite dans l'intervalle entre le grand cylindre 1 et le tapis en caoutchouc T sous l'effet de la rotation de ce cy lindre, de son propre poids et de l'élasticité du tapis et se met à rouler sur lui-même et arrive au bas du cylindre 1, sous la forme d'un boudin à la gros seur désirée en fonction de l'écartement entre le tapis en caoutchouc et le grand cylindre, ce qui permet d'obtenir à volonté du pain long ou du pain baguettes . Le boudin continue ensuite sa course par suite de la rotation du cylindre, remonte la pente en roulant sur lui-même, augmentant ainsi son homo généité et vient tomber sans autre instrument sur une tablette 30 située à l'avant de la machine, qu'on peut obtenir par exemple par extension d'un des bords du tapis en caoutchouc.
La machine comprend en outre un dispositif des tiné à la fabrication de pâtes feuilletées, de brio ches ou de pâtes pour pâtisseries. Ce dispositif com prend deux cornières X disposées entre les deux cylindres 1 et 2 de part et d'autre de ceux-ci, et une tablette amovible disposée entre lesdites cornières et pouvant coulisser sur celles-ci. La pâte à traiter est placée sur cette tablette qui est entraînée ensuite al ternativement vers l'avant et vers l'arrière de la ma chine par la rotation des cylindres dont le sens peut être alternativement inversé par un dispositif élec trique.
Il est évident qu'il est possible, de réaliser plu sieurs variantes, notamment quant au système en traînant les axes des cylindres qui pourrait être encore réalisé par exemple au moyen d'une trans mission à vis sans fin. En outre on pourrait rempla cer le tapis en caoutchouc par une toile ou une au tre matière élastique imitant le travail du caout chouc. Le grand cylindre pourrait également être rem placé par un cylindre élastique.
La machine pourrait également être munie d'un tapis roulant transporteur de pains.

This machine is further characterized by the fact that it comprises a device,
used for rolling the dough intended for the manufacture of special products, and comprising a removable shelf sliding on two lateral angles arranged between the two cylinders, and serving as rails for said table, the latter being able to advance and reverse alternately between the two cylinders, the direction of rotation of which can be electrically reversed.
One embodiment of such a machine, object of the invention, is shown, by way of example, in the accompanying drawing. In the latter, FIG. 1 shows a longitudinal view of the rolling machine of this embodiment.
Fig. 2 is a side view showing the left flange (looking at the machine from the front), showing the drive device of the large cylinder dre as well as part of the small cylinder spacer device and the drive mode of this one.
Fig. 3 is a side view showing the right flange (looking at the machine from the front) and showing the other part of the device intended to vary the spacing between the two cylinders. Fig. 4 shows a view of the device for separating the hoops, and FIG. 5 shows the detail of the drive of the rolls and of the roll spacing device. In the machine shown in fig. 1, the large cylinder is designated by 1, the small cylinder by 2, their respective axes by 3 and 9,
the latter being driven by an arrangement of pulleys and toothed wheels 4, 5, 7 and 8 controlled by the motor M located at the lower part of the left flange F.
The large cylinder 1 is surrounded, except on the upper part of its perimeter by a rubber mat T or any other suitable elastic material, this mat being arranged at a distance from the perimeter of the large cylinder, this distance being able to vary by means of two elastic carrier hoops C which are arranged on each internal face of each of the flanges. The mat is fixed on these hoops C by means of rivets 19.
Fig. 2 more particularly represents the means for controlling the rotation of the axis 3 of the large cylinder 1 and of the axis 9 of the small cylinder, these means being arranged on the left flange F of the machine, while this same FIG. 2, together with figs. 1 and 3 also shows the device making it possible to vary the distance between the large and the small cylinder.
In fig. 2 and 5, we see the motor M by means of the belt 4, the pulley 5 by dragging a pinion 7 which meshes with a star wheel 8 mounted on the axis 3 of the large cylinder. On the same axis as that of the pulley 5 and of the pinion 7 is mounted a grooved pulley 6 provided with a belt 24 driving a tensioning pulley 10 and a pulley 11 mounted on the axis 9 of the small cylinder, thus ensuring the rotation of it.
The set of sinks 15, 14, 17, 18 of the left flange F (fig. 2) together with the set of levers 15 ', 14', 19 ', 18' of the right flange F (fig. 3) ) actuated at the foot by the longitudinal rod 16 (see fig. 1, 2 and 3) acts on the axis 9 of the small cylinder which can thus go up or down along slides 12 and 12 'and be fixed in a determined position, by means of nuts 13 and 13 'located in the upper part of each flange (movement indicated by the arrows in fig. 2 and 3). A return spring R is attached to the lever and to the flange F.
The device for spacing the hoops C and consequently for adjusting the interval between the large cylinder 1 and the rubber mat T is more particularly shown in FIGS. 3 and 4. Each flange that F and F 'is provided on its inner face under the hoops C with a central plate P on which are arranged 4 rods 25 sliding in guides 35. A lever 20 is connected to each plate P, these levers being joined by a common longitudinal rod 17 (see fig. 1).
The ends of this rod 17 each connected to a lever 20 can move in slides 27 each articulated on one of the flanges F and F '(see Figs. 2 and 3).
By sliding the rod 17 in the slides 27 causes the rotation of the plates P and according to their direction of rotation the rods 25 will push or move away from the hoops C so as to separate or bring the rubber mat T away from the surface. of the large cylinder 1.
The operation of the rolling machine is as follows (looking at the machine from the front): the shapeless piece of dough is pushed or rather thrown onto the upper part of the large rotating cylinder 1 (see arrow in fig. 4) and fed. thus under the small cylinder 2 which rotates at exactly the same speed as the large cylinder 1, a necessary condition to obtain good rolling of the dough. Coming out from under the small cylinder 2, the piece of dough has a flattened shape to the desired thickness, determined by the spacing given to the small cylinder 2;
it then engages in the gap between the large cylinder 1 and the rubber mat T under the effect of the rotation of this cylinder, of its own weight and of the elasticity of the mat and begins to roll on it - even and arrives at the bottom of cylinder 1, in the form of a sausage with the desired thickness depending on the distance between the rubber mat and the large cylinder, which makes it possible to obtain long bread at will or baguette bread. The coil then continues its course as a result of the rotation of the cylinder, goes up the slope by rolling on itself, thus increasing its homogeneity and falls without any other instrument on a shelf 30 located at the front of the machine, which one can obtain for example by extension of one of the edges of the rubber mat.
The machine further comprises a device for the manufacture of puff pastry, brio ches or pastry doughs. This device comprises two angles X arranged between the two cylinders 1 and 2 on either side of the latter, and a removable shelf arranged between said angles and able to slide on them. The dough to be treated is placed on this tablet which is then entrained alternately towards the front and rear of the machine by the rotation of the cylinders, the direction of which can be alternately reversed by an electric device.
It is obvious that it is possible to achieve several variants, in particular as regards the system by dragging the axes of the cylinders which could still be produced for example by means of a worm transmission. In addition, the rubber mat could be replaced by a canvas or another elastic material imitating the work of rubber. The large cylinder could also be replaced by an elastic cylinder.
The machine could also be fitted with a bread conveyor belt.
